A refreshing drink recipe from Bäco in Los Angeles, made with watermelon, lime, soda water, yogurt, and honey.

Number Of Ingredients 8

1½ cups [210 g] cubed watermelon, cut in 1-in [2.5-cm] cubes
1 generous cup [150 g] ice cubes
1 cup [240 ml] soda water
½ cup [135 g] plain yogurt
¼ cup [60 ml] fresh lime juice
2 Tbsp honey
⅛ tsp white pepper
Pinch of salt

Steps:

  • Blend the watermelon, ice cubes, soda water, yogurt, lime juice, honey, white pepper, and salt in a blender until well combined. Pour into a glass and serve immediately.

LIME COCKTAIL WITH WATERMELON ICE CUBES

2 cups watermelon pieces (no rind, no seeds)
1 tablespoon honey
1 ounce fresh lime juice
3/4 cup sugar
4 ounces neutral-flavored vodka
2 ounces fresh lime juice
12 to 14 fresh mint leaves, torn
Club soda, for topping cocktail

Steps:

  • For the watermelon ice cubes: Puree the watermelon, honey and lime juice in a blender until smooth. Pour into a square ice cube tray. Freeze until firm, 3 to 4 hours.
  • For the simple syrup: Combine the sugar and 3/4 cup water in a small saucepan. Bring to a simmer and shut off the heat. Stir until the sugar dissolves. Cool.
  • For the cocktails: Mix the vodka, lime juice, mint leaves and 2 ounces simple syrup in a pitcher filled with ice. Top with club soda. Put 3 watermelon cubes in each of 2 highball glasses and pour the cocktail over.

WATERMELON-LIME COOLER

While coolers are often stretched with something sparkling, this rose-hued drink swaps in a pour of fresh watermelon juice. The inherent sweetness - and deep pink color palette - of both the juice and the Lillet Rosé is tempered with an ounce of gin and a splash of lime's bright acidity. (If you can't find Lillet Rosé, use Lillet Blanc or even a blanc vermouth in a pinch.)

1 ounce gin

  • In an ice-filled highball glass, combine the Lillet Rosé, red bitter, gin and lime juice. Top with the watermelon juice and stir gently to combine. Serve immediately.

8 cups chopped seedless watermelon (about 6 pounds)
1/2 cup freshly squeezed lime juice (about 4 limes)
2 tablespoons sugar, plus 2 tablespoons more, if needed
1/2 cup vodka (optional)
Mint leaves

Steps:

  • Working in batches, puree in blender watermelon with lime juice and sugar until smooth. Add more sugar, if needed.
  • Transfer puree to a pitcher; add vodka, if desired. Cover; chill until ready to serve.
  • Stir; pour into tumblers, over ice. Garnish with mint.
