Soy-Marinated Chicken Breast with Watercress-Pasta Salad and Mango-Lime Purée image

1/4 cup soy sauce
1 tsp chili paste
4 scallions, chopped, green and white parts kept separate
1/4 cup red wine
3 cloves garlic, peeled and minced
1 tbsp minced ginger
1/4 tsp black pepper
4 boneless chicken breast halves (1 lb)
8 oz linguine
2 tbsp Dijon mustard
2 tbsp rice vinegar
1 tbsp sesame oil
3 tbsp canola oil
1 red bell pepper, cored, seeded and julienned
3 bunches watercress
2 mangoes, cubed
2 tsp fresh lime juice
Vegetable-oil cooking spray

Steps:

  • Preheat broiler. For marinade, combine soy sauce, chili paste, scallion whites, red wine, garlic, ginger, and black pepper in a bowl. Add chicken and let marinate. Cook pasta in salted boiling water until al dente; drain. For dressing, whisk together mustard, vinegar, sesame oil, and 2 tbsp canola oil. Toss pasta, red pepper, watercress and all but 2 tbsp scallion greens with dressing. In a blender, puree mangoes, lime juice, and remaining 1 tbsp canola oil. Coat broiler pan with cooking spray and add chicken in a single layer. Broil 6 to 7 minutes per side, until browned and cooked through. Cut breasts diagonally in half. On each plate, place 1/4 pasta and 2 pieces chicken. Drizzle with mango puree and garnish with remaining scallion greens.

1/2 cup freshly squeezed pink grapefruit juice
1 tablespoon honey
1 teaspoon very finely chopped shallot
1/2 teaspoon Dijon mustard
1/4 teaspoon very finely chopped garlic
1/2 cup extra-virgin olive oil
1 tablespoon chopped fresh basil
Coarse salt and freshly ground black pepper
6 ounces watercress
1 cup chopped fresh mango
1 Hass avocado, pitted, peeled, and cut into 6 wedges

Steps:

  • Place grapefruit juice in a small non-reactive saucepan; simmer until reduced to 1/4 cup, 3 to 4 minutes. Remove from heat; set aside to cool.
  • In a medium bowl, whisk together cooled grapefruit juice, honey, shallot, mustard, and garlic. Slowly whisk in olive oil until an emulsion is formed. Stir in basil and season vinaigrette with salt and pepper.
  • Place watercress in a large bowl along with mango and 1/4 cup vinaigrette; season with salt and pepper and toss to combine. Top with avocado slices and drizzle with more vinaigrette, if desired.

1/2 cup pink grapefruit juice, reduced to 1/4 cup
1 tablespoon honey
1 teaspoon minced shallots
1/2 teaspoon Dijon mustard
1/4 teaspoon minced garlic
1/2 cup extra virgin olive oil
1 tablespoon chopped fresh basil
Salt and pepper to taste
6-ounces fresh watercress
1 cup diced fresh mango
1 Haas avocado, cut into 6 wedges

Steps:

  • Place the grapefruit juice in a small nonreactive saucepan and cook until reduced in volume by one-half. Set aside to cool.
  • In a medium bowl, combine the cooled reduced grapefruit juice, honey, shallots, mustard and garlic and whisk to blend. While continuing to whisk, add the oil in a slow, steady drizzle until fully incorporated. Stir in the basil and season with salt and pepper to taste.
  • In a large salad bowl, combine the watercress, mango, and 1/4 cup of the vinaigrette. Season lightly with salt and pepper and toss to combine. Serve salad with grilled seafood, simple grilled fish, or chicken, drizzled with extra vinaigrette if desired.

1 1/2 tablespoons Asian sesame oil
1/4 cup fresh lime juice
1 tablespoon Asian fish sauce
2 tablespoons sugar
2 dashes hot sauce such as Tabasco
Freshly ground white pepper to taste
For salad
3/4 pound watercress, coarse stems discarded (about 6 cups loosely packed)
1 3/4 cups thinly sliced Napa cabbage (from 1 head)
1 (1- to 1 1/2-pound) firm-ripe mango, peeled, pitted, and cut into 1/2-inch dice
1/2 cup coarsely grated carrot
1/4 cup torn fresh cilantro leaves
1/4 cup torn fresh basil leaves
1/4 cup torn fresh mint leaves

Steps:

  • Whisk together all dressing ingredients in a small bowl, then whisk in salt to taste.
  • Gently toss all salad ingredients together in a bowl. Add just enough dressing to coat, then serve immediately.

Ginger Marinated Squab with Mango Sauce and Watercress Salad image

1 cup red wine
1/2 tablespoon dry mustard
2 tablespoons minced ginger
1 tablespoon minced garlic
1/4 cup canola oil
1/2 tablespoon juniper berries
4 squabs, breast and leg removed (attached), carcass roasted
Canola oil to coat
Salt and black pepper to taste
Juice of 2 limes
1 teaspoon sugar
2 tablespoons canola oil
2 tablespoons chopped macadamia nuts, save a little for garnish
3 cups watercress
Salt and black pepper to taste
Canola oil to cook
1 carrot, chopped
1 stalk celery, chopped
1 small onion, chopped
1/2 cup red wine
2 sprigs thyme
2 large slices ginger
1/2 tablespoon whole black peppercorns
1 tablespoon soy sauce
4 carcasses
Water to cover
1 large ripe mango, pureed in a blender (1 cup puree)
3 tablespoons butter
Salt and pepper to taste

Steps:

  • In a bowl, combine wine and mustard to dissolve. Add ginger, garlic, oil and juniper berries. Coat squab with marinade and let stand for 4 hours. Season the squab. Heat a skillet and coat with oil. Pan sear the squab, breast side down until brown, about 3 to 4 minutes. Flip and cook an additional 3 to 4 minutes. Squab should be eaten rare. Let rest 4 minutes.
  • WATERCRESS SALAD: In a bowl, whisk together juice, sugar and oil. Toss well with nuts and greens. Season and check.;
  • MANGO SAUCE: In a small stockpot or large saucepan, coat lightly with oil and brown mire poix. Deglaze with wine and reduce by 80 percent. Add thyme, ginger, pepper, soy, carcasses and cover with water, (6 to 8 cups). Bring to a boil and turn down heat to simmer, 11/2 hours. Strain. Place in another saucepan and reduce by 50 percent. Whisk in the mango puree and butter. Season and check. Keep warm.
  • PLATING: On white plates, sauce the whole plate. Place a small mound of salad in the center and lay 2 pieces of squab on top, legs crissed-crossed. Garnish with nuts.
