1 1/2 pounds skinless, boneless chicken thighs
2 teaspoons canola oil
1/2 cup frozen cut okra
1/2 teaspoon chopped fresh thyme
1 (14.5 ounce) can stewed tomatoes, undrained and chopped

Steps:

  • 1. Rub Creole seasoning evenly over chicken.. 2. Heat oil in a large nonstick skillet over medium-high heat. Add chicken; cook 2 minutes. Turn chicken over: Stir in okra, thyme, and tomatoes. Bring to a boil; cover, reduce heat, and simmer 10 minutes. Uncover and cook 2 minutes or until liquid is reduced by half. Serving size: about 2 chicken thighs and 1/2 cup tomato mixture. 2 Tbsp Fresh lemon juice
1.5 Tbsp Capers
3 cup(s) Uncooked string beans steamed or roasted

Steps:

  • Coat a 12-inch nonstick skillet with cooking spray; set over medium-high heat.
  • In a small bowl, combine flour with pepper; sprinkle over chicken. Brown chicken in a single layer in prepared skillet until golden on bottom, about 6 minutes; flip and brown on second side, about 4 minutes more. Remove chicken from skillet; set aside. (If necessary, brown chicken in two batches.)
  • Pour broth into skillet and scrape up any browned bits with a wooden spoon. Return chicken to skillet, cover and reduce heat to low; simmer until heated through, about 3 minutes. Stir in lemon juice and capers; heat for 30 seconds.

1-1/2 cups uncooked converted rice (not instant)
2 medium tomatoes, chopped
1 medium green pepper, chopped
2 tablespoons minced fresh parsley
3-1/4 cups reduced-sodium chicken broth
1-1/2 teaspoons plus 2 tablespoons Cajun seasoning, divided
8 bone-in chicken thighs (about 3 pounds), skin removed
1 tablespoon canola oil
