20 Minute Fish Congee image

This fish congee recipe, a comforting, tasty Cantonese-style rice porridge, cooks in just 20 minutes-using our secret shortcut!

1 cup white rice
12 ounces delicate white fish filets ((such as flounder, sliced into large chunks))
1/4 teaspoon salt (plus more to taste)
1/4 teaspoon white pepper (plus more to taste)
2 teaspoons oyster sauce
2 teaspoons Shaoxing wine
1 teaspoon ginger ((grated))
1 large egg white
8-9 cups water or chicken broth ((you can also use half stock, half water))
2 cups romaine lettuce ((chopped))
3 thin slices ginger ((finely julienned))
chopped scallion and cilantro ((to garnish))

Steps:

  • Wash the rice 1-2 times, mixing it in the water with your hands before discarding the starchy water. Submerge and soak the rice for 30 minutes.
  • Drain and transfer to a resealable bag or other freezer-safe container. Freeze for at least 8 hours.
  • In a medium bowl, marinate the fish with salt, white pepper, oyster sauce, Shaoxing wine, and ginger. Use your hands to toss the fish to coat. Add the egg white, and gently mix until the marinade feels slippery and each fish chunk is well-coated.
  • Cover the bowl with an overturned plate and transfer to the refrigerator for 15 minutes to marinate while you start the congee.
  • In a large pot, bring 8-9 cups of stock and the frozen rice to a boil (no need to defrost the rice). Cover, leaving the lid slightly ajar to avoid the congee boiling over, and reduce the heat to medium low. Simmer for 10 minutes. Do not stir.
  • While the congee cooks, wash and finely chop the romaine lettuce and very thinly julienne the ginger. Don't prepare the ginger ahead of time, as you want the flavor of freshly cut ginger.
  • After 10 minutes, increase the heat to medium high, and stir the congee continuously for a couple of minutes to thicken. Stir in the lettuce, and bring to a boil to wilt the lettuce.
  • Finally, add the fish pieces, gently stirring to distribute them. (If you don't like the taste of raw ginger in your congee, you can add the ginger at this point, along with the fish fillets.) Bring to a boil, and add additional salt and white pepper to taste. Serve topped with scallions, cilantro, and ginger if desired.

4 cups white rice
2 whole chickens, salted overnight
1 lb rib eye steak
1 lb sweet shrimp
fish sauce, for seasoning
grated fresh ginger, for seasoning
kosher salt
4 eggs
soy sauce, for soaking eggs
4 scallions, chopped, for garnish
fresh cilantro leaves, for garnish

Steps:

  • Bring 4 gallons (16 quarts) water and the rice to a rolling boil, and then add the whole chickens. Add the rib eye steak and sweet shrimp. Cover the pot with a lid, but vent it slightly with two chopsticks. Braise for 1 hour, and then season with fish sauce, grated ginger and salt. Allow the chickens to rest in the porridge until cooled, and then pull them out before serving. Slice the steak and add the slices to the porridge.
  • Soft-boil the eggs, peel and soak in soy sauce.
  • To serve, pour a good-sized serving of porridge into a large bowl and garnish with an egg, chopped scallions and cilantro.
  • Cook's Note: Reserve the chickens for another dish calling for cooked chicken.

SWEDISH RICE PORRIDGE



Swedish Rice Porridge image

This recipe comes courtesy of one the American Girls cookbooks. Specifically it comes from the Kirsten one and so is Swedish themed. Several of these recipes from all of the books are all time favorites of mine so I will post them here. Rice porridge, known as "Skansk grot" in Sweden, made pioneer settlers feel at home in America. This is a wonderful comfort food for a sickie or just for a rainy day.

1 large apple
1 teaspoon butter
1 cup white rice
1 cup water
3 inches cinnamon sticks, or
1 teaspoon ground cinnamon
4 cups milk
3 tablespoons brown sugar
1/3 cup raisins
1 teaspoon vanilla
cream
honey

Steps:

  • Peel and chop apple.
  • Rub butter over bottom and sides of a 3 quart saucepan.
  • Place rice, water, and cinnamon into the saucepan and bring to a boil.
  • Cover and simmer for 10-15 minute or until water has been absorbed.
  • Add milk to saucepan. Heat and stir until simmering but not boiling.
  • Add brown sugar, chopped apple, and raisins and stir gently.
  • Cover pan and allow porridge to simmer for about 45 minute As it cooks, it will thicken. Stir once or twice while it cooks.
  • Turn off heat and remove pan from burner. Remove cinnamon stick and stir in vanilla.
  • Serve warm with cream or honey if desired. Also good saved in fridge and warmed up.
