WHIPPED SWEET POTATOES WITH BANANAS AND HONEY



Whipped Sweet Potatoes with Bananas and Honey image

A delicious and vibrant side for your holiday spread!

Number Of Ingredients 10

4-5 large sweet potatoes
1 tbsp cinnamon
1 pinch Salt
1 tsp nutmeg
3/4 cup milk
2 Large bananas (Or 3 small bananas)
1/4 cup honey
1 tbsp butter
1/2 cup pecans
1 dash cinnamon (or more if you'd like )

Steps:

  • Wash and wrap 4-5 large sweet potatoes in foil
  • Bake for 1 hour in 450 degree oven
  • Add the bananas to the baking sheet and cook the last 20 min. with the sweet potatoes
  • Remove from oven and take potatoes out of foil
  • Allow to cool until you can handle them
  • Remove skins
  • Add flesh of the potatoes to a large mixing bowl
  • Add the banana fruit to the mixing bowl
  • Add 1 tbsp butter to bowl
  • Mix with hand mixer or stand mixer
  • Add 1 tbsp cinnamon, dash of salt, 1 tsp nutmeg and mix thoroughly
  • Add 3/4 cup of milk slowly while mixing
  • When smooth add mixture to a baking dish and set aside
  • Add butter to pan; allow to melt and when foaming stops, add the pecans
  • add the sugar and cinnamon to the pan and mix
  • Toast the pecans until they are shiny (about 4-5 min)
  • Remove from pan and top sweet potatoes with the pecans

Mashed Sweet Potatoes with Banana and Brown Sugar image

8 sweet potatoes or large yams, each about 10 ounces
About 3 tablespoons kosher salt, plus additional as needed
1 banana, with a 2-inch slit cut into the peel
8 tablespoons (4 ounces) unsalted butter
2 cups heavy cream
1 cinnamon stick
1/4 cup firmly packed light brown sugar
1 teaspoon finely ground fresh black pepper, plus additional as needed

Steps:

  • 1. Wash each of the potatoes well, poke holes into them with a fork, rub each with about 1 teaspoon of salt, and wrap with heavy-duty aluminum foil.
  • 2. Place directly on hot coals and cook for about 20 minutes, or cook in a 350°F barbecue for about 50 minutes, or until tender when pierced with a paring knife. At the same time, cook the banana in the peel until blackened, about 15 minutes.
  • 3. Carefully take the potatoes out of the foil and scoop the flesh out from the skin into a large bowl. Cover with foil. Scoop the flesh out of the banana into a separate bowl.
  • Increase temperature to high.
  • 4. Place a small roasting pan or deep baking dish with high sides that can take the direct flame (a 13 x 9-inch baking dish with a 15-cup capacity is ideal) over the heat and let heat up for 5 minutes.
  • Add the butter and let melt. Add the cream, cinnamon stick, brown sugar, potatoes, banana, 1 teaspoon of salt, and 1 teaspoon of pepper. Using a potato masher, mash the potatoes and banana, and stir to combine.
  • Season to taste with additional salt and pepper as needed.

From Tyler Florence, Ultimate Thanksgiving. I like the idea of using banana and honey instead of sugar for the sweetness. I can't stand those yucky, overly sweet sweet potatoes that we here in the south usually serve. This is a better option for those of us who enjoy sweet potatoes without all the sugar. I did retain the pecan topping but you can probably cut it back to 1/2 cup of brown sugar. Enjoy!

5 medium sweet potatoes, scrubbed
4 bananas, unpeeled
1 cup unsalted butter, at room temperature
1/4 cup honey
kosher salt
1/2 cup all-purpose flour
3/4 cup dark brown sugar
1 1/2 cups pecans, chopped

Steps:

  • Preheat the oven to 375 degrees F.
  • Prick the sweet potatoes all over with a fork, put them in a roasting pan and roast for 30 minutes. Toss the bananas into the pan and continue roasting for 10 to 15 minutes, until both the bananas and potatoes are very soft. Remove the pan from the oven but don't turn the oven off.
  • When the potatoes are cool enough to handle, scoop out the flesh into a large mixing bowl. Peel the bananas and add them to the bowl along with 1 stick of the butter, and the honey. Season with salt and beat vigorously with a wooden spoon until everything's well combined and the mixture is fluffy. Spoon into an oven-proof serving bowl and smooth the top.
  • In a separate mixing bowl, use your fingers to rub together the remaining stick of butter, the brown sugar, flour, and pecans until the mixture is the consistency of coarse crumbs. Sprinkle the crumb mixture over the sweet potatoes and return to the oven. Cook for about 20 minutes, until the crumbs are golden. Serve hot.
