This delicious recipe is easy to prepare and very satisfying. It's also great for my South Beach Diet. It's based on a recipe in Martha Stewart's Every Day Food magazine, but slightly modified.

2 tablespoons canola oil
1 lb ground turkey (lean)
salt and pepper
1 large onion, chopped
2 jalapenos, seeded and minced
2 teaspoons ground cumin
1 (8 ounce) can tomato sauce
2 (19 ounce) cans cannellini beans, drained and rinsed
1 (14 1/2 ounce) can chicken broth
1 cup water
1/4 cup chopped cilantro (to garnish)
1/4 cup light sour cream (to garnish)

Steps:

  • Heat canola oil in a dutch oven or deep skillet over medium high heat.
  • Add ground turkey and season with salt and pepper.
  • Cook until browned, stirring to break up turkey.
  • Add chopped onion and minced jalapeno and cook until soft, about 3 minutes.
  • Stir in ground cumin and tomato sauce and cook for 2 more minutes.
  • Add the cannellini beans, the broth and the water.
  • Bring to a boil.
  • Reduce heat and simmer until thicker, about 20 minutes.
  • Ladle into bowls and place a dollop of light sour cream and a sprinkling of chopped cilantro on top of each serving.

Don't omit the Hersey's cocoa and cinnamon, it makes this recipe! This is even better if made a day ahead, the flavors really intensify! This can also be made on top of the stove. Serve this with crusty buns!

3 tablespoons oil (can use more)
2 large onions, chopped
3 tablespoons minced fresh garlic (or to taste)
2 -4 teaspoons dried chili pepper flakes (or to taste, if you like heat add in lots!)
1 jalapeno pepper (seeded and finely chopped) (optional)
2 teaspoons dried oregano
2 teaspoons cumin
1/4 cup chili powder (or to taste)
2 tablespoons tomato paste
1 1/2 lbs ground turkey
1 large bay leaf (or use 2 small)
1 tablespoon hersey's dark cocoa
1/4 teaspoon cinnamon
1 (28 ounce) can diced tomatoes, undrained
1 (8 ounce) can tomato sauce
3 (15 ounce) cans small white beans, rinsed and drained
2 cups beef broth
1 cup dark beer
salt and pepper
2 cups grated old cheddar cheese (or to taste)

Steps:

  • Heat oil in a Dutch oven over medium heat; add in onions and saute for 8-10 minutes or until lightly browned (adding in the garlic the last 3 minutes of cooking).
  • Add in the oregano, cumin and chili powder, chili flakes and jalapeno pepper (if using) cook for 1-2 minutes.
  • Add in tomato paste and stir for 1 minute.
  • Add in ground turkey; cook until no longer pink.
  • Stir in bay leaf and cocoa powder, then add in undrained diced tomatoes, tomato sauce, beef broth and beer; bring to a boil and simmer on top of the stove for about 15 minutes, stirring occasionally, then season with salt and pepper.
  • Set oven to 325 degrees.
  • Place in oven uncovered, and cook for about 1 hour, stirring occasionally (the longer you cook this in a low heat oven the richer and thicker it will be, you can even cook it for even 2 hours!).
  • After 1 hour cooking add in drained beans, and season with more salt if desired; return to oven and cook uncovered for another 35-40 minutes.
  • Sprinkle the cheddar cheese on top the last 5-6 minutes of cooking time.

I came across this recipe in a magazine about a year ago...can't remember which one, but it is my new favorite recipe. Even if you are't a big fan of gound turkey...I am not...this recipe may change your mind...Not to mention that it is healthy AND can be prepared in a crock pot or on the stove top. I always double the recipe and freeze the second batch. Family tested and loved!

1 1/4-1 1/2 lbs ground white turkey meat
2 tablespoons olive oil, divided
2 onions, finely chopped
6 garlic cloves, finely chopped
1 tablespoon oregano
1 (28 ounce) can stewed tomatoes, chopped
2 cups chicken broth
1 (19 ounce) can cannellini beans (White Kidney Beans)
1 (4 1/2 ounce) can chilies, chopped
1 green bell pepper, chopped

Steps:

  • Brown ground turkey in 1 T. olive oil & set aside.
  • Saute onions, garlic & oregano in remaining 1 T. olive oil. Add tomatoes & chicken broth and bring to a boil. Reduce by 1/3.
  • Add cannellini beans & ground turkey and transfer to crock pot. Cook on high 3 - 4 hours or on low all day, 6 - 8 hours. Or for stove top, bring to a boil, reduce heat to simmer and cook 60 minutes.
  • 30 minutes before serving, add chopped chilies and bell pepper.
  • Freezes well.
