Cranberry White Chocolate Quick Bread Mix in a Jar image

A moist and delicious quick bread mix for gift giving! Nothing says "I love you!" better than a gift from the kitchen. And especially one that fills the house of your recipient with the aroma of sweet, fresh baked bread. The dry ingredients are layered in a quart-sized jar and the jar can be decorated in any number of ways to reflect the occasion. Be sure to attach a recipe card or an embellished tag, to the jar, with the recipe, additional ingredients needed and baking instructions. Prep time includes putting together the gift jar as well as combining the wet ingredients before baking.

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg (I use fresh grated, but ground is fine)
1/4 teaspoon ground ginger
1/2 cup dried cranberries
1/2 cup white chocolate chips
1/2 cup pecans, chopped
2 eggs
1/2 cup sour cream
1/4 cup butter, melted
1/4 cup powdered sugar
1/2 tablespoon milk

Steps:

  • To make the gift jar: Sift together the flour, baking powder and salt and then spoon into a quart-sized jar with a tight-fitting lid. (I use a wide-mouth funnel to easily get the ingredients into the jar.) Tap the jar gently on the counter top to settle the flour.
  • Combine the sugar, cinnamon, nutmeg and ginger and pour over the flour in the jar.
  • Continue the layers with the dried cranberries, then the white chocolate chips and finally the pecans. Put the lid on the jar and decorate as desired.
  • To make bread: Preheat oven to 350°F and lightly grease a 9x 5 loaf pan.
  • Pour all the dry ingredient from the jar into a large mixing bowl and stir to combine.
  • In a small bowl, use a fork to beat the eggs lightly and then add the sour cream. Continue mixing with the fork until the sour cream is incorporated.
  • Add the melted butter to the dry ingredients and then add the egg and sour cream mixture. Stir just until combined.
  • Spread into prepared loaf pan and bake in preheated oven for 50 minutes, or until toothpick inserted near center comes out clean.
  • Cool 10 minutes in pan and then turn out onto a cooling rack (with a layer of foil or waxed paper under the rack, to keep your counter clean.).
  • Stir together powdered sugar and milk until smooth. Drizzle or spread over top of loaf. Serve immediately or cool completely before slicing, to keep the slices looking nice.

1/2 cup butter-flavored shortening
1 cup sugar
3 large eggs, room temperature
1 teaspoon grated lemon zest
1 teaspoon vanilla extract
1/2 cup vanilla or white chips, melted and cooled
2-1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup buttermilk
3 tablespoons orange juice
1 cup dried cranberries

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in lemon zest and vanilla. Stir in melted chips. Combine the flour, baking powder, salt and baking soda; gradually add to creamed mixture, alternately with buttermilk and orange juice, beating well after each addition. Fold in cranberries., Pour into a greased and floured 9x5-in. loaf pan. Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

2 1/4 cups all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup coarsely chopped sweetened dried cranberries
3/4 cup half-and-half
2 teaspoons grated orange peel
2 eggs
1/2 cup butter or margarine, melted
1/4 cup orange juice
1 oz. white chocolate baking bar, chopped
1 to 2 tablespoons half-and-half
1/2 cup powdered sugar

Steps:

  • Heat oven to 350°F. Grease bottom only of 8x4-inch loaf pan. In large bowl, combine flour, sugar, baking powder, baking soda and salt; mix well. Stir in cranberries.
  • In small bowl, combine 3/4 cup half-and-half, orange peel and eggs; beat well. Add half-and-half mixture, melted butter and orange juice to flour mixture; stir just until dry ingredients are moistened. Pour batter into greased pan.
  • Bake at 350°F. for 50 to 60 minutes or until deep golden brown and toothpick inserted in center comes out clean. Cool in pan for 10 minutes. Run knife around edges of pan to loosen. Remove loaf from pan; place on wire rack. Cool 1 hour or until completely cooled.
  • In small microwave-safe bowl, combine baking bar and 1 tablespoon of the half-and-half. Microwave on HIGH for 30 seconds; stir until melted and smooth. If necessary, microwave an additional 10 to 20 seconds. With wire whisk, beat in powdered sugar until smooth. If necessary, add additional half-and-half, 1/2 teaspoon at a time, until of desired consistency. Spoon and spread icing over cooled loaf, allowing some to run down sides.

1 loaf french bread (approx 16 ounces)
3 cups (24 ounces) whipping cream
1 cup (8 ounces) milk
1/2 cup (about 3 1/2 ounces) granulated sugar
1/2 teaspoon salt
2 teaspoons cinnamon
8 ounces white chocolate
7 large eggs
1 cup (about 3 1/2 ounces) dried cranberries, divided (use fruit sweetened or unsweetened for best results)
3 ounces bourbon (optional)
For the sauce
4 ounces white chocolate
1 1/2 cups (12 ounces) milk
Confectioners' sugar, to finish (optional)

Steps:

  • Preheat oven to 350°F. Grease a 9- by 13-inch pan. Set to the side. Cut the bread into 1-inch cubes. In a large saucepan, heat the whipping cream, milk, and sugar over medium heat. Dash in the salt and cinnamon. When hot, take off the heat and add the white chocolate pieces; stir until melted. Lightly beat the eggs in a large bowl. Slowly pour the hot cream mixture into the eggs in a steady stream, whipping the eggs as you pour. If you want, add that glug of bourbon now. Add the mixture to the bowl with the bread pieces. Add 3/4 cup of the cranberries. Mix until combined. Now, transfer to the greased pan. Using a spatula press down the bread so everything is absolutely saturated. Bake for 40 to 50 minutes, or until set and golden on top. You don't want brown, just lightly golden. While it bakes, prepare the sauce. Bring the milk to a boil in a small sauce pan. Take off the heat and add white chocolate; stir until smooth and completely melted. It's going to be a fairly liquid sauce. Pour over the bread pudding right when it comes out of the oven. It may look like an obscene amount of liquid but the bread pudding will absorb it. Dot the top of the pudding with more cranberries, and dust with confectioners' sugar to finish.
