WHITE CHOCOLATE RICE PUDDING

White rice is cooked in milk, sugar and vanilla for a creamy texture. White chocolate is stirred in for decadent dessert.

4 cups (2 pints) milk
1/2 cup (100 grams) granulated sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
Small pinch nutmeg
1 cup (200 grams) short or long grain rice
3 ounces (85 grams) white chocolate, chopped into small pieces
2 tablespoons dried cranberries
2 tablespoons unsalted, roasted pistachios, chopped

Steps:

  • Add the milk, sugar, salt, vanilla and nutmeg to a saucepan and heat over high heat. Stir in the rice.Bring the milk to a boil, reduce heat to medium low and cook for 30 minutes stirring frequently to prevent the rice from sticking to the bottom of the pan and clumping together, until the milk is absorbed.
  • Remove the pan from the heat and add the chocolate. Stir until melted.
  • Serve warm garnished with dried cranberries and pistachios.

This baked rice pudding is just a little different from other rice puddings..been in the family for years..you'll love it !

Number Of Ingredients 9

2 cups cooked rice (use short grain Jasmine rice)
2 eggs, well beaten
7 tablespoons sugar
1/8 teaspoon salt
1 teaspoon vanilla
1 1/2 cups whole milk
1/2 cup seedless raisins or 1/2 cup chopped dates
3/4 teaspoon cinnamon
1 (1/2 pint) container whole cream

Steps:

  • PREHEAT OVEN: 350F Degrees.
  • Place in saucepan 2 1/2 cups water.
  • Bring water to a boil and add 1 cup of the Jasmine Rice.
  • Reduce heat and simmer for about 20 minutes.
  • Rice should be almost dry.
  • Combine cooked rice with rest of the ingredients except for the cinnamon and whole cream.
  • Pour into a greased 1 quart casserole.
  • Sprinkle cinnamon over top of rice.
  • Bake in oven for about 40 minutes.
  • (Check pudding in 35 minutes).
  • Pudding should not be dry (moisture should show in the middle of pudding).
  • Take out of oven and allow to sit about 15 minutes.
  • Serve warm with a little of the whole cream.

4 1/2 cups whole milk
2/3 cup long-grain white rice
2/3 cup sugar
1 tablespoon vanilla extract
1/4 teaspoon salt
2 large egg yolks
3 tablespoons whipping cream
4 ounces good-quality white chocolate (recommended: Lindt or Valrhona), chopped
1 tablespoon grated orange zest
1/4 teaspoon ground cinnamon
Warm Cherry Sauce, recipe follows
Whipped cream, for garnish, optional
1/4 cup slivered almonds, toasted, for garnish
1 cup cherry preserves
1/4 teaspoon ground cinnamon
3 tablespoons kirsch (cherry brandy)

Steps:

  • Combine first 5 ingredients in a heavy, large saucepan. Cook over medium-low heat until mixture thickens and rice is very tender, stirring occasionally, about 1 hour.
  • Reduce heat to low. Whisk egg yolks and cream together in a small bowl. Gradually whisk 1/2 cup rice mixture into egg mixture; return mixture to the saucepan and cook for 2 minutes, stirring constantly; do not let boil. Remove from the heat. Add white chocolate and stir until melted. Stir in the orange zest and cinnamon. Transfer pudding to a large bowl, cover, and chill until cold. Serve in bowls or large goblets with Warm Cherry Sauce, whipped cream, and toasted almonds on top, or layer in parfait glasses.
  • Bring preserves and cinnamon to a simmer in a medium saucepan over low heat. Remove from the heat, add the kirsch, and carefully ignite with a long match or just warm through.

I adapted a milk chocolate pudding recipe to suit my preference for white chocolate. Made from scratch, this delicious treat has wonderful homemade goodness. My family requests it often.

1/2 cup sugar
3 tablespoons cornstarch
1/8 teaspoon salt
2 cups heavy whipping cream
2 cups milk
6 egg yolks, lightly beaten
3/4 cup vanilla or white chips
1 teaspoon orange or rum extract

Steps:

  • In a heavy saucepan, combine sugar, cornstarch and salt. Gradually add cream and milk. Bring to a boil over medium-high heat, stirring constantly. Reduce heat; cook and stir with a wire whisk 2-3 minutes more or until thickened. , Remove from the heat. Stir 1-1/2 cups hot mixture into egg yolks; return to saucepan. Stirring constantly, bring to a gentle boil; cook and stir 2 minutes more. Remove from the heat; stir in chips until melted. Stir in extract.

1/2 cup uncooked jasmine rice
2 cinnamon sticks, broken
1/2 lemon, zest of, removed in strips with vegetable peeler
1 cup water
2 cups whole milk
1 cup sugar
1/2 teaspoon table salt
1/2 cup creme fraiche

Steps:

  • Combine rice, cinnamon and lemon zest in a medium saucepan. Toast over medium-low heat, shaking occasionally, until rice develops a nutty odor, about 5 minutes.
  • Add water and cook over medium heat, stirring occasionally, until most of the water is absorbed, about 4 minutes. Add 1 c milk and continue cooking, again until most of the liquid is absorbed, about 6 minutes. Add the remaining milk and cook until most of the liquid is absorbed, about 7 minutes. Add sugar and salt, stir well, and and cook until sugar is dissolved, and the liquid is nearly totally absorbed, about 3 minutes more.
  • Remove from heat and stir in creme fraiche. Serve hot, or chill in an ice bath, then refrigerate, covered, up to 2 days. (Place a sheet of plastic wrap touching the surface of the pudding to prevent a skin from forming before sealing the container. Leave cinnamon and lemon zest in; they will continue to add flavor. Discard just before serving.) Serve cold, or reheat gently in a saucepan, adding more milk if too thick.
