I like to use a lattice top crust because the red apples show through the crust and make a beautiful presentation. At Christmas I sprinkle green decorating sugar on the lattice crust (any other time plain sugar).

4-5 cups granny smith apples, peeled, cored and sliced no thinner than 1/4-inch
1 cup sugar
9 oz package Cinnamon Imperials (red hots)
1/4 teaspoon almond extract
2 tablespoon butter
1/2 cup water
2 teaspoons tapioca
1 cup flour
1/2 cup roasted pecans
1/2 teaspoon salt
1 1/2 sticks butter, cold and cut into squares
1/2 teaspoon sugar
1/4 teaspoon freshly ground nutmeg
3-4 tablespoons ice cold water

Steps:

  • Preheat oven to 350 degrees F.
  • Filling: Place apples, red hots, sugar and water in large saucepan. Bring apple mixture to a boil until red hots and sugar are dissolved (apples should not be completely cooked). Take off heat. Add almond extract and tapioca to mixture. Let cool till room temperature.
  • Crust: Using food processor, pulse flour, pecans, salt, butter and sugar together. When you can't see large butter chunks, add water one tablespoon at a time. When dough forms, wrap in plastic wrap and place in refrigerator for 1/2 hour to 1 hour. Roll out on lightly floured board. Place bottom crust in buttered pie pan. Spoon room temperature apple mixture into bottom pie crust. Roll out remaining crust.
  • Bake for 45 minutes.
  • Serve with whipped cream, vanilla ice cream or all by itself.

2 1/2 cups all-purpose flour, plus additional for rolling
1 tablespoon sugar
3/4 teaspoon salt
8 ounces (2 sticks) unsalted butter, cut into 1/2-inch cubes
1/4 cup ice water, plus more if needed
3 Granny Smith apples, peeled and thinly sliced
3 Macintosh apples, peeled and thinly sliced
2/3 cup sugar
2 tablespoons cornstarch
2 tablespoons crystallized ginger, finely chopped
1 teaspoon ground cinnamon
1 tablespoon fresh lemon juice
1 teaspoon vanilla bean paste
Pinch kosher salt
1 large egg
Vanilla ice cream, for serving

Steps:

  • For the crust: Put the flour, sugar and salt into the bowl of a food processor fitted with the pastry blade and pulse a few times to combine. Add the butter and pulse a few times until the mixture resembles fine gravel. Add 1/4 cup ice water a few tablespoons at a time until the dough comes together and forms a ball. Remove from the food processor, divide in two and form each piece into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes or until ready to use.
  • For the filling: In a large bowl, combine the apples, sugar, cornstarch, crystallized ginger, cinnamon, lemon juice, vanilla bean paste and salt.
  • Preheat the oven to 425 degrees F and remove one of the disks of dough from the refrigerator. If necessary, leave to soften for 10 minutes or so. On a floured surface, roll out the disk into a 12-inch round about 1/8-inch thick. Transfer to a 9-inch pie dish and gently press into place, eliminating any air pockets. Trim the dough overhang to 1/2 inch.
  • On a floured surface, roll the second disk into a 12-inch round about 1/8-inch thick. Transfer the apple filling to the dough-lined dish. On top of the filling, add the second crust, allowing each to overhang by 1/2 inch. Fold the top crust edges over the overhang of the bottom crust and crimp the edges to seal. Cut six slits into the top crust.
  • Beat the egg with 1 to 2 tablespoons of water. Using a pastry brush, lightly paint the crust with the egg. Using aluminum foil, make a "collar" around the edges of the pie to prevent it from browning too quickly.
  • Bake 15 minutes. Reduce the oven temperature to 350 degrees F and continue baking until the crust is golden brown and the filling is bubbly, about 1 hour. (Remove the foil collar for the last 10 to 15 minutes.)
  • Transfer the pie to a rack and cool completely.
  • Serve with a scoop of vanilla ice cream.

3 tablespoons sugar
1/2 teaspoon salt
1 3/4 cups cold butter
2/3 cup cold water
1/3 cup sugar
1/4 cup Gold Medal™ all-purpose flour
1/4 cup finely chopped crystallized ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
9 cups thinly sliced peeled tart apples (8 medium)
1/4 cup butter or margarine, cut into small pieces
1 egg, beaten
1 tablespoon sugar

Steps:

  • In medium bowl, mix 3 1/4 cups flour, 3 tablespoons sugar and 1/2 teaspoon salt. Cut in 1 3/4 cups butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry leaves side of bowl (2 to 3 teaspoons more water can be added if necessary).
  • On lightly floured surface, gather pastry into a ball. Divide dough in half; shape into 2 flattened rounds. Wrap in plastic wrap; refrigerate about 45 minutes or until dough is firm and cold, yet pliable.
  • Heat oven to 425°F. On lightly floured surface, roll 1 pastry round, using floured rolling pin, into round 3 inches larger than upside-down 9 1/2-inch deep-dish glass pie plate. Fold pastry into quarters; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side and being careful not to stretch pastry. Refrigerate until ready to fill.
  • In large bowl, mix 1/3 cup sugar, 1/4 cup flour, the ginger, cinnamon and 1/4 teaspoon salt. Stir in apples until coated. Spoon filling into crust-lined plate. Dot with 1/4 cup butter. Trim overhanging edge of pastry 1/2 inch from rim of plate.
  • Roll remaining pastry into 11-inch round. Fold pastry into quarters. Unfold pastry over filling; trim overhanging edge 1 inch from rim of plate. Fold and roll top edge under lower edge, pressing rim to seal; flute as desired. Brush with egg. Sprinkle with 1 tablespoon sugar. Cut slits in top crust.
  • Bake 55 to 60 minutes or until crust is brown and apples are tender. Serve warm or cool.

So named because I won a blue ribbon at the county fair with this recipe. I use recipe #13619 for the double pie crust. However, I especially love it with Recipe #109287. Prep time depends on if you are peeling & slicing the apples by hand or not.

8 cups peeled & cored thinly sliced apples
1 tablespoon lemon juice
3/4 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons flour
1 1/2 tablespoons cornstarch
1/8 teaspoon salt
2 tablespoons butter
1 (9 inch) double crust pie crusts, unbaked

Steps:

  • Coat apple slices with lemon juice.
  • Combine sugar, spices, flour, cornstarch and salt in a large zip-loc bag.
  • Add apples and shake bag until thoroughly coated.
  • Immediately, put coated apples into prepared pie crust.
  • Dot with butter.
  • Cover with top crust.
  • Crimp edges to seal and cut vent holes into crust.
  • Brush with milk and sprinkle with cinnamon sugar.
  • Bake at 425°F for 15 minutes, reduce temperature to 350°F and continue baking for 45 minutes or until golden brown.

1 cup butter
⅔ cup white sugar
1 egg yolk
⅓ cup apple butter
2 ⅓ cups all-purpose flour
1 teaspoon ground cinnamon
½ teaspoon apple pie spice
½ teaspoon vanilla extract

Steps:

  • In a large mixing bowl, beat butter and sugar at medium speed until fluffy. Beat in egg yolk and apple butter. Add flour, cinnamon, apple pie spice, and vanilla. Beat at low speed until well blended.
  • Divide dough in half. Shape each half into a 6-inch disc on waxed paper. Refrigerate for 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Invert one disc of dough into ungreased 9-inch round pie plate. Press dough into plate with lightly floured hands, covering plate completely. Flute edges using the handle of a wooden spoon. Deeply score into 8 wedges. Prick surface using tines of fork. Repeat steps with remaining disc of dough and another pie plate.
  • Bake 35 minutes, or until golden brown. Remove to wire rack. Cool completely and cut into wedges.

WALNUT LAYER:
3/4 cup ground walnuts
2 tablespoons brown sugar
