2 cups dried cannellini beans, picked over and rinsed
1 sprig sage, plus 1/2 teaspoon chopped sage
2 garlic cloves, 1 minced
1 small bay leaf
1/4 cup extra virgin olive oil
2 tablespoons extra virgin olive oil
salt
1 cup canned tomato sauce
fresh ground pepper

Steps:

  • Cover the beans with 2 inches of water and bring to a boil. Cover and remove from the heat. Let stand for 1 hour, then drain.
  • Cover the beans with 4 inches of fresh water. Add the sage sprig, whole garlic clove, bay leaf and 2 tablespoons of the olive oil. Bring to a boil and cook over moderately low heat for 30 minutes. Season the beans with salt and cook for about 15 minutes longer, until the beans are tender; drain and discard the sage, garlic and bay leaf.
  • Meanwhile, in a medium, deep skillet, heat the remaining 1/4 cup of oil. Add the chopped sage and minced garlic and cook over moderate heat for 1 minute. Add the tomato sauce and bring to a simmer.
  • Add the beans to the skillet and cook, stirring, until saucy and thick, 5 minutes. Season with salt and pepper and serve.

2 cups or cannellini beans, dried zolfini
1 sprig sage
2 clove garlic
1 small bay leaf
¼ cup (plus 2 tbsp) extra virgin olive oil
salt
1 cup canned tomato sauce

3/4 cup chopped peeled carrot

6 whole sweet Italian sausages (about 1 1/4 pounds)
6 cups cooked white beans with 1/2 cup reserved cooking liquid (see Cannellini Beans with Garlic and Sage )
1 14-to 15-ounce can plum tomatoes in juice; tomatoes chopped, juice reserved
2 large fresh sage sprigs
1 cup (or more) water

Steps:

  • Heat oil in large skillet over medium heat. Add garlic. Sautégarlic until golden, about 2 minutes. Add sausages; sauté until browned, about 5 minutes. Add 1/2 cup reserved bean cooking liquid, tomatoes with juice, and sage. Simmer 5 minutes. Add beans and 1 cup water. 4 garlic cloves, minced
1 (16 ounce) can tomatoes, chopped
2 tablespoons minced parsley
1 teaspoon dried basil
1 teaspoon dried oregano
1 (15 ounce) can cannellini beans, rinsed, drained (white kidney beans)
1/4 teaspoon salt
1/4 teaspoon pepper
6 ounces pasta, your choice, freshly cooked

Steps:

  • Heat oil in heavy, large skillet over medium heat.
  • Add garlic and saute until golden, about 2 minutes.
  • Stir in tomatoes and cook 5 minutes.
  • Add parsley, basil and oregano and simmer, stirring occasionally for 15 minutes.
  • Add beans and cook until heated through, about 5 minutes.
  • Season with salt and pepper.
  • Place freshly cooked pasta in bowl.
  • Pour sauce over and toss thoroughly.
