2 pounds dried white beans
2 pig's feet, split
1 10-ounce can plum tomatoes, coarsely chopped
Coarse salt and freshly ground pepper to taste
1 cup parsley, finely chopped
4 cloves garlic, minced
6 tablespoons butter
1 cup dried bread crumbs

Steps:

  • Rinse the beans with cold water and pick over carefully. Put them in a heavy casserole with the pig's feet and tomatoes. Add water to cover. Season with salt and pepper, cover and simmer for about 1 1/2 hours, or until cooked, adding more water if necessary. Set aside until half an hour before serving.
  • Preheat oven to 425 degrees. Stir in to the beans the parsley, garlic, 4 tablespoons butter, more salt and pepper if necessary. Sprinkle with bread crumbs, dot with remaining butter and bake, uncovered, until sizzling.

MOM'S NEW YEARS PIG'S FEET

This is a recipe for trotters passed down over time in my family. This was made every New Year's Eve to bring in the new year. A relatively inexpensive African-American dish. Very delicious! Serve with homemade potato salad, Southern style greens and candied yams and cornbread. It is even better the next day, and it freezes well. Serve sprinkled with a little more vinegar or hot sauce to taste.

8 pig feet, split
2 celery ribs, chopped
1 onion, chopped
¾ cup white vinegar
2 tablespoons red pepper flakes
2 tablespoons seasoned salt
1 tablespoon chopped garlic
1 teaspoon ground black pepper
2 bay leaves
water, or as needed to cover

Steps:

  • Thoroughly wash pig feet in cold water and place into a large pot or Dutch oven. Add celery, onion, vinegar, red pepper flakes, seasoned salt, garlic, black pepper, and bay leaves to the feet; pour in water to cover.
  • Bring to a boil, reduce heat to low, and simmer until meat is tender and falling off the bones, about 2 hours.

The mix of meats is personal to each cook. Have your butcher cut the feet and tails for you; they're highly recommended for their rich gelatin and ''piggy'' flavor, but if you prefer, you can use more sausage, fresh pork belly or other cuts instead. Don't be tempted to use too many smoked meats, though; the feijoada's flavor should be beany and porky, not smoky.

2 pounds dry black beans (unsoaked)
1 3/4 pounds skin-on unsmoked pigs' feet, split, cut into 2-inch pieces
3/4 pound pigs' tails, cut into 2-inch pieces
1/2 pound skin-on pork tongue, cut into 1 1/2-inch pieces
3/4 pound skin-on slab bacon, cut into 1/4-inch slices
2 bay leaves
1 pound smoked pork sausage (andouille or kielbasa), cut into 1/4-inch slices
3 tablespoons vegetable oil
1 large onion, medium dice
10 cloves garlic, minced
Salt
Cooked white rice, for serving
Orange slices, for serving
Farofa (optional, see recipe)
Brazilian collard greens (optional, see recipe)

Steps:

  • Place beans, feet, tails, tongue, bacon and bay leaves in a heavy pot. Cover with water by 1 inch, about 10 cups. Bring to a boil over high heat, stirring occasionally. Skim any foam that comes up. When the mixture boils, turn heat down to a gentle simmer. Skim foam for the first 40 minutes. Turn heat down to a low simmer, and cover with a lid. Occasionally add water to keep it covered by 1/2 inch, and give it a stir.
  • Two to 2 1/2 hours later, the beans and meats should be quite tender but not falling apart. Add the sausage, and simmer for another 30 to 40 minutes, until meats are very tender and the stew is rich but not stiff (thin with water if necessary). During this final cooking time, stir to break up some of the beans; their starch will make the stew creamy.
  • Heat 2 tablespoons of vegetable oil in a large skillet over medium-low heat until shimmering. Cook onion, stirring, for 15 minutes, until evenly browned and very sweet. Turn heat up to medium-high, and add remaining oil and garlic. Cook, stirring, until the garlic is golden, about 3 minutes. Bring beans back to a boil over high heat, stir in the onion mixture, season to taste with salt and serve with white rice, orange slices, farofa (see recipe) and Brazilian collard greens (see recipe).

My mom has made this stew for Sunday dinners since I was a child & I finally got the recipe...Served over a bed of white rice, you can also add Pig Tails....Enjoy!!

1 -2 lb pig's foot
1 lb pigs tails (optional)
1/2 onion
2 stalks celery
2 stalks green onions
1 bell pepper
2 cups dry pinto beans or 2 cups kidney beans, rinsed
2 chicken bouillon cubes
2 beef bouillon cubes
2 teaspoons relish (optional)
1 teaspoon minced garlic
salt
pepper
seasoning

Steps:

  • 1. Rinse pigs feet.use knife to remove hairs from pig feet (as if scaling a fish).
  • 2. Place in pot, cover with water, boil for 30-45 minutes to remove froth.
  • 3. Meanwhile -- finely chop (or use food processor) the celery, onion, green onion, bell pepper, garlic -- may also add relish, carrots, or any other vegetables -- Set Aside.
  • 4. Pour out water, rinse pigs feet, and use knife to remove any remaining hairs.
  • 5. Rinse out pot, put pigs feet back in pot, cover with water and boil for 30 minutes. (This can be skipped if desired, but wont be as tender).
  • 6. Pour out water, rinse pigs feet and rinse pot.
  • 7. Place back in pot with chopped vegetables, beans, bouillons -- Cover with water and season to taste with salt, pepper, and seasonings.
  • *** NOW IS THE TIME TO ADD PIGS TAILS IF DESIRED ***.
  • 9. Bring to a boil on medium heat, cover and occassionaly stir for 2 hours -- Bring to low heat for last 1 hour.
  • ** YOU WILL NEED TO ADD WATER TO STEW AS IT EVAPORATES **.
  • 11. Serve over a bed of white rice.
