When you need a quick, bright Mexican fix, here's a great go-to recipe. These nachos can be made, start to finish, in just 11 minutes. It's the perfect snack or appetizer for one, but it can be easily scaled up if you want to serve them to a crowd. The tortilla chips are topped with roast beef that's been seasoned with ground cumin and dried oregano. Sprinkle with Mexican-style cheese, then simply pop the chips into the microwave to melt the cheese and warm the beef. All that's left to do is top with jalapenos, store-bought salsa, and a touch of fresh cilantro-with no pots or pans to clean, it doesn't get much easier than that.

7 chip(s) Tortilla chips
2 oz Deli style roast beef slice(s) cut into strips
0.25 tsp Ground cumin
0.25 tsp Dried oregano
2 Tbsp Shredded reduced-fat Mexican-style cheese
2 Tbsp Pickled jalapeno peppers sliced (or to taste; optional)
2.5 Tbsp Fat free salsa fresh, refrigerated variety (drained if very liquidy)

Steps:

  • Arrange tortilla chips in a single layer on a microwave-safe plate; microwave 30 seconds.
  • Meanwhile, toss roast beef with cumin and oregano. Evenly divide mixture over warm chips and sprinkle with cheese; microwave until beef is hot and cheese melts, 30 seconds (or bake in oven).
  • Top with jalapenos and salsa; garnish with cilantro.

Nachos just might be the king of all party foods! People flip for them. Normally fat-laden, these layered and baked nachos use all skinny ingredients. I'm using reduced-fat ingredients such as tortilla chips, lean taco meat, cheese, and topping with my yummy, skinny ranch dressing. These are fantastic! One skinny serving has 207 calories and 5 grams fat.

1 pound lean ground beef, (I used 96%)
1 cup onions, (chopped)
1 tablespoon garlic, (minced)
1 (1 oz.) package taco seasonings mix, (I like Lawry's)
⅔ cup water
7 ounces reduced-fat tortilla chips, ((about 100 chips), see shopping tips)
1 (15 oz.) can black beans, (rinsed and drained)
1 (4 oz.) can Ortega fire-roasted diced green chiles, (see shopping tips)
1¼ cups salsa, (I like Pace Chunky Salsa, medium-hot)
1½ cups (6 ounces) reduced-fat cheddar cheese, (shredded)
6 tablespoons The BEST Skinny Ranch Dressing (3 ingredients)
Tabasco Sauce, (optional)

Steps:

  • Preheat oven to 350 degrees.
  • In a large pan or skillet, cook ground beef with onions and garlic until meat is browned. Stir often. Pour cooked meat into a colander in the sink and drain off all excess fat. Add meat mixture back to the pan.
  • Add taco seasoning, water, and mix well. Bring to a boil, turn the heat down to simmer, and cook for 5 minutes.
  • Place the tortilla chips evenly on a large ovenproof serving plate or baking sheet coated with a little cooking spray.
  • Top the chips with ground beef mixture. Sprinkle beans evenly over the meat. Next, spoon over beans the fire-roasted chilies, and then salsa. Sprinkle the cheese all over the top.
  • At this point, you can place it in the fridge until you're ready to serve it.
  • When ready to serve, bake in preheated 350 degrees oven for 15 - 20 minutes until the cheese is melted and the nachos are hot.
  • Dollop with ranch dressing or sour cream and add a bit more salsa. If you really like food spicy, sprinkle a bit of Tabasco sauce over the top!
  • Serve at once.

1/2 cup(s) Scallions
1/2 cup(s) Cheese, cheddar, shredded, low-fat
3/4 cup(s) Beans, black, refried, canned
3/4 cup(s) Canned diced tomatoes
1/2 tsp Salt, table
1/2 tsp Dried oregano
6 oz Beef, ground, lean, 7% fat, raw
2 spray(s) Cooking spray
32 item(s) Tortilla chips, baked, low-fat

Steps:

  • 1. Preheat broiler to high. Arrange tortilla chips on a nonstick baking sheet in a single layer but close together; set aside. 2. Coat a large nonstick skillet with cooking spray; heat over a medium heat. Add beef and cook until browned, breaking up meat as it cooks, about 3 to 4 minutes. Season with oregano and salt; stir in tomatoes and beans. Cook until heated through, stirring occasionally, about 3 to 5 minutes. 3. Spoon beef mixture over chips; sprinkle with cheese. Broil until cheese melts, about 30 seconds to 1 minute. Remove from broiler; sprinkle with scallions and jalapenos. Yields 4 nachos per serving. Notes If you like things really spicy, pile on the jalapenos and consider pickled jalapenos for extra zing. Garnish with fresh cilantro and a drizzle of fresh lime juice if desired.
