For roast beef. This recipe was shared by Lawry's Prime Rib with the Los Angeles Times. It is printed in Dear S.O.S. Favorite Restaurant Recipes. The seasoned salt is obviously Lawry's Seasoned Salt and the hot pepper sauce is Tobasco.

1 cup whipping cream
1 ounce horseradish root, peeled and very finely grated
1 teaspoon seasoning salt
2 -3 drops hot pepper sauce

Steps:

  • Whip cream until soft peaks form.
  • Gradually add horseradish, seasoned salt and hot pepper sauce.
  • Beat until stiff.
  • Refrigerate until ready to serve.

1 cup whipping cream
1/4 teaspoon Lawry's Seasoned Salt
2 tablespoons prepared horseradish, well drained or 4 tablespoons finely grated fresh horseradish root
1 dash Tabasco sauce

Steps:

  • Whip cream until stiff peaks form.
  • Fold in seasoned salt, horseradish and Tabasco until well mixed.
  • Make sure to use either the prepared horseradish or the freshly grated horseradish but not both.

From the original Lawry's The Prime Rib on La Cienaga Blvd. in Beverly Hills. An elegant way to serve your prime rib roast. I'll also post the horseradish recipe. Adjust cooking time for amount of meat.

1 (4 lb) standing rib roast (4-rib)
Lawry's Seasoned Salt
1 (5 lb) bag rock salt

Steps:

  • Sprinkle fatty cap of roast with seasoned salt to your taste.
  • In heavy roasting pan, spread rock salt evenly over bottom; place wire roasting rack on top of salt.
  • Place the roast on rack, fatty side up. Make sure no salt actually touches the beef.
  • Insert meat thermometer in thickest part of meat, making sure it does not touch a bone.
  • Roast in preheated 350 degrees F. oven until thermometer registers 130 degrees F. for rare, 140 degrees F. for medium or approximately 20 to 25 minutes per pound.
  • Remove from oven and let stand 20 minutes before carving.
  • Using a sharp carving knife, slice meat across the grain for serving.
  • Discard rock salt.
  • Serve with Lawry's Whipped Cream Horseradish.

A steak lover's delight! Perfect with ribeye, prime rib, or sirloin. I like it on steak sandwiches or to dip steak fries in. Decadent for sure! Servings are approximate. Cook time includes chill time.

1 cup prepared horseradish
2 cups heavy cream
1 teaspoon Dijon mustard
3/4 teaspoon salt
3/4 teaspoon fresh ground white pepper (pre-ground is ok in a pinch)
3/4 teaspoon Tabasco sauce

Steps:

  • Line a fine mesh sieve with cheesecloth. Strain the horseradish for 2-3 minutes, or until reduced to 3/4 cup. Press on the horseradish with a spoon or squeeze the cheesecloth to extract all the liquid.
  • In a mixing bowl, whip the cream with a wire whisk until it thickens to the consistency of sour cream. You can use an electric mixer set on medium-high, but watch carefully so that the cream does not overwhip.
  • Add the horseradish, mustard, salt, pepper and Tabasco.
  • Whisk until thickened using a wire whisk or electric mixer. The sauce should be moist and the consistency of whipped cream.
  • Refrigerate for at least 1 hour, then serve immediately or transfer to a covered storage container and refrigerate up to an additional day.

This is a fabulous addition to prime rib and other cuts of beef. The whipped cream tones down the heat of the horseradish, so even kids like this. Plus it's pretty! You can substitute 1/4 cup of freshly grated horseradish for the 3 tablespoons of prepared horseradish.
