WATERMELON SORBET



Watermelon Sorbet image

1 cup sugar
1/2 cup corn syrup
4 tablespoons lemon juice
3 tablespoons grenadine
3 fresh mint leaves
1 (3-pound) seedless watermelon

Steps:

  • In a small saucepan, bring sugar, syrup, lemon juice, grenadine and mint leaves to a boil dissolving the sugar granules. Let cool slightly. Cut the rind off the watermelon and cut into chunks. Puree half of the chopped watermelon in a blender. Strain through a fine mesh strainer into a large glass bowl. Repeat with remaining watermelon. Add slightly cooled syrup mixture and mix well to incorporate. Place sorbet into a 2-quart plastic container and freeze for 3 to 4 hours.

½ cup water
¼ cup lemon juice
3 cups cubed seeded watermelon

Steps:

  • Combine sugar, water, and lemon juice in a saucepan over medium heat; cook and stir until sugar is dissolved, about 5 minutes. Remove from heat and refrigerate until cooled, about 30 minutes.
  • Blend watermelon in a blender or food processor until pureed. Stir pureed watermelon into sugar mixture. Transfer watermelon mixture to an ice cream maker and freeze according to manufacturer's instructions.

a 3 1/2-to 4-pound piece of watermelon (about a quarter of a large watermelon that has been halved lengthwise and crosswise)
1 1/2 ounces fine-quality bittersweet chocolate (not unsweetened), chopped
1 cup sugar
1/4 cup fresh lime juice
2 tablespoons Sambuca or other anise-flavored liqueur if desired

Steps:

  • Cut watermelon into 1-inch-thick semi-circular slices and chop flesh coarse, reserving rind.
  • Arrange reserved watermelon rind slices on their sides on foil-lined baking sheets and cover tightly with plastic wrap. Freeze rinds until frozen hard, about 2 hours.
  • Line another baking sheet or a tray with parchment or wax paper. In a small bowl set over a small saucepan of barely simmering water melt chocolate and remove from heat. Transfer chocolate to a small resealable bag and seal bag. Snip off tip of one corner of bag to form a tiny hole and onto prepared baking sheet or tray pipe and spread chocolate into 1/3- to 1/2-inch ovals to resemble watermelon seeds. Freeze chocolate "seeds" on baking sheet until very firm, about 30 minutes. Working quickly, peel "seeds" from paper into another small bowl and keep frozen.
  • Discard real seeds from watermelon to yield 5 cups. In a saucepan heat 1 cup purée with sugar over moderate heat, stirring, until sugar is dissolved and stir into remaining purée with lime juice and liqueur. Chill mixture, covered, until cold.
  • Freeze sorbet in an ice-cream maker. When sorbet is frozen to a thick slush add three fourths of chocolate "seeds" and continue to freeze until frozen.
  • Working quickly, fill frozen watermelon rinds with sorbet, smoothing it with a rubber spatula. Arrange remaining chocolate "seeds" realistically on slices and smooth _sorbet_again. Cover sorbet with plastic wrap and freeze until very firm, about 6 hours. (Watermelon sorbet slices may be made 3 days ahead and kept frozen, wrapped tightly).

I usually double this recipe so I can have one dessert on hand for family and friends who stop by unexpectedly in summer. Each refreshing wedge comes complete with chocolate chip "seeds".

About 1 pint lime sherbet, slightly softened
About 1 pint pineapple sherbet, slightly softened
About 1-1/2 pints raspberry sherbet, slightly softened
1/4 cup miniature semisweet chocolate chips

Steps:

  • Line a 1-1/2-qt. round metal bowl with plastic wrap. Press a thin layer of lime sherbet against the bottom and sides of bowl. Freeze, uncovered, until firm. Spread a thin layer of pineapple sherbet evenly over the lime sherbet layer. Freeze until firm. Pack raspberry sherbet into center of sherbet-lined bowl. Smooth the top to resemble a cut watermelon. Cover and freeze until firm, about 8 hours., Just before serving, remove bowl from the freezer and uncover. Invert onto a serving plate. Remove bowl and plastic wrap. Cut into wedges; press a few chocolate chips into the raspberry sherbet section of each wedge to resemble watermelon seeds.

This dessert-meets-drink is chef Vivian Howard's favorite way to end a meal, it's easy to see why. Rosemary-infused watermelon sorbet topped with sparkling rosé and fresh fruit is summer refreshment in a glass! (Plan ahead: Watermelon sorbet and ice cream canister require overnight freezing.)

1/2 cup water
3/4 cup sugar
2 sprigs rosemary
5 cups cubed seedless watermelon
1/4 cup lime juice, preferably fresh, from about 2-3 limes
3 tablespoons tequila, may substitute vodka, Aperol, or Campari
1 quart Watermelon-Rosemary Sorbet
1 bottle sparkling rosé, or any sparkling wine
1 cup diced peach, or cantaloupe, honeydew, watermelon
1 cup blueberries

Steps:

  • Watermelon-Rosemary Sorbet: Freeze the canister of an ice cream or sorbet maker overnight (or according to manufacturer's directions). Meanwhile, prepare a simple syrup by combining water, sugar, and rosemary sprigs in a small saucepan. Over medium-high heat, bring to a simmer, uncovered, then immediately turn off heat and let rosemary steep as syrup cools to room temperature, 10 minutes.
  • Remove and discard rosemary sprigs. Pour syrup into a blender, then add watermelon, lime juice, and tequila. Cover and blend until smooth. Place a strainer over a storage container and strain watermelon mixture, separating the pulp and foam from the liquid; discard pulp and foam. Cover and chill liquid overnight in the refrigerator. (Alternatively, mixture can be chilled quickly by placing the container into an ice bath.)
  • Set up ice cream maker and pour watermelon base into the frozen canister. Turn on and churn mixture until it's thick and looks frozen, about 30 minutes. Transfer sorbet into a container and freeze, covered, at least 2 hours. Makes 1 quart.
  • Assembly: Place a scoop of sorbet into a chilled glass; add a tablespoon each of diced peaches and blueberries. Top with sparkling rosé and serve immediately, with a spoon, straw, or both.

WATERMELON SORBET

Very light and refreshing with the perfect amount of sweetness. Lime juice brightens up the flavor and adds a delightful zing. The texture is soft, reminiscent of a very light sorbet combined with a shaved ice. This is a great recipe to make with plentiful watermelon available in the summertime. It's the perfect ending after a filling summer dinner or a refreshing snack on a hot day. You could even pour a shot of Cointreau® over the top or blend the mixture with tequila and enjoy it as a boozy summer treat.

8 cups cubed seeded watermelon
2 medium limes, zested and juiced, divided
2 tablespoons honey
1 pinch chili-lime seasoning (such as Tajin®)

Steps:

  • Place watermelon cubes in a single layer on a sheet pan. Freeze at least 5 hours or overnight.
  • Zest limes; set aside for garnish. Juice limes until you have 2 tablespoons juice.
  • Place 1/2 of watermelon cubes in food processor with 1 tablespoon honey and 1 tablespoon lime juice. Blend until smooth and creamy and transfer to a large bowl. Repeat with remaining watermelon, honey, and lime juice.
  • Stir the 2 batches together and serve immediately, garnished with lime zest and Tajin®. Or, place in a freezer-safe container and freeze for a firmer texture.
