Washington State produces large numbers of cranberries. This delicious recipe featuring them is from the Inn at Barnum Point, Camano Island, Washington.

1 3/4 cups flour
1/4 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
5 tablespoons chilled unsalted butter, cut into pieces
6 tablespoons half-and-half
1 large egg, beaten
1/2 cup fresh or frozen cranberries or 1/2 cup dried cranberries (craisins)
1/2 cup white chocolate chips (or pieces)

Steps:

  • Preheat oven to 400 degrees F.
  • In a bowl by hand or using an electric mixer, blend together the flour, sugar, baking powder, salt, and butter.
  • Add the half and half, beaten egg, cranberries (I like the dried ones), and the white chocolate chips, and stir until the dough holds together.
  • Turn out onto a lightly floured board and knead for 2 minutes.
  • Form into a 1/2-inch thick round, then cut the round into 8 wedges (you can also make two smaller rounds of smaller wedges, if you like).
  • Spray a baking sheet with vegetable oil, then transfer the wedges to the sheet.
  • Bake the scones at 400 degrees F for 14 minutes or until golden brown.

400g plain flour, plus extra for dusting
¼ tsp salt
2 tsp baking powder
3 tbsp caster sugar
95g cold butter, cubed
100g white chocolate chunks
185ml whole milk
100g frozen raspberries

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Mix the flour, salt, baking powder and sugar in a bowl, then rub the butter into the dry ingredients using your fingertips, until it looks like fine breadcrumbs. You can also gradually pulse it in a food processor until it resembles breadcrumbs. Gently fold in 75g of the white chocolate.
  • Gradually stir the milk into the flour mixture, and use your hands to bring it together until you have a smooth dough. You may need to add an extra 15-20ml milk until you have a soft dough. Gently stir in the raspberries. Working quickly so the raspberries don't completely melt, lightly dust a baking sheet lined with non-stick baking parchment and the top of the dough with flour. Gently roll out the dough to a 2cm-thick circle (ours was 22cm). Cut into 8-10 triangles, like a pizza, spreading them all out so they're about 5cm apart but still in a circle.
  • Bake for 18-20 mins until golden brown. Set aside to cool. Melt the remaining white chocolate either in a bowl over a pan of gently simmering water, or in 20-second bursts in the microwave. Drizzle the melted chocolate over the scones before serving.

2 cups all-purpose flour
⅓ cup white sugar
1 teaspoon baking powder
½ teaspoon baking soda
6 tablespoons frozen butter
¾ cup fresh raspberries
⅓ cup white chocolate chips
¾ cup plain yogurt
1 egg
1 ½ teaspoons vanilla extract
1 teaspoon lemon zest
1 tablespoon confectioners' sugar, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a baking sheet.
  • Mix flour, sugar, baking powder, and baking soda together in a large mixing bowl. Grate in frozen butter and stir well, making sure butter doesn't stick together. Stir in raspberries and white chocolate chips. Mix in yogurt, egg, vanilla extract, and lemon zest until combined, making sure not to overmix dough.

2 c all purpose flour
1/4 c sugar
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 c butter, cold
1/2 c buttermilk
1 large egg
1/2 c white chocolate chips
1/2 c dried cranberries and/or blueberries
3 Tbsp sugar for sprinkling on tops

Steps:

  • 1. Combine flour, 1/4 cup sugar, baking powder, baking sode and salt in food processor. Mix well. Add butter cut into small chunks and pulse until mixed. Do not over mix or scones will be tough.
  • 2. Whisk together buttermilk and egg in a small bowl, slowly add mixture to processor and process until dough forms.
  • 3. Dump dough into large bowl, add cranberries and white chocolate chips, mix into dough.
  • 4. Turn dough onto floured surface, shape into a rectangle about 1/2 inch thick. Cut into wedge shapes. (cut into squares then cut squares in half). ** I like to use a small scoop to make smaller bite size scones, just drop by heaping tablespoon onto baking sheet if you do it this way.
  • 5. Place wedges on a parchment lined baking sheet and top with sugar. Bake for 14 to 16 minutes until golden on top. ** if you make the smaller scones, bake for 12 to 14 minutes until golden on top.
  • 6. Remove from oven, cool slightly and serve. You can also add a topping such as a light powder sugar glaze depending on how sweet you want them.

2 medium lemons
3 cups all-purpose flour
¼ cup white sugar
1 tablespoon baking powder
½ teaspoon salt
¼ teaspoon vanilla powder
6 tablespoons frozen unsalted butter, cubed
⅓ cup milk
2 large eggs
½ teaspoon vanilla extract
½ cup white chocolate chips
¼ cup fresh raspberries
2 tablespoons all-purpose flour
1 tablespoon superfine sugar
½ tablespoon potato starch

Steps:

  • Zest both lemons; juice 1/2 of a lemon. Set aside.
  • Combine 3 cups flour, sugar, baking powder, lemon zest, salt, and vanilla powder in a bowl, making sure ingredients are well mixed. Cut in frozen butter with a pastry blender until mixture is the texture of sand and you can no longer see pieces of butter. Place bowl into the freezer to keep cold.
  • Whisk milk, eggs, lemon juice, and vanilla extract together in a separate small bowl until combined. Add the wet ingredients to the flour mixture. Stir until the dough comes together, then add the chocolate chips and raspberries. Gently form dough into a ball. Do not overwork.
  • Combine 2 tablespoons flour, superfine sugar, and starch in a separate bowl and sift a layer onto the parchment paper.
  • Transfer the dough ball onto the parchment paper and use your hand to flatten into a 1 3/4-inch thick circle. Place baking sheet into the refrigerator for 20 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Cut the dough into 8 triangles and separate until they're 1 inch apart. Dust with flour, sugar, and starch mixture.

Steps:

  • Heat oven to 400°F. Lightly grease cookie sheet with shortening or cooking spray. In large bowl, mix flour, sugar, baking powder and salt. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like fine crumbs.

2 (6 ounce) containers fresh raspberries
2 ½ ounces white chocolate, or as needed
2 cups all-purpose flour, or more as needed
1 tablespoon white sugar, or more to taste
½ teaspoon kosher salt
4 teaspoons baking powder
5 tablespoons ice cold unsalted butter
¾ cup milk
2 tablespoons sour cream
1 large egg
1 tablespoon milk

Steps:

  • Preheat the oven to 225 degrees F (110 degrees C).
  • Line a baking sheet with a silicone liner.
  • Place fresh raspberries about 1 inch apart on the prepared baking sheet.
  • Bake in the preheated oven for 4 hours, then turn oven off, leaving the berries inside for 8 hours, or overnight.

  • Lightly grease a baking pan and preheat oven to 400°.
  • In a large bowl, combine the dry ingredients.
  • Cut the butter into small pieces and incorporate into the flour mixture with a pastry cutter, or a fork, until evenly incorporated.
  • In a separate bowl, beat the egg and buttermilk together and stir lightly into the flour mixture.

Sooo, I just decided to put my cooking skills to the test and create my own scone recipe, and so, I did. There is always room for improvement, but I think this is a very good start for a perfect copycat recipe.

Though the recipe calls for dried cranberries, I usually use a mix of dried cherries and berries for variety and often use more than the 1/2 cup called for. I also sprinkle turbinado sugar on the top for a bit of crunch. I specify cutting this in sixths, which makes a good size scone, but if you want smaller ones, try eighths and cut down on baking time.

2 lgs. beaten eggs
1/4 cup milk
3 tablespoons sugar
3 cups bisquick
1 cup frozen (not thawed) or fresh raspberries
1/2 cup white chocolate morsels
powdered sugar to dust

Steps:

  • 1. In large bowl, place beaten eggs,milk and sugar. Whisk till blended. Add bisquick and stir with spoon. It will be dry, DON'T add any liquid to it! Add 1 Cup Raspberries and 1/2 cup morsels. With hands, mix altogether. Put about a 1/3 cup in each scone pan well or I use a square miffin pan. Again, 1/3 cup approximately makes a nice sized scone. Bake 400 degrees for 12 minutes. Dust lightly with powdered sugar.
  • 2. Note: You can use any fresh or frozen fruit you wish and with any morsels. How about diced peaches and butterscotch morsels?!? You can add nuts or raisins as well. When adding blueberries, measure them out frozen but let them thaw a little, same with peaches. If you use want to add pieces of cream cheese in the scones, add 1 T sugar to your fruit before putting in the batter. The cream cheese tends to bring the sweetness down a notch. So this will counteract that. Then push little bits of cream cheese in each scone before baking. Be creative.

2 cups all-purpose flour
1/3 cup plus 1 tablespoon sugar, divided
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons chilled unsalted butter, diced
3/4 cup white chocolate chips
1/2 cup peppermint baking chips
3/4 cup chilled buttermilk
1 egg yolk
1 teaspoon french vanilla extract
1/2 teaspoon peppermint extract
1 egg
1/4 cup water
3/4 cup heavy whipping cream
1/4 cup crushed candy cane
mint leaf, crushed peppermint candies

Steps:

  • Preheat oven to 400 degrees. Lightly spray a baking sheet with nonstick baking spray with flour.
  • In a large bowl, sift together flour, 1/3 cup sugar, baking powder, baking soda, and salt. Using a pastry blender, cut in butter until mixture is crumbly. Stir in white chocolate morsels and peppermint baking chips.
  • In a small bowl, whisk together buttermilk, egg yolk, vanilla extract and peppermint extract. Add buttermilk mixture to flour mixture; mix until dough comes together in moist clumps. Gather dough into a ball and knead for 2 to 3 turns. Place on a lightly floured surface and pat to about 1/2-inch thickness.
  • Using a 4-inch cutter, cut out dough (cut straight down, do not twist). Transfer to prepared baking sheet, spacing 1 inch apart.
  • Whisk 1/4 cup water with 1 egg and brush over tops of scones. Lightly sprinkle scones with remaining tablespoon of sugar. Bake scones for 18 to 20 minutes, or until light golden brown. Serve with Candy Cane Cream, if desired.
  • Candy Cane Cream:.
  • In a medium bowl, beat cream and candy canes at medium speed with an electric mixer until medium peaks form. Garnish with mint leaf and crushed peppermint candies, if desired.

3 tablespoons crushed candy canes
3 tablespoons sugar
2 1/2 teaspoons baking powder
1 teaspoon kosher salt
1/2 teaspoons baking soda
1 1/2 sticks (12 tablespoons) unsalted butter
1 cup buttermilk
1/2 cup heavy cream
2 tablespoons corn syrup
8 ounces white chocolate candy melts
2 to 3 drops peppermint oil
Sprinkles, sanding sugar or edible glitter, optional
Round peppermint candies, optional

Steps:

  • For the scone: Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • In a bowl, combine the flour, crushed candy canes, sugar, baking power, salt and baking soda. Using 2 knives or a pastry blender, cut in the butter until the butter is in small pieces but still visible. Stir in the buttermilk. Knead lightly just until the dough holds together.
  • Divide the dough into 2 pieces. Form each piece into a disc about 8 inches wide and 5/8 inch thick. Cut each disc into 6 wedges and place on the prepared pan. Bake until light golden, 20 to 25 minutes. Remove to a cooling rack and let cool completely.
  • For the ganache: In a pot, bring the cream and corn syrup to a simmer, then remove from the heat. Add the white chocolate melts and peppermint oil and stir until completely melted. Transfer to a bowl if necessary for ease of dipping.
  • Dip the scones in the ganache as desired, returning them to the parchment to collect any ganache that drips off. If decorating with sprinkles, sugar or candy, add them quickly before the ganache sets, decorating one at a time as each scone is dipped in the ganache.

A friend of mine served these at a playgroup coffee date several years ago. I finally got around to making them again today. They are so yummy!

1/3 cup butter
1 3/4 cups flour
3 tablespoons sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg, beaten
6 tablespoons half-and-half (can use milk, but 1/2 and 1/2 is better)
1 teaspoon almond extract
white chocolate chips (as many as desired)
sliced almonds (optional)
1 egg white (just the whites)

Steps:

  • Preheat oven to 400 degrees. Cut butter into flour, sugar, baking powder, and salt with a pastry blender until mixture resembles fine crumbs.
  • Stir in one egg, almond extract, and half and half. (Can add more half and half if the dough isn't coming away from the bowl.)
  • Add white chocolate chips and almonds. I find it easiest to mix the dough with my hands.
  • Take the dough in your hands and form 8 large balls. Set the balls on an ungreased cookie sheet. They don't have to be smooth -- the dough will be sticky to work with.
  • Brush scones with egg white.
  • Bake for 10-12 minutes or until golden brown.
  • Immediately remove from the cookie sheet and cool on a cooling rack.

2 c flour
1/3 c sugar
1 Tbsp baking powder
1/2 tsp salt
1/4 c cold butter, cut in pieces
1/2 c heavy cream
1 egg, slightly beaten
1 tsp vanilla
1 c white chocolate chips
1 c diced dried apricots
1 c chopped nuts

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Stir together first 4 ingredients. Slice butter into small pieces and cut into dry ingredients.
  • 3. Mix egg, cream and vanilla, and add to dry ingredients. Knead in fruit, nuts and chocolate. Knead just until incorporated about 6-8 times. Less time kneading is better.
  • 4. Pat into 9 inch circle on greased cookie sheet. Score into 8 wedges.
  • 5. I brush a little egg/cream mixture on top and sprinkle with coarse sugar before baking. Bake for 15-20 minutes.
