I love chicken fried steak, but my diet didn't actually cater to it. I found this recipe on weight watchers - it's a pretty good replacement. If doing WW, its 4 points per serving.

4 lean cube steaks
1/2 cup fat-free buttermilk
1 cup flour (reserve 1 Tablespoon)
1 teaspoon salt
1 teaspoon McCormick's Montreal Brand steak seasoning
2 tablespoons oil
2 cups skim milk

Steps:

  • Dip steaks in buttermilk. Combine flour, salt, and steak seasoning (remember to keep 1 tablespoon set aside). Dip steaks in flour mixture.
  • Set steaks on wax paper, let set for 20 minutes.
  • Heat 1 tablespoons oil in skillet, add steaks, cook until both sides are golden brown. Remove from pan and keep warm.
  • Combine milk and reserved TBSP of flour in bowl until well mixed.
  • Stirring constantly, add milk mixture to skillet. Once added, bring mixture to a boil.
  • Lower heat and simmer until gravy thickens.
  • Serve over steaks.

It looks like fried chicken but it's actually steak coated with seasoned flour and bread crumbs. It's pan-fried until crisp, then drizzled with a rich onion gravy.

12 oz Uncooked lean beef round
0.25 cup(s) All-purpose flour
0.75 tsp(s) Table salt divided
0.25 pinch Black pepper divided
1.25 cup(s) Fat free skim milk divided
1 egg white(s), large Egg white(s)
1 tbsp(s) Dried plain breadcrumbs coarse-variety
2 slice(s) Uncooked reduced fat bacon
1 spray(s) Cooking spray
0.5 cup(s) Uncooked onion(s) chopped
0.125 tsp(s) Hot pepper sauce optional

Steps:

  • Place steak between 2 sheets of waxed paper and pound to 1/2-inch thickness; slice steak into 4 equal pieces.
  • Combine flour, 1/2 teaspoon of salt and 1/8 teaspoon of pepper on a plate. Combine 1/4 cup of milk and egg white in a shallow bowl. Place bread crumbs on another plate.
  • Dip a piece of steak in flour mixture; turn to coat both sides. Next, dip steak in milk mixture; turn to coat both sides. Lastly, dip steak in bread crumbs; turn to coat both sides and set aside. Repeat with remaining pieces of steak; reserve 1 tablespoon of leftover flour.
  • In a large nonstick skillet, over medium heat, brown bacon, flipping once, about 5 minutes; remove from skillet and set aside. Add steaks to same skillet and place over medium-high heat. Cook about 3 to 4 minutes per side for medium, or longer to desired degree of doneness. Remove steaks and set aside.
  • Off heat, coat skillet with cooking spray and set over medium heat. When hot, add onion; cook until tender, stirring occasionally, about 4 minutes. Add reserved tablespoon of flour; cook, stirring constantly, for 1 minute. Pour in remaining cup of milk, scraping up any browned bits with a wooden spoon. Reduce heat to medium-low; add remaining 1/4 teaspoon of salt, 1/8 teaspoon of pepper and hot sauce. Crumble bacon; stir into skillet. Increase heat to medium and cook until gravy is thickened, stirring constantly, about 1 to 3 minutes. Spoon gravy over steaks and serve immediately. Yields about 3 ounces of steak and 1/4 cup of gravy per serving.

4 slices 2% singles reduced-fat American cheese (or other brand)

  • In a medium nonstick skillet, heat oil over medium-high heat.

4 small boneless skinless chicken breasts (pounded to about 1/2-inch thick)
black pepper
38 saltine crackers, crushed (1 sleeve)
1 cup all-purpose flour
1 teaspoon seasoning salt
1 pinch cayenne pepper (optional or adjust to heat level)
1/2 teaspoon garlic powder (garlic lovers use 1 teaspoon)
1/2 teaspoon baking powder
3/4 cup milk
2 large eggs
1 1/2 cups vegetable oil
3 -4 cups half-and-half cream (use 4 cups for a thinner gravy)
1/4 cup all-purpose flour
1 teaspoon seasoning salt or 1/2 teaspoon white salt
1 teaspoon black pepper (can reduce if desired)

Steps:

  • Season the chicken breasts with black pepper.
  • In a shallow dish combine crushed cracker crumbs with flour 1 teaspoon seasoned salt, 1/2 teaspoon black pepper, cayenne pepper (if using) and baking powder.
  • In another shallow dish whisk together eggs with 3/4 milk.
  • Dredge the chicken breasts in the cracker mixture then dip in the egg/milk mixture, then dredge AGAIN in the cracker mixture.
  • Pour the oil into a large skillet and heat to 360 degrees F.
  • Fry the breasts in hot oil for about 3-4 minutes on each side or until golden brown; remove to a wire rack and cover lightly with foil.
  • Carefully drain oil but reserve the browned bits in the bottom of the skillet along with a couple tablespoons of the oil.
  • In a bowl mix together 4 cups half and half cream, 1/4 cup flour 1 teaspoon seasoned salt and 1 teaspoon black pepper; whisk until combined, then add to the reserved drippings in the skillet, cook whisking constantly over medium-high heat for about 10 minutes or until thickened.
  • Serve the creamed gravy with the breasts.
