1/3 cup wheat germ
1 (7 ounce) can no-salt-added corn, drained or 1 cup cooked fresh corn kernels
1/3 cup finely sliced green onion
1/3 cup minced parsley
1/3 cup chopped carrot
1/3 cup chopped celery
3 tablespoons polyunsaturated oil (vegetable)
2 tablespoons lemon juice
1/2 teaspoon basil
1/4 teaspoon oregano
1/4 teaspoon vegit seasoning or 1/4 teaspoon Mrs. Dash seasoning mix
salad greens
1 sliced cucumber

Steps:

  • Combine the wheat germ, corn, onions,parsley, carrot and celery.
  • Combine the oil, lemon juice, herbs and Mrs Dash or Vegit and combine with wheat germ corn mix.
  • Line a salad bowl with crisp salad greens and fill the center with the salad mix.
  • Wash a fresh cucumber and slice it very thin. Do not peel the cucumber unless it has been waxed to preserve it. Place the slices decoratively over the corn mix.

3 1/2 cups water
1 cup uncooked wheat berries
1/2 teaspoon salt
1 bag (12 oz) frozen corn
1 tablespoon vegetable oil
1/2 teaspoon salt
2 cups baby spinach leaves
1 cup cherry tomatoes
1/4 cup chopped onion
2 tablespoons white vinegar
1 teaspoon grated orange peel
2 tablespoons orange juice
2 tablespoons vegetable oil
1 tablespoon honey
1/8 teaspoon ground red pepper (cayenne)

Steps:

  • In 2-quart saucepan, heat water, wheat berries and 1/2 teaspoon salt to a rolling boil over high heat. Reduce heat to low; cover and simmer 1 hour 15 minutes to 1 hour 30 minutes or until tender. Drain; rinse with cold water to cool. Drain well.
  • Meanwhile, heat oven to 450°F. In ungreased 15x10x1-inch pan, evenly spread corn. Drizzle with 1 tablespoon oil; sprinkle with 1/2 teaspoon salt. Bake 15 minutes to roast corn. Set aside.
  • In large bowl, stir together wheat berries, corn, spinach, tomatoes and onion.
  • In 1-cup measuring cup, mix dressing ingredients with wire whisk until well blended. Stir into salad. Let stand 15 minutes before serving to blend flavors.

This cornbread is a favorite in our house. It has great flavor and texture, and it's not too bad for you either! :-) Serve wedges of piping hot bread with chili, soup, scrambled eggs...

1 cup yellow cornmeal
3/4 cup unbleached flour
1/4 cup wheat germ
4 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sucanat or 2 tablespoons brown sugar
2 eggs, beaten
1 cup milk
1/4 cup melted butter

Steps:

  • Stir dry ingredients together.
  • Make a well, add remaining ingredients, and stir just until moistened.
  • Pour into sprayed 9 inch pie plate and bake 25 minutes at 400 degrees; cool on rack 15 minutes, invert bread onto rack, and cut into wedges.
  • Edited to say: I have been making this with 1/2 cup of unbleached flour and 1/2 cup of wheat germ (increasing the wheat germ), and it is just as delicious -- so try it the healthier way if you are so inclined!

I serve this creamy wheat and pineapple salad at Thanksgiving and Christmas dinner. It's a family favorite!

1 ½ cups whole wheat berries
1 (8 ounce) package cream cheese, softened
1 (15.25 ounce) can crushed pineapple in juice, drained
2 tablespoons lemon juice
1 (3.4 ounce) package instant vanilla pudding mix
1 (8 ounce) tub frozen whipped topping, thawed

Steps:

  • Soak wheat berries in a bowl of water for at least 5 hours or overnight. Drain and place in a slow cooker with enough water to cover by one inch. Cover, and cook on Low setting for 5 to 6 hours, until tender. Add more water if needed. When tender, drain, and rinse under cold water to chill.
  • In a large bowl, stir together the cream cheese, pineapple and lemon juice. Stir in the dry pudding mix until smooth. Stir in the wheat berries until evenly coated. Fold in whipped topping just before serving. Refrigerate any leftovers.

1 egg, beaten

3 1/2 cups water
1 cup uncooked wheat berries
1/2 teaspoon salt
2 medium ears fresh sweet corn, husks and silk removed
1 cup cherry tomatoes, cut in half
2 cups baby spinach leaves
1/4 cup chopped onion
2 tablespoons white vinegar
1 teaspoon grated orange peel
2 tablespoons orange juice
2 tablespoons vegetable oil
1 tablespoon honey
1 teaspoon salt
1/8 teaspoon ground red pepper (cayenne)

Steps:

  • In 2-quart saucepan, heat water, wheat berries and salt to a rolling boil over high heat. Reduce heat to low; cover and simmer 1 1/4 to 1 1/2 hours or until tender. Drain; rinse with cold water to cool. Drain well.
  • Heat gas or charcoal grill. Place corn on grill over medium-high heat. Cover grill; cook 12 to 15 minutes, turning frequently, until tender. Cool slightly; cut corn from ears to measure about 2 cups.
  • In large bowl, stir together wheat berries, corn, tomatoes, spinach and onion.
  • In 1-cup measuring cup, mix vinegar, orange peel, orange juice, oil, honey, salt and red pepper with wire whisk. Stir into wheat berry mixture. Let stand 15 minutes before serving.
