Easy White-Chocolate Clusters with Fruit and Nuts image

1 1/2 cups assorted dried fruits and toasted nuts, (choose among raisins, cherries, cranberries, chopped apricots, almonds, pecans, walnuts, hazelnuts, pistachios, and macadamia nuts)
1 package (12 ounces) white-chocolate chips

Steps:

  • Line a baking sheet with waxed paper. In a small bowl, combine dried fruits and nuts.
  • Heat white-chocolate chips in a heatproof bowl set over a pan of simmering water, stirring until smooth.
  • Drop level tablespoons of melted chocolate onto prepared sheet, 2 inches apart. Mound fruit-nut mixture on top, pressing in gently. Refrigerate until set, 15 to 20 minutes.

12 ounces white chocolate melting discs
1/2 cup almonds
1/2 cup dried apricots (, coarsely chopped)
1/2 cup dried cranberries
1/2 cup dried blueberries
1/2 cup golden raisins
1/2 cup raisins
2 ounces semi sweet chocolate chips

Steps:

  • Line a baking sheet with waxed paper.
  • Add the white chocolate discs to a large glass bowl and microwave in 30 second increments until smooth, stirring in between each 30 seconds.
  • Add the almonds and fruits into the chocolate and stir.
  • Place spoonfuls of the chocolate mixture onto the baking sheet in mounds.
  • Refrigerate until set, 15 to 20 minutes.
  • Melt the semi sweet chocolate chips in a small glass bowl in the microwave in 30 second increments until smooth, stirring in between each 30 seconds.
  • Drizzle the chocolate over the clusters and refrigerate again to set.

2 tablespoons unsalted butter, plus more for the pan
1 pound white chocolate chips (2 1/4 to 2 1/2 cups)
1 14-ounce can sweetened condensed milk
1/4 teaspoon salt
1/2 cup chopped roasted pistachios
1/2 cup chopped salted roasted cashews
1/3 cup chopped dried apricots
1/3 cup chopped dried cranberries
1 teaspoon orange blossom water

Steps:

  • Line an 8-inch square baking dish with foil, leaving a 2-inch overhang on two sides; lightly butter the foil. Combine the white chocolate chips, condensed milk, butter and salt in a large microwave-safe bowl. Microwave 1 minute, then stir well. Continue to microwave in 15-second intervals until the chips are fully melted, 15 to 30 more seconds.
  • Add the nuts, dried fruit and orange blossom water to the white chocolate and stir well. Pour the mixture into the prepared baking dish and spread evenly with a rubber spatula. Cover with plastic wrap and refrigerate until firm, at least 2 hours or overnight.
  • Lift the fudge out of the baking dish and peel off the foil. Cut into 1-inch squares with a sharp knife.

What a way to say thank you or to give as a special holiday gift than with truffles. These are naturally sweetened with juice, honey, dried fruits and shredded coconut then dipped in tempered white chocolate. A true delight to share with those you care about.

1 orange, juice and zest
4 ounces dates
1/3 cup dried cranberries
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground ginger
2 tablespoons honey
1 pinch salt
3/4 cup walnuts
1 cup sweetened coconut
10 ounces vanilla baking chips

Steps:

  • In a small saucepan bring the dates, cranberries, orange juice, zest, ground spices and honey to a boil. Remove from heat, cover and let stand for 5 to 10 minutes.
  • Finely chop the walnuts and combine with coconut. With damp hands combine the fruit puree with the processed nuts. Form mixture into 3/4 inch balls and place on parchment lined cookie sheet. Allow to cool completely.
  • When the fruit balls are cooled, place 2/3 of the white baking chips into a microwave safe bowl. Microwave on high for 1 minute, stir and microwave at 30 second increments until melted when stirred. Stir in remaining chips and stir until melted and shiny.
  • Dip the fruit and nut balls into the white baking chips and return to parchment lined cookie sheets. Allow to set. Should the melted chips cool during dipping, return to microwave for 20 to 30 seconds.
  • When completely set, store covered for 3 to 4 days.
  • Please note that standing time is not reflected in either the prep time or cooking time.

  • Line a 15x10x1-in. baking pan with foil. Brush with butter. Microwave white chips on high until melted; stir until smooth. Stir in walnuts, cranberries and nutmeg. Spread into prepared pan. Chill until firm. Break into pieces.
