White Bean and Salmon Salad image

This simple, attractive salad uses salmon in place of the traditional tuna for an extra nutritional punch. It makes a perfect light lunch or easy side dish. If you have pesto on hand, drizzle a couple of tablespoons on top for a bright and tasty finish.

2 (15 ounce) cans cannellini beans
1 (3 3/4 ounce) can pink salmon or 1 (3 3/4 ounce) can red salmon
1/4 cup freshly grated parmesan cheese
1/4 cup minced red onion
1/4 cup fresh basil leaf, roughly chopped
3 tablespoons vinegar or 3 tablespoons lemon juice
1/4 cup extra virgin olive oil
1/4 teaspoon coarse salt
1/8 teaspoon ground pepper

Steps:

  • Drain and rinse the cannellini beans and place in a medium-size mixing bowl. Flake the canned salmon on top of the beans and add the Parmesan, minced garlic, and basil leaves. Whisk together the dressing ingredients, pour over the bean mixture, and toss gently to combine. Serve at room temperature or slightly chilled.

Grilled Salmon with White Bean and Arugula Salad image

1 tablespoon Chopped capers, rinsed and drained
1/4 teaspoon Grated lemon rind
3 tablespoons Fresh lemon juice
2 tablespoons Olive Oil
3/4 teaspoon Kosher salt, divided
1/2 teaspoon Garlic, minced
1/8 teaspoon Ground red pepper
1 can Unsalted great northern beans, rinsed and drained
4 Salmon fillets (6 ounces)
1/4 teaspoon Black pepper
4 cups Arugula (loosely packed)
1/2 cup Red onion, thinly sliced

Steps:

  • 1. Whisk together capers, rind, juice, oil, 1/2 teaspoon salt, garlic, and red pepper in a bowl.
  • 2. Place beans in a bowl; drizzle with 2 tablespoons caper mixture.
  • 3. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Coat salmon with cooking spray; sprinkle with remaining 1/4 teaspoon salt and black pepper. Add salmon to pan, skin side down; cook 6 minutes. Turn salmon over; cook 1 minute or until done. Keep warm.
  • 4. Add arugula and onion to bowl with beans. Drizzle with remaining caper mixture; toss. Divide salad among 4 plates; top each serving with 1 fillet. Serve immediately.

1 (14.75oz) can of salmon, drained & flaked
1 (15 oz.) can navy beans, drained
1/2 C red onion, finely chopped
1 T tarragon vinegar
1/2 t salt
Pepper
1/4 C flat leaf parsley, chopped

Steps:

  • Mix all ingredients together, except parsley. Add parsley just before serving. For plating: serve over lettuce.
