1-1/2 pounds grilled medium-rare steak, preferably strip, Porterhouse, or hanger
3/4 pound Saga blue cheese
6 crusty rolls, such as Portuguese or country sourdough, split in half lengthwise
1/3 cup Dijon mustard
Kosher salt and freshly ground black pepper, to taste
ROASTED SHALLOTS (recipe follows), roughly chopped
4-1/2 cups loosely packed watercress, washed and dried
18 shallots (about 1 3/4 pounds), unpeeled
1/4 cup extra-virgin olive oil
1 tablespoon kosher salt, plus more to taste
Freshly ground black pepper

Steps:

  • Preheat a broiler. Slice the steak into 1/4-inch thick slices. Slice the cheese into 12 pieces. Set the rolls, cut side-up on a baking sheet and toast under the broiler. Set the tops of the rolls aside.
  • Slather the bottom halves of the rolls with half the mustard and top with the slices of steak, overlapping them slightly. Season with salt and pepper. Cover with 2 slices of cheese. Broil the open-faced sandwiches until the cheese is lightly browned and melted, about 1 minute.
  • Transfer the sandwiches to the work surface. Top each sandwich with an equal portion of the roasted shallots and about 3/4 cup of the watercress. Slather the tops of the rolls with the remaining mustard and cover the sandwiches. Slice the sandwiches in half crosswise. Serve immediately.
  • Preheat the oven to 400 degrees F. In a large bowl, toss the shallots with the oil and salt, and season generously with pepper. Transfer to an aluminum foil-lined baking sheet and spread out in a single layer. Bake until the shallots? skins are somewhat charred and crispy and the flesh is very tender, about 40 minutes. Remove from the oven and allow to cool slightly.
  • Using a knife, slice off the tips of the shallots (the end opposite the root end) and discard. Gently squeeze the shallots from their skins and season with salt and pepper to taste. Serve with roasted beef, chicken, or on steak sandwiches.

1/4 cup plus 2 tablespoons olive oil
3 cloves garlic, smashed
8 (1-inch) thick slices of Italian bread
1 porterhouse steak, about 2 pounds
Salt and freshly ground black pepper
2 vine-ripened tomatoes, diced
3 tablespoons pitted and chopped Nicoise olives
2 tablespoons finely sliced basil
2 tablespoons finely diced red onion
2 tablespoons olive oil
2 tablespoons balsamic vinegar
Salt and freshly ground pepper
Arugula
Toasted Italian bread
Sliced steak
Tomato-Olive Relish
3 tablespoons olive oil
1 large red onion, thinly sliced
1 large red bell pepper, finely diced
1 large yellow bell pepper, finely diced
2 cloves garlic, finely chopped
6 large Yukon Gold potatoes, skin on, parboiled and diced
Salt and freshly ground pepper
1/4 cup finely chopped fresh parsley

Steps:

  • For the Steak: Mix together 1/4 cup of olive oil and the garlic and let rest for 30 minutes. Preheat broiler. Brush both sides of the bread with the garlic oil, place on a baking sheet and broil for 1 to 2 minutes on each side, until lightly golden brown. Heat grill pan over high heat until smoking. Brush steak on both sides with the remaining 2 tablespoons of olive oil and season with salt and pepper to taste. Grill for 4 to 5 minutes until golden brown on 1 side, turn over, reduce heat to medium and continue cooking to medium-rare doneness, 5 to 6 minutes. Remove from heat, let rest 10 minutes and slice into 1/4-inch thick slices.
  • For the Tomato-Black Olive Relish: Combine all ingredients in a bowl.
  • To assemble: Place arugula on 4 slices of toast. Top with several slices of steak and a large spoonful of relish. Top with the remaining bread slices.
  • Skillet Fries: Heat olive oil in a medium cast iron skillet over medium heat. Add onions and cook until soft. Add peppers and garlic and cook for 3 to 4 minutes. Add potatoes and cook until golden brown, season with salt and pepper.

1 tablespoon garlic, granulated
1 tablespoon black pepper, fresh cracked
2 tablespoon Worchester sauce
2 tablespoons olive oil
2 cups yellow onions, sliced thin
2 cups red bell peppers, julienned
1 pound Italian sausage, links in casing, hot preferred
3 tablespoons garlic, minced
1/2 cup red wine
1/2 cup chicken stock
1 tablespoon paprika
1 teaspoon celery salt
1 tablespoon chili powder
1 large Sourdough loaf, 18 inches
1 tablespoon Salt
6 slices Provolone cheese
3/4 cup Hot Pickled Veggies, recipe follows
10 cups water
1/2 cup garlic cloves, cut in quarters, divided into 1/4 cup portions
2 tablespoons salt
1 teaspoon peppercorns
1/2 cup baby carrots, cut in half
1/2 cup cauliflower florets
1/2 cup celery, cut in 1-inch pieces
1/2 cup Anaheim pepper, julienned
1/4 red bell pepper, julienned
1/4 red onion, julienned
1/4 cup extra virgin olive oil
1/2 teaspoon red chili flakes
1/2 teaspoon fresh-cracked black pepper
1/2 teaspoon salt
1/2 teaspoon sugar
1 1/4 cup red wine vinegar
1 cup Spanish olive, large, diced
1/2 cup black olives, seeded, diced
1/4 cup pepperoncinis, stems, seeds removed, diced

Steps:

  • Rub tri tip with salt, granulated garlic, pepper and Worchester. Let sit for 20 to 30 minutes then grill until medium rare.
  • In a medium saute pan over medium high heat, heat olive oil, add onions, peppers, and sausage. Cook for 10 minutes or until onions are translucent. Add garlic, cook for 2 minutes, then deglaze with wine and chicken stock. Simmer, and add paprika, celery salt, and chili powder.
  • Cut bread in half length ways, remove some of bread from center, and toast lightly.
  • After tri tip has been cooked, slice on a bias as thin as possible.
  • Place cooked onion and pepper mixture on bottom piece of bread, slice Italian sausage into 6 slices per link. Add all sausage slices to onion mixture on bread, add sliced tri tip, top with Provolone cheese and add Hot Pickled Veggies. Top with top crust of bread and slice into 2 inch slices
  • In a large pot of boiling water, blanch vegetables. Add half of the garlic and the salt and peppercorns. Start with Carrot, boil 30 seconds, add in Cauliflower, boil 30 seconds, add celery boil 15 seconds, then add Anaheim peppers, bell peppers and red onion time 15 seconds more. Immediately remove all from water and immediately put in ice bath. Discard peppercorns and garlic.
  • In a large jar, add the uncooked garlic, olive oil, red pepper flakes, cracked pepper, salt, sugar and one cup of the vinegar. Chop the cooled blanched vegetables into dice. In a bowl combine the olives, pepperoncinis and the diced vegetables. Add the mix to the jar with the seasonings, cap and shake to combine seasonings into mix. Top with additional red wine vinegar to cover mix if necessary. Refrigerate 24 hours. Will keep for 2-3 weeks under refrigeration.

4 hard rolls, split
½ cup mayonnaise
3 cloves garlic, minced
1 tablespoon Parmesan cheese
3 tablespoons olive oil
2 pounds round steak, thinly sliced
1 large onion, sliced and quartered
1 pinch coarse sea salt
½ teaspoon Worcestershire sauce
⅛ teaspoon liquid smoke
8 (1 ounce) slices provolone cheese
½ teaspoon Italian seasoning

Steps:

  • Preheat an oven to 500 degrees F (260 degrees C). Split the rolls open and toast them on a baking sheet in the oven while it is preheating. Mix together the mayonnaise, garlic, and Parmesan cheese in a small bowl. Refrigerate until ready to use. Remove the rolls from the oven when toasted as desired.
  • Heat olive oil in a large skillet over medium-high heat. Carefully place the sliced steak and onions in the pan and season with sea salt, Worcestershire sauce, and liquid smoke. Cook and stir until the steak is browned and the onion is tender, about 10 minutes.
  • Generously spread the prepared garlic-Parmesan mayonnaise on both halves of the toasted rolls. Divide the steak and onion mixture evenly among the bottom halves of the rolls, piling them high. Top each with 2 slices provolone cheese and sprinkle with Italian seasoning. Place the tops on the sandwiches.

2 tablespoons canola oil
2 medium onions, diced
2 tablespoons yellow mustard
Pinch salt
1/3 cup mayonnaise
3 tablespoons ketchup
1 tablespoon yellow mustard
1 tablespoon hot sauce
1/2 teaspoon garlic powder
1/2 teaspoon paprika

Steps:

  • Caramelized Onions: Heat the canola oil in a large skillet over medium heat. Add the onions and cook until soft and lightly caramelized about 15 minutes. Add the mustard and a pinch of salt and cook for another 2 minutes. Remove the onions from the pan to a small bowl and set aside.
  • Special Sauce: In a medium bowl combine all the ingredients and whisk until smooth.
  • Burgers: Preheat the broiler to low.
  • Form the ground meat mixture into 6 equal patties. Do not over handle or compress the patties, keep them loose. This will help create a tender burger. Over mixing and compacting will result in a tough heavy burger.
  • Heat the canola oil a large heavy-bottomed skillet over medium-high heat.
  • In a small bowl combine the salt, pepper and garlic powder and season the burgers generously with the mixture. Put the patties in the skillet and cook for 4 minutes. Flip and let cook for 1 minute, then top each patty with a piece of cheese. Cook for another 2 minutes until the cheese is melted and the burgers are medium.
  • While the burgers are cooking, lightly brush the buns with melted butter and put them on a sheet pan. Broil until lightly toasted, about 2 minutes.
  • To assemble, split the buns and spread each half with about a tablespoon of the special sauce. Put the burgers on the bottom half of each bun, top with caramelized onions, tomato and lettuce. Cover with the top half of the bun and serve.

CHICAGO STEAKHOUSE SANDWICH

One 20-ounce boneless rib eye steak
Kosher salt and freshly ground black pepper
3 tablespoons olive oil
4 cloves garlic, thinly sliced
1/2 teaspoon crushed red pepper
Three 10-ounce bags fresh spinach, washed and stemmed
Kosher salt and freshly ground black pepper
2 tablespoons crumbled blue cheese
1/2 cup buttermilk
1 cup mayonnaise
1/4 teaspoon Dijon mustard
1/2 teaspoon minced fresh dill
1/8 teaspoon ground black pepper
1 fresh loaf crispy French bread, cut into 8-inch segments, buttered and grilled

Steps:

  • For the steak: Heat a cast-iron skillet over high heat until very hot. Sprinkle both sides of the steak with salt and pepper. Place the steak in the hot skillet, reduce the heat to medium and sear until well browned, about 4 minutes. Flip the steak and cook until medium/medium-rare, about 6 more minutes. Set aside, loosely covered with foil, and let rest before slicing.
  • For the sauteed garlicky spinach: Heat the oil and sliced garlic in a Dutch oven over medium heat, stirring occasionally until the garlic is golden brown and crispy. Remove the garlic and set aside on a paper towel to drain. Add the crushed red pepper and cook until fragrant, about 30 seconds. Add the spinach and stir to combine with the oil. Cover and let cook over medium-high heat until the spinach is wilted but still bright in color, about 4 minutes. Season with salt and pepper and toss with the garlic chips.
  • For the buttermilk blue cheese dressing: Mix the mayonnaise, buttermilk, blue cheese, dill, mustard and pepper together in a bowl and set aside. Adjust the seasoning if necessary.
  • For the sandwich build: Slice the rested steak against the grain into 1/4-inch slices, removing any non-rendered fat. Place the steak slices on the bottom bun, top with the spinach and schmear the top bun with buttermilk blue cheese dressing.
