1 (10 ounce) package frozen french fries
4 ounces processed cheese, product (like Velveeta)
1 tablespoon milk
2 slices bacon or 2 slices vegetarian bacon, cooked
1 jalapeno
2 roma tomatoes
ranch dressing, to taste

Steps:

  • Prepare french fries according to package directions.
  • While fries are cooking, chop bacon, jalapeno, and tomatoes. Prepare the jalapeno according to your tastes - remove and discard seeds and ribs, if you prefer it less hot, or leave them in, if you like.
  • Combine cheese product and milk in a microwaveable container and follow package directions to melt in microwave, stirring occasionally during heating process.
  • When fries are ready, place on a serving platter and drizzle with the cheese sauce.
  • Sprinkle with the bacon, jalapeno and tomatoes.
  • Serve with ranch dressing.

1/4 teaspoon garlic salt
1/4 teaspoon seasoning salt
1/4 teaspoon onion powder
2 cups grated sharp cheddar cheese
6 -8 slices bacon, enough to make 1/2 cup once cooked

Steps:

  • Preheat the oven to 450°F.
  • Cook bacon in a medium-sized frying pan oven medium-high heat.
  • Take out bacon when crisp and put on a paper towel to dry.
  • Pour bacon grease into a bowl and allow to cool slightly.
  • Add garlic salt, onion powder, and seasoned salt to the grease and stir to mix. Set aside.
  • Arrange the fries on a greased baking sheet and bake for 10 to 15 minutes or until slightly golden.
  • Set oven to broil.
  • Brush the bacon oil an seasoning mix onto each fry.

2 medium russet potatoes
6 cups vegetable oil (to 8) or 6 cups shortening (to 8)
1 tablespoon salt
1 teaspoon garlic powder
3/4 teaspoon fresh ground black pepper
1/2 teaspoon onion powder
1/8 teaspoon ground thyme
ranch dressing
cloned aussie chips, 1 plate (from above recipe)
1 cup shredded monterey jack cheese
1 cup shredded cheddar cheese
1 slice bacon, cooked
ranch dressing

Steps:

  • For the Aussie Chips: Preheat oil to 375 degrees in a deep fryer.
  • Cut potatoes into french fry slices using a vegetable slicer or mandolin. It's important to use a gadget for the slicing so that the fries will all be the same thickness, and will cook evenly. Submerge all of the sliced potatoes in a large bowl fill with cold water for 30 minutes.
  • Combine all of the seasoning ingredients in a small bowl and set aside.
  • Remove potato slices from the water and onto a clean towel. Blot dry.
  • Fry potato slices for 8 to 12 minutes in hot oil until light brown. Drain fries on a rack or paper towels and sprinkle with some of the seasoning. Pile the fries on a plate and serve with ranch dressing on the side, if desired.
  • For the Aussie Cheese Fries: Prepare the clone for the Aussie Chips and arrange the seasoned fries on an oven-safe plate. Preheat oven to 400 degrees.
  • Mix the cheeses together and sprinkle the blend over the fries. Crumble the bacon and sprinkle it over the cheese. Bake the plate for 4 to 5 minutes in the hot oven, until cheese is melted. Serve with ranch dressing on the side.

1 sack frozen French fries, any brand or shape ? crinkle cut, thin cut, steak cut, waffle fries prepared to package directions
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups whole milk
2 1/2 cups, (10-ounce) sack shredded yellow Cheddar
3 squirts ketchup, about 1/4 cup

Steps:

  • Have your GH (Grown Helper) put fries in oven on a cookie sheet. While fries are baking in the oven, have a GH place a sauce pot on the stove and heat it over medium heat. Add butter and melt it. Add the flour and stir. Cook butter and flour together for 1 minute or so. This is called "roux" (like Tiger and Roo with Pooh Bear) and it helps to thicken up sauces. Use a whisk to stir as the milk goes into the pot. Keep stirring until the milk gets thicker. Use a wooden spoon or heat-safe spatula to stir in the cheese. When all of the cheese melts, take the sauce off the heat and stir in 3 squirts of ketchup. This is your SECRET ingredient. When everyone asks what you put in your cheese sauce that makes it taste so good, just say milk and cheese, you can NEVER tell what secret ingredients you add! Tell your GH to keep the secret, too or they can never help you again!
  • Pour the sauce over the fries or serve the sauce on the side if you like to dipping better.
