Recipe comes from the new cookbook by weight watchers. 2 points per serving serve with salad and garlic bread.

1/4 lb Italian turkey sausage, cut into 1/4 slices
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 onion, sliced
1/4 cup chicken broth
2 tablespoons minced garlic
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano leaves

Steps:

  • Spray large skillet with Pam cooking spray and heat skillet.
  • Add sausage and stir frequently until no longer pink 5-6 minutes.
  • Add bell peppers,onion,broth, garlic, pepper flakes and oregano. Saute all together for 5 minutes or until liquid evaporates.
  • Reduce heat and simmer covered 5 minutes more.

1 pkg alfresco chicken sausage- italian style
1 medium red bell pepper
1 medium yellow bell pepper
1 medium sweet onion
1 can(s) tomatoes, canned italian style with juice
2 clove garlic

Steps:

  • 1. Spray a large non-stick pan with olive oil or Pam. Remove sausage from casing and add to pan. Brown sausage and break up into pieces using a wooden spoon. When cooked through, remove from pan and set aside.
  • 2. While sausage is cooking, slice peppers and onion. Using a large knife, crush garlic.
  • 3. Add peppers, onion and garlic to pan and cook until tender crisp.
  • 4. Return sausage to pan and add un-drained tomatoes.
  • 5. Bring to a simmer, cover and cook until veggies are done. Uncover and cook until liquid has reduced to half or more, depending on how much liquid you prefer.

1/2 pound uncooked turkey sausage, Italian-style, casings removed
2 teaspoons olive oil, extra-virgin
2 medium yellow pepper, cut into 2-inch long thin strips
1 medium uncooked onion, thinly sliced
1/2 cup red wine
1 1/2 tablespoons garlic, minced
28 ounces canned crushed tomatoes, fire-roasted recommended
1/2 teaspoon crushed red pepper flakes, or less to taste
1/4 teaspoon table salt
8 ounces uncooked whole-wheat pasta, fusilli
1/3 cup basil, fresh, chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Meanwhile, to make sauce, in a large nonstick skillet over medium-high heat, cook sausage, stirring and breaking up meat with back of a wooden spoon, until cooked through, about 3 to 5 minutes; remove to a plate. Heat oil in same skillet. Add yellow peppers and onion; cook, stirring frequently, until vegetables are lightly colored and crisp-tender, about 5 minutes. Add wine and garlic; cook until most of liquid evaporates, about 1 minute. Add tomatoes, crushed red pepper, salt and browned sausage; bring to a boil. Reduce heat to medium-low, cover and simmer until vegetables are tender and sauce is heated through, about 10 minutes. 1/8 teaspoon black pepper, freshly ground
1/4 teaspoon crushed red pepper flakes
14 1/2 ounces diced tomatoes
3 cups cooked whole wheat penne
6 tablespoons grated parmesan cheese

Steps:

  • Coat a large nonstick skillet with cooking spray and set pan over medium high heat. Add green peppers, garlic, onion, and mushrooms. Cook, stirring frequently, until almost tender, about 7-8 minutes.
  • Remove turkey from casings; add to skillet and cook until no longer pink. Add spices and tomatoes. Simmer about 5 minutes.
  • Serve over cooked pasta. Sprinkle with cheese. Yields about 1 1/2 cups per serving.
