WHITE TRASH BROCCOLI CASSEROLE

Any recipe that calls for a canned cream soup is kinda white trashy, in my opinion, but you gotta admit it tastes good and it's easy--and kids actually like it! ( In fact this is the recipe that finally got my son to say "I like broccoli!" ) I try to use a reduced fat cream soup and sour cream to keep the calories down. This is a great side dish for meatloaf, Salisbury steak or any hamburger-based dish.

1 head broccoli
1 (10 1/2 ounce) can low-fat cream of mushroom soup
1/2 cup nonfat sour cream
1/2 cup sharp cheddar cheese, shredded
1 teaspoon salt
1/4 cup sharp cheddar cheese, shredded
2 tablespoons dried breadcrumbs

Steps:

  • Preheat oven to 375 degrees.
  • Separate the broccoli into florets and steam for 15 minutes. Transfer to a casserole dish.
  • In a medium-sized bowl, mix the mushroom soup with the sour cream, 1/2 cup cheddar cheese and salt. Pour over the broccoli.
  • Top with the remaining 1/4 cup cheddar cheese and bread crumbs.
  • Cook for 20 minutes or until the cheese is bubbly and the bread crumbs are golden.

1 lb frozen tater tots
16 ounces frozen chopped broccoli
2 1/2 cups cheddar cheese, shredded
1 (8 ounce) can condensed cream of mushroom soup

Steps:

  • Preheat oven to 350°F.
  • Mix ingredients and pour into casserole dish.
  • Bake at 350°F for 20 minutes until tots are crispy and casserole is a bubblin!
  • Top with a bit of cheese and pop back into the oven for about 3 minutes until melted.
  • (You may add a small chopped onion, and/or substitute ham with spam, and cheddar with Velveeta for true white trash flavor).

I came up with this about 10 years ago out of sheer desperation! Flat broke, depressed, and I came home hungry for comfort food and was sick to death of Kraft Mac and Cheese! This is what I had on hand and what got me through that dark night! I'm better off financially, but I still make this at least once a month. Can substitute cooked chicken and cream of chicken soup. Warning: this is not pretty to look at, but close your eyes and taste and it will grow on you!

1 (6 ounce) box mushroom and onion flavored seasoned stuffing mix
1 lb ground beef
1 (4 ounce) can chopped mushrooms
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
1 cup shredded mozzarella cheese or 1 cup cheddar cheese

Steps:

  • Prepare stuffing mix according to package directions (I usually do this in a microwave).
  • Brown ground beef in a frying pan until completely brown, breaking up meat chunks with the back of a wooden spoon; drain.
  • In a large bowl, combine the cooked stuffing, ground beef, drained mushrooms and undiluted soup mix.
  • Stir to combine.
  • Top with shredded cheese.
  • Put in microwave and heat over high heat for 2-3 minutes till thoroughly heated and cheese is melted.

The best Christmas snack you'll ever try---everyone starts asking for it weeks before Thanksgiving. A friend gave me the recipe, and she had found it in a magazine, "Southern Living Lady", I think.

3 cups Rice Chex
3 cups Corn Chex
3 cups honey nut Cheerios toasted oat cereal
2 cups small pretzels
2 cups salted peanuts
1 (12 ounce) bag holiday M&M's plain chocolate candy (red & green)
1 (12 ounce) bag holiday M&M's peanut chocolate candies
2 (12 ounce) bags white chocolate chips

Steps:

  • Mix all ingredients but the white chocolate morsels in a large bowl.
  • Melt white chocolate morsels according to directions on the package.
  • Pour melted white chocolate over the cereal mixture and toss well to coat.
  • Spread on waxed paper and let sit until the white chocolate hardens.
  • Store in an airtight container.

This is a VERY easy dish to create. I got this from a friend in California and it is a great "what are we having for dinner" solution as you can have all of the ingredients on hand most of the time. I swear the hardest part is cutting the chimi's out of the packaging. You can use any frozen burrito, but the best I have found is the chimichangas from either of the club stores.

6 burritos
16 ounces green enchilada sauce
12 ounces cream of chicken soup
1 cup low-fat sour cream
2 cups cheese

Steps:

  • You can use the burritos frozen, but cooking time will be increased by 15-20 minutes. You can also used cream of whatever is in the pantry.
  • Mix enchilada sauce, sour cream and soup in bowl.
  • Put about half of sauce into the bottom of a pan sprayed with pam. You determine which size pan you have that this will work with, I use either glass or pampered chef --
  • Place burritos in a single layer, then cover with remaining sauce.
  • Cover with foil and bake at 350 for 20 minutes.
  • Spread cheese over top and place back in oven for 10 minutes.

1 (12 ounce) box Cheerios toasted oat cereal
1 (12 ounce) box Rice Chex
1 (12 ounce) box Corn Chex
1 (14 ounce) box Wheat Chex
1 (7 ounce) box cheese nips
1 (12 ounce) package pretzels, bits
1 (12 ounce) package pretzels, stix
2 (3 1/2 ounce) cans mixed nuts
1/2 cup oleo
3/4 cup bacon drippings
1 teaspoon Tabasco sauce
2 teaspoons garlic salt
2 teaspoons celery salt
2 teaspoons onion salt
1 tablespoon Worcestershire sauce

Steps:

  • Melt butter and grease in medium sauce pan.
  • Add all seasonings and stir into the liquid.
  • In a large pot mix all cereals, cheese nips, and pretzels.
  • Pour liquid all over mix coating it all well.
  • Spread the mix onto cookie sheets and bake at 200' for 2 hours stirring occasionally.
  • Bag in ziplock baggies or your favorite holiday jars or sealed bowls.
