DAD'S HAMBURGER GRAVY

This is one of my favorite 'cheap meal' recipes that I learned from my Southern cookin' Dad. Creamy hamburger gravy with just the right blend of spices is perfect served over homemade biscuits, mashed potatoes, rice, fried potatoes.. just about anything!

2 pounds lean ground beef
½ onion, finely chopped
5 cups milk
2 tablespoons chicken bouillon granules
2 tablespoons butter or margarine
1 teaspoon ground sage
salt and pepper to taste
½ cup all-purpose flour

Steps:

  • Crumble the ground beef into a large deep skillet over medium-high heat. Cook and stir until evenly browned. Drain most of the grease, leaving just enough to coat the pan. Add the onions, and cook for a few more minutes.
  • Pour 4 cups of the milk into the pan, and stir to scrape up any bits of food that could burn on the bottom of the pan. Mix in the bouillon, butter, sage, salt and pepper. Bring to a boil, and cook for 5 minutes, stirring frequently.
  • Mix the flour into the last cup of milk until smooth. Slowly pour into the skillet, stirring constantly. Simmer for a few minutes to thicken. If the gravy is too thick, thin with a little bit of milk. If it is too thin, simmer longer, or add more flour. Taste and adjust seasonings before serving.

This was my sister's favorite thing to eat when she was growing up. She wouldn't let anyone but me make it for her.

Number Of Ingredients 8

8 ounces ground beef (browned, crumbled, and drained) or 8 ounces pork sausage (browned, crumbled, and drained)
4 tablespoons butter
4 tablespoons flour
1 1/2 cups whole milk
1/2 cup half-and-half cream
salt, to taste
pepper, to taste
purchased refrigerated buttermilk biscuit

Steps:

  • Cook and drain beef. (I rinse the beef under hot water to remove all of the grease -- it is rich enough!).
  • Melt butter in a pan and when melted and lightly sizzling add the flour.
  • Whisk until combined and gently simmer the butter/flour mixture for about two minutes to remove the flour/starch taste but don't let it brown any.
  • Add the 1.5 cups of milk and quickly whisk until smooth. SImmer until thick over medium heat stirring constantly. It will be quite thick.
  • Add the half and half cream and quickly whisk until smooth.
  • Cook over low heat until thickened.
  • Add the beef and adjust the seasonings.
  • Serve over good biscuits well buttered.
  • This is a very creamy and rich gravy. You may use 2 cups whole milk if you need to omit the cream.
  • If it is too thick for your taste -- then dilute with more milk -- but it usually is perfect the way it is written.
  • Leftovers are excellent.

2 cups flour
1 teaspoon sugar
1/4 teaspoon salt
1 tablespoon baking powder
1/3 cup butter or 1/3 cup margarine, chilled
2/3 cup milk
1/4 cup crumbled sausage, cooked
1/4 cup grated sharp cheddar cheese
1/2 cup chopped canned peaches
3 tablespoons red raspberry preserves
1/2 cup ricotta cheese or 1/2 cup soft cream cheese
3 tablespoons orange marmalade

Steps:

  • Preheat oven to 450 degrees. Mix together flour, sugar, salt and baking powder.
  • Cut in butter with Pastry Blender until mix is size of small peas.
  • Add milk all at once. Stir until dough sticks together.(Food processor may be used. Use frozen butter cut into pieces) With floured hands, knead dough a little on lightly floured pastry cloth or board.
  • Roll out half of dough to about 1/4" thick.
  • Place about a scant teaspoons of your choice of filling on dough near the edge.
  • Fold dough over filling. Cut and seal into crescent with 3" Cut `n Seal.
  • Cut a slash or two in the top.
  • Place on Baking Stone. Repeat using remainder of dough. Bake at 350
  • degrees for 10 minutes.
  • Breakfast Biscuits may be frozen. Defrost and warm in the oven(wrapped in foil) before serving.

3/4-1 cup milk
2 tablespoons flour
1/2-3/4 teaspoon salt
1/8 teaspoon pepper
toast

Steps:

  • Brown Ground Beef in skillet and drain.
  • Add milk and heat to boiling, reduce heat to simmer and add flour stirring constantly until thickened.
  • Add salt and pepper.
  • Serve over your favorite toasted bread.
  • May need to adjust salt and pepper seasoning according to taste.
