15 Minute Wonton Soup with flavorful lemon ginger broth and a handful of vibrant greens. A fast, easy weeknight dinner!

Number Of Ingredients 8

1 leek, white parts, thinly sliced (or sub 1 shallot or ½ cup onion)
4 slices ginger (the size of a quarter, leave peels on- or 1 tablespoon ginger paste)
1 tablespoon olive oil
4 cups chicken broth ( or veggie broth)
10-14 wontons ( chicken, shrimp or vegetarian)
salt and lemon juice to taste
a couple handful of chopped greens- baby spinach, arugula, bok choy, chopped kale
garnish options: scallions, cilantro, sesame seeds, chili flakes or sriracha

Steps:

  • In a medium pot, saute the leeks and ginger in oil, over medium heat, until fragrant, about 2 minutes.
  • Add the broth, cover, and bring to a boil.
  • Add the wontons and simmer according to directions on the package ( 3-5 minutes- depending on size) They normally float when cooked through.
  • Taste the broth and add salt and a squeeze of lemon if you like. I like mine quite lemony, but season to your own taste.
  • Drop in the greens, cooking until wilted. Spinach will take 45 seconds, kale will take longer.
  • Divide among two bowls and sprinkle with any of the garnishes.

A flavorful soup filled with vegetables, wontons and shrimp.

8 ounces ground pork
4 green onions (finely chopped)
1 tablespoon soy sauce
1 teaspoon sesame oil
1 teaspoon grated fresh ginger
1 egg white
1 ½ teaspoons cornstarch
30 wonton wrappers
4 cups mixed vegetables (broccoli, carrots, bok choy and celery)
8 cups chicken broth
2 tablespoons soy sauce
2 teaspoons sesame oil
2 teaspoons fresh ginger
⅓ cup fresh basil leaves (sliced)
3 tablespoons green onions
1 clove garlic (minced)
24 medium shrimp (defrosted and tail removed)

Steps:

  • In a large bowl combine all filling ingredients.
  • Place 1 teaspoon filling in the center of a wonton wrapper. Moisten the edges and fold in half to create a triangle. Moisten the two longer tips and bring together. Press together.
  • Dip the bottom in flour and place on a parchment lined pan. Repeat with remaining wontons.
  • Bring broth to a boil. Add vegetables, soy sauce, sesame oil, ginger, carrots and celery. Let boil 2 minutes.
  • Add in wontons, bok choy and broccoli and let boil about 5 minutes. Add in shrimp in the last 3 minutes. Remove from heat, add remaining ingredients and serve immediately.

Nothing says comfort food like a bowl of chicken noodle soup. We put a super easy spin on the classic recipe using only a few frozen food items and pantry staples. Plus, it comes together in just 15 minutes!

4 cups chicken stock
1 cup frozen mixed vegetable, such as peas and carrots
20 frozen chicken and vegetable wontons
½ teaspoon kosher salt
¼ teaspoon ground black pepper
dried thyme, optional

Steps:

  • In a large pot, bring the chicken stock to a boil over high heat.
  • Reduce the heat to medium and add the frozen vegetables, chicken wontons, salt, pepper, and dried thyme, if using, and simmer until the wontons are warmed through and float to the surface, 8-10 minutes.
  • Divide the soup among 4 bowls and serve immediately. The soup will keep in an airtight container in the refrigerator for up to 3 days.

Number Of Ingredients 10

2 tablespoons vegetable oil
2 cloves garlic, finely grated with a rasp
1 tablespoon fresh ginger, grated with a rasp
3 scallions, thinly sliced, greens and whites separated
4 ounces shiitake mushrooms, sliced
5 cups chicken bone broth or low-sodium chicken broth
4 heads baby bok choy, quartered lengthwise
2 tablespoons soy sauce
One 12-ounce package frozen wontons (about 20)
Kosher salt

Steps:

  • In a medium pot or Dutch oven, heat the vegetable oil over medium heat. Add the garlic, ginger and white parts of the scallions and cook, stirring frequently, until fragrant, 1 to 2 minutes. Add the shiitakes and cook until they begin to soften, another minute.
  • Add the bone broth and bring to a boil. Add the bok choy and simmer, stirring occasionally, until the bok choy is tender, 4 to 5 minutes. Add the soy sauce and stir. Add the wontons and cook until they are cooked through, 2 to 3 minutes. Taste and season if necessary.
  • Ladle into bowls, then top with the scallion greens. Serve immediately.
