WHITE PECAN FUDGE

Each Christmas, I package batches of this rich fudge to send to family and friends. It's just delicious! -Marie Draper, Price, Utah

Yield about 3-1/2 pounds (about 6-1/2 dozen).

Number Of Ingredients 7

1 tablespoon plus 1/2 cup butter, divided
2-1/2 cups miniature marshmallows
2-1/4 cups sugar
1 cup heavy whipping cream
16 ounces white baking chocolate, finely chopped
2 teaspoons vanilla extract
2 cups chopped pecans

Steps:

  • Line a 9-in. square pan with foil. Greased the foil with 1/2 tablespoon butter and set aside. Butter the sides of a large heavy saucepan with 1/2 tablespoon butter. Cut remaining butter into small pieces and place in a large heat-proof bowl; add marshmallows and set aside., In the buttered saucepan, combine sugar and cream. Cook and stir over medium heat until mixture comes to a boil. Cover and cook for 2 minutes to dissolve any sugar crystals. Uncover; cook over medium heat, without stirring, until a candy thermometer reads 234° (soft-ball stage)., Remove from the heat. Pour over butter and marshmallows; stir until melted. Add the chocolate. Continue stirring until chocolate and mixture is smooth. Stir in vanilla and nuts. Pour into prepared pan. Refrigerate until firm. Lift out of pan; remove foil and cut into 1-in. squares. Store in an airtight container at room temperature.

This Fudge was something I have been pondering on trying..I whipped some up, and in my daughters words.."You Rock Mom"..it's not an overpowering coconut flavor...just right..and so pretty.. I used Ghiradelli white chocolate chips, pecans, and coconut extract..what a delicious combination!

Number Of Ingredients 6

6 oz ghiradelli white chocolate chips, or 4 ounces bakers white chocolate, melted about 1 min 30 seconds in the microwave
1 - 8 oz philadelphia cream cheese, softened
1 tsp coconut extract
1/2 c pecans, chopped
pinch of salt
4 c sifted, confectioners' sugar

Steps:

  • 1. Gather ingredients
  • 2. In a med bowl; gradually add sugar to cream cheese mixing well after each addition.
  • 3. Melt the white chocolate; I use microwave safe bowl, and start with 1 minute, if not melted, do another 15 to 30 seconds...stir till smooth and all is melted.
  • 4. Add the chocolate and the remaining ingredients, mix till smooth.
  • 5. Pour into a greased 8 inch pan; spread and chill at least an hour. This sort of fudge is better left refrigerated, when not eating.

CARAMEL PECAN WHITE FUDGE

This fudge is delicious and easy to make. I found this recipe on Barefeet in the Kitchen's website.

3 c vanilla or white chocolate chips
1 can(s) eagle brand milk 14 oz
4 Tbsp butter
1/2 tsp vanilla extract
1 c chopped pecans
1/2 c room temperature caramel sauce

Steps:

  • 1. Combine the chocolate chips, the milk, and the butter in a medium size glass bowl and heat in the microwave for 90 seconds. Stir to combine and heat another 15 seconds. Stir and heat an additional 15 seconds, only if needed. There will still be a few pieces of unmelted chocolate in the bowl. Stir until mostly smooth with just a few flecks of unmelted chocolate. Add the extract and pecans and stir to combine. Scoop onto a parchment lined tray. Spread with a spatula to approximately 1-inch thickness. Drizzle with caramel sauce. Lightly swirl the caramel into the fudge with a knife or the end of the spatula. Chill until ready to serve. Slice into 1-inch squares and store in an airtight container in the refrigerator for up to a week. Enjoy!

Haven't tried this one yet, but wanted to post it to save for Christmas. Vanilla should be 2 teaspoons, but it would not show up on the list of ingredients when I reviewed the recipe! The yield doesn't sound right to me on this, but I listed it as the recipe did.

A saucepan and five easy ingredients are all that's needed to make a sweet and easy foolproof candy.

1 1/2 bags (12-oz size each) white vanilla baking chips (3 cups)
2 cups miniature marshmallows or 16 large marshmallows, cut in half
1 cup (from 14-oz can) sweetened condensed milk (not evaporated milk)
1/2 teaspoon vanilla
1 cup pecan halves, toasted if desired

Steps:

  • Butter bottom and sides of 9-inch square pan, or line with foil.
  • In 2-quart saucepan, heat baking chips, marshmallows and milk over medium heat, stirring constantly, until chips and marshmallows are melted and mixture is smooth.
  • Stir in vanilla and pecans. Immediately pour into pan. Cover; refrigerate until firm, about 4 hours. Cut candy into 1-inch squares.
