GRILLED HALLOUMI SANDWICH WITH WATERMELON RELISH



Grilled Halloumi Sandwich with Watermelon Relish image

Number Of Ingredients 11

8 ounces halloumi cheese, sliced 1/4- to 1/3-inch-thick
Olive oil, for drizzling
4 potato rolls, preferably Martin's
1 cup diced watermelon
1 tablespoon minced fresh basil
1 tablespoon minced fresh mint
1/2 minced shallot
Kosher salt and freshly ground black pepper
2 cups baby arugula
Juice of 1/2 lemon
1/4 cup prepared black olive tapenade

Steps:

  • Preheat a grill to medium-high heat.
  • Drizzle the cheese with the olive oil and place on the grill. Grill the cheese until grill marks appear and it begins to melt slightly, about 2 minutes per side. Place the rolls on the grill and allow to lightly toast.
  • Toss the watermelon, basil, mint and shallot in a medium bowl. Season with salt and pepper. Toss the arugula with the lemon juice in another bowl and season with salt and pepper. Spread one side of the toasted rolls with olive tapenade. Layer the halloumi, watermelon relish and arugula on each roll and serve.

Watermelon Burgers With Cheese image

Here is a surprising vegetarian option for the backyard barbecue. The saltiness of the cheese cuts the sweetness of the watermelon. The burger gets its savory nature from the grill and a hit of onion.

1 small watermelon
1/4 cup olive oil
1 tablespoon minced onion
Salt
black pepper
4 ounces mozzarella, Monterey Jack, Gruyère or other melting cheese, grated or sliced

Steps:

  • Heat a charcoal or gas grill to moderately high heat and put the rack about 4 inches from the flame. Cut the watermelon lengthwise, into halves or quarters, depending on the size of the melon. From each length, cut 11/2-inch-thick slices; remove the rind from each slice. If there are black seeds, use a fork to remove as many of them as you can without beating the flesh up too much.
  • Mix the olive oil with the onion and sprinkle with salt and pepper. Brush or rub the mixture all over the watermelon slices. Grill or broil for about 5 minutes on each side. The flesh should be lightly caramelized and dried out a bit. Sprinkle each slice with cheese, cover the grill and cook just until the cheese melts, about a minute.
  • Serve on buns, toast or hard rolls with the usual burger fixings.

Truly a recipe for the adventurous! You actually grill watermelon meat, and then serve it on buns with cheese. Just like a hamburger. I haven't tried this, but I found the recipe in the Sunday New York Times in Mark Bittman's column. This is a legitimate recipe that I thought you might be interested in reading or maybe trying.

3 sprigs fresh basil, stems removed
1 small watermelon, fruit removed with a melon baller
1 (8 ounce) package fresh mozzarella cheese, cut into small pieces
2 tablespoons olive oil
2 tablespoons balsamic vinegar
salt and ground black pepper to taste

Steps:

  • Trim basil leaves into small circles about 1 inch in diameter.
  • Thread watermelon and mozzarella cheese on toothpicks, sandwiching a basil leaf in between. Arrange on a serving plate.
  • Pour olive oil and balsamic vinegar over toothpicks. Sprinkle salt and black pepper on top.
