½ cup butter, softened
6 tablespoons brown sugar
6 tablespoons white sugar
1 large egg, beaten
1 fresh lime
1 cup all-purpose flour
1 cup white chocolate chips
½ teaspoon baking soda
1 pinch salt
2 cups finely shredded coconut, divided, or more to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly spray 2 cookie sheets.
  • Combine butter, sugars, and egg in a bowl using a wooden spoon, not an electric mixer. Grate lime zest into the mixture. Stir in 1/2 to 3/4 teaspoon lime juice.
  • Combine flour, white chocolate chips, baking soda, and salt in a separate bowl. Mix in butter mixture until a stiff dough forms. Fold in 1 cup coconut.
  • Place remaining coconut on a flat dish. Roll dough into ping pong ball-sized balls; roll in coconut. Arrange dough on the prepared cookie sheets; do not press down.
  • Bake in the preheated oven until lightly browned around the edges, about 10 minutes.

I saw someone else with somewhat of a similar recipe and I tweaked everything. It's much healthier than the recipe I looked at originally. Make sure to take out the cookies immediately when they are ready. If they stay in the oven, they will quickly become too hard.

1/2 cup shortening
3/4 cup light brown sugar
3/4 cup granulated sugar
1 large egg
2 egg whites
1 teaspoon vanilla extract
1/2 cup butter (I used a little less than that... like 1/3ish)
1 cup all-purpose flour
1 cup wheat flour
2 cups rolled oats
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup shredded coconut
1/2 cup cranberries
1/2 cup white chocolate chips

Steps:

  • Preheat oven to 350.
  • Cream shortening, butter, and the sugars.
  • Add eggs and vanilla then blend well.
  • In a new bowl, mix all of the dry ingredients except for the coconut.
  • Mix the coconut.
  • Combine the two bowls by mixing with a spoon.
  • Roll one inch balls of dough onto a greased cookie sheet (1" apart).
  • Baking for 9-10 minutes on the top rack until golden brown (the circumference of the cookies will look darker than the inside).

1 cup flaked coconut, toasted,if you like

Steps:

  • Heat oven to 375.
  • In small bowl,mix the flour,baking powder& soda& salt.
  • In large bowl,combine the butter,sugars& vanilla extract.
  • Beat at high speed,scraping the bowl often,beat mixture until creamy (1-2 minutes).
  • Add in the egg,beat until well mixed (1 to 2 minutes).
  • Reduce the speed to low,gradually adding in flour mixture.

1 1/2 cups graham cracker crumbs
1 (14 ounce) can sweetened condensed milk
2 cups white chocolate chips
1 1/2 cups dried cranberries
1 cup coconut flakes

Steps:

  • Mix the melted butter and graham cracker crumbs together in a bowl. Pat this crumb mixture into a 9"x13" aluminum pan lined with parchment paper (for easier cookie removal).

1 cup plain flour
1 cup self raising flour

1 c butter, softened
1/2 c sugar
1/2 c brown sugar
1 egg
3 tsp vanilla extract
1 tsp coconut extract
1 1/2 c white baking morsels
1 1/4 c flour
1 tsp baking soda
1 1/2 c oats (quick cooking)
1 c flaked coconut (toasted or not)
additional sugar

Steps:

  • 1. Preheat oven to 350 degrees. Cream together butter, sugar, and brown sugar. Add egg, vanilla and coconut extract and mix well. In separate bowl, combine flour and baking soda. Gradually add to the butter mixture. Stir in white morsels, oats and coconut.
  • 2. Drop by tablespoons about 3" apart on ungreased baking sheet. Dip bottom of cup into sugar and slightly flatten cookies. Bake at 350 for 9-11 minutes, or until slightly golden.
  • 3. Move to rack to cool completely.

½ cup chopped macadamia nuts
8 ounces white chocolate, chopped
½ cup flaked coconut

Steps:

  • In a saucepan over medium heat cook butter until golden but not brown. Stir in the brown sugar and chill for 50 to 60 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease or line baking sheets with parchment paper.
  • Combine the flour, baking soda, baking powder and salt.
  • Beat the butter mixture with the white sugar until fluffy and smooth. Beat in the egg and vanilla. Then stir in the flour mixture. Stir in the macadamia nuts, white chocolate chunks and coconut.
  • Roll dough into 1 1/2 to 2 inch balls and bake at 350 degrees F (175 degrees C) for 9 to 11 minutes.
