Sweet and tangy, delicious Hawaiian chicken. This chicken is sautéed with peppers and pineapple and a tasty Hawaiian inspired sauce for a perfect weeknight meal.

2 pounds boneless skinless chicken breasts (diced)
Salt and Pepper to taste
2 cups diced bell peppers (red, orange, yellow mix)
1 fresh pineapple (diced)
3 cups Cooked white rice
1 Tbs olive oil
3 Tbs Soy Sauce
3 Tbs dark brown sugar
2 Tbs rice vinegar
½ tsp ground ginger
1 Tbsp minced garlic
1/2 cup barbecue sauce
½ cup pineapple juice

Steps:

  • Heat olive oil in a large skillet over medium-high heat.
  • Season chicken with salt and pepper then add to the skillet.
  • Sear outside until a nice golden crust forms.
  • Remove chicken from pan, add in peppers and saute for 3-5 minutes until tender, remove from pan
  • Add sauce ingredients to pan, and bring to a simmer, add chicken back in, and cook on medium-low heat, letting sauce reduce while chicken cooks through.
  • Add peppers and pineapple to pan, and cook a few minutes more, until sauce is thick, sticky, and glossy, and peppers are tender
  • Serve over cooked white rice.

1/2 cup white wine or 1/2 cup sherry wine
1/4 cup wine vinegar
1 teaspoon garlic powder
1/2 cup soy sauce
2 1/2 cups pineapple juice
1/3 cup sugar
1 (16 ounce) can pineapple rings, drained

Steps:

  • Mix sherry or wine, vinegar, garlic powder, soy sauce, pineapple juice, and sugar in a large bowl.
  • Put the chicken breasts into the mixture, refrigerate, and marinate for 24 hours.
  • Grill or broil chicken until cooked through. During the last 2 minutes of grilling, place pineapple rings on top of chicken.
