This is a really funny thing I saw an American friend of mine make. Great for a barbie or party. Wish I'd known about this when I was going to school parties-I could have walked in with my watermelon and got all my mates completely sloshed! Needs to be started a few days-even a week-before you can plan to eat it.

1 large, ripe watermelon--give it a smell and slap to check for ripeness
1 bottle best quality vodka (or even champagne)

Steps:

  • Simply cut a hole in the top of the melon, wide and deep enough to insert a funnel. Pour some of your chosen alcohol into the melon through the funnel, leave to sit for a day and pour in some more. The flesh will absorb the liquid, so pour in some more the next day--basically until it becomes saturated. When ready to serve, slice up into nice big pieces and get all your mates plastered on it!;

2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon sugar
1/2 teaspoon salt
2 tablespoons unsalted butter, softened
3/4 cup warm water
Vegetable oil, for frying

Steps:

  • Using a sieve over a large bowl, sift together flour, baking powder, sugar, and salt. Add the butter and, using your fingertips, work it into the flour mixture to form pea-sized pieces. While stirring with a wooden spoon, slowly add water in a stream, until the flour starts to leave the sides of the bowl. When dough is soft, but not sticky, transfer it to a lightly floured work surface.
  • Knead the dough, divide and roll the dough into small balls the size of golf balls. Cover the dough balls with a damp paper towel, covered by a regular kitchen towel, and let rest for 10 minutes.
  • Knead the dough balls for a second time until smooth and soft to the touch, and let rest, covered again with the 2 towels, about 10 minutes more.
  • Using a rolling pin, roll each dough ball into a 4-inch disk
  • Pour the oil into a wok to a depth of 2 inches. Place the pot over medium heat and heat until a deep-fry thermometer reads 375 degrees F. Working in batches, fry the dough disks, turning once, until golden brown and puffed, about 30 seconds per side. Using a slotted spoon, transfer the bakes to a paper towel-lined plate. Serve with Trinidadian dal, rice, and bhaji, or your favorite stew or casserole.

4 cups watermelon, seeds removed
Simple syrup, to taste
2 tablespoons lemon juice
1 cup Vodka
2 ounces melon liquor
4 lemon twists, for garnish

Steps:

  • In a food processor, puree the watermelon flesh. Pour the pureed watermelon into empty ice cube trays and freeze for at least 4 hours. In a blender combine the frozen watermelon cubes, simple syrup to taste, lemon juice and vodka and blend until smooth. Pour into 4 frozen martini glasses and garnish with a lemon twist.;

1 cup sugar
1/2 cup water
8 cups cubed seedless watermelon
2 tablespoons lemon juice
2 tablespoons vodka

Steps:

  • In a small saucepan, bring sugar and water to a boil. Cook and stir until sugar is dissolved; set aside to cool., In batches, process the watermelon in a food processor for 2-3 minutes or until smooth. Transfer puree to a large bowl; stir in the lemon juice, vodka and sugar syrup. Pour into a 13-in. x 9-in. dish. Freeze for 1 hour or until edges begin to firm; stir. Freeze 2 hours longer or until firm., Process watermelon mixture in batches for 2-3 minutes or until smooth. Serve immediately or transfer to freezer containers and freeze until serving.
