WHITE CHOCOLATE CHIP ALMOND COOKIES

Number Of Ingredients 13

1 cup salted butter ((at room temperature))
1 cup light brown sugar
½ cup granulated sugar
2 large eggs ((at room temperature))
1 ½ teaspoons vanilla extract
1 teaspoon almond extract
1/4 teaspoon salt
2 ½ cups all purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
2 1/2 cups white chocolate chips
1 cup sliced almonds
extra white chocolate for drizzling ((optional))

Steps:

  • Preheat your oven to 350º Fahrenheit and line a cookie sheet with parchment paper or a nonstick baking mat.
  • In a large bowl with a paddle attachment, beat the butter until creamy and almost white in appearance, scraping the sides of the bowl as needed.
  • Add the sugars and beat on high until fluffy.
  • Add each egg one at a time until fully combined.
  • Next add vanilla and almond extract. Blend on medium until nice and smooth...about 30 seconds.
  • Turn mixer on low and add salt, flour, baking soda and baking powder.
  • Mix until just combined.
  • Turn off mixer and fold in chocolate chips and almonds.
  • Using a cookie scoop, place mounds of dough about 2 inches apart on cookie sheet.
  • Refrigerate the dough for 30 minutes.
  • Bake for 9-11 minutes until golden brown.
  • If desired, drizzle melted chocolate on top of the cookies. Then sprinkle immediately with sliced almonds. This is optional, but gives it such a pretty look!

2 packages (1/4 ounce each) active dry yeast
1-1/2 cups warm water (110° to 115°), divided
1/2 cup butter, softened
1/2 cup sugar
1 teaspoon salt
4-1/2 to 4-3/4 cups all-purpose flour
2/3 cup baking cocoa
FILLING:
2 tablespoons butter, melted
1/3 cup sugar
1/2 teaspoon ground cinnamon
1 cup miniature semisweet chocolate chips
2/3 cup finely chopped nuts, optional
ICING:
2 cups confectioners' sugar
1/2 teaspoon vanilla extract
2 to 3 tablespoons 2% milk
Additional miniature semisweet chocolate chips, optional

Steps:

  • In a large bowl, dissolve yeast in 1/2 cup warm water. Add the butter, sugar, salt and remaining water. Stir in 2-1/2 cups flour and cocoa. Beat on medium speed for 3 minutes or until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Turn onto a lightly floured surface; divide in half. Roll each portion into a 12x10-in. rectangle; brush with melted butter. Combine the sugar, cinnamon, chocolate chips and, if desired, nuts; sprinkle over dough to within 1/2 in. of edges. , Roll up each jelly-roll style, starting with a long side; pinch seams to seal. Cut each into 10 slices. Place cut side down in a greased 15x10x1-in. baking pan. Cover and let rise until doubled, about 45 minutes., Bake at 375° for 25-30 minutes or until lightly browned. Meanwhile, in a small bowl, combine the confectioners' sugar, vanilla and enough milk to reach desired consistency. Spread over rolls while slightly warm; sprinkle with additional chocolate chips if desired.

1/2 cup(s) chopped almonds
1/2 cup(s) mini chocolate chips

1/4 cup(s) unsifted powdered sugar
2 tablespoon(s) milk
1/8 teaspoon(s) almond extract

Steps:

  • Thaw frozen dough as directer in(Robin Hood Flour Freezer Yeast Dough). Roll dough into a 12x10-inch rectangle on lightly floured board. Spread with butter. Combine almonds, pudding mix (dry), chocolate chips and sugar.Mix well. Sprinkle evenly on dough. Roll up tightly beginning with 12-inch side. Cut into twelve 1-inch pieces. Place cut-side down in greased or sprayed 9-inch layer pan or 12 individual cup muffin tin, Brush dough lightly with melted butter or olive oil. Cover with plastic wrap loosely. 1 teaspoon cold water
4 cups whole almonds
½ cup white sugar
¼ teaspoon salt
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Lightly grease a 10x15 inch jellyroll pan.

1 cup all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
¾ cup brown sugar

½ cup white chocolate chips, or to taste

Steps:

4 (3") cinnamon sticks
1/8 teaspoon kosher salt
2 1/2 cups whole milk, divided
2 teaspoons cornstarch
2 ounces high-quality white chocolate, chopped or white chocolate chips (about 1/3 cup)
1/2 teaspoon vanilla extract
Unsweetened whipped cream and ground cinnamon (for serving)

Steps:

  • Toast cinnamon sticks in a medium dry saucepan over medium heat until fragrant, about 1 minute. Add salt and 2 cups milk and bring to a simmer. Remove from heat and let steep 10 minutes.
  • Whisk cornstarch and remaining 1/2 cup milk in a small bowl. Add to warm milk mixture and heat over medium. Bring to a simmer and cook, stirring constantly, until warmed through, about 1 minute.
