Fast and easy with good results! (For you younguns that don't know, we used to have a certain day to wash and it took all day. Not much time left to cook).

1 (30 ounce) can sliced peaches
1/4 lb margarine (1 stick)
2/3 cup sugar
2/3 cup all-purpose flour
2/3 cup milk
2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • .Preheat oven to 350.
  • Put undrained peaches in 9x12 baking dish with the margarine.
  • Place in oven.
  • Meanwhile, in small bowl, mix sugar, flour, milk, baking powder and salt.
  • Pour over melted margarine and peaches. Do not stir.
  • Place back in 350 degree oven and bake 1 hour or until golden brown.

I found this recipe in an old cookbook that I checked out at a library. It tastes wonderful. I've never tried it with store bought pie filling (4 Cups). Like all cobblers, it's good with ice cream or home-made whipped cream.

1 c all purpose flour
1 c sugar
3/4 c whole milk
1/4 lb butter, melted
1 pinch salt
1 tsp baking powder
1 qt home preserved fruit

Steps:

  • 1. Mix first 6 ingredients together.
  • 2. Butter an 8"x8" glass casserole dish. Pour the batter into the dish.
  • 3. Pour on the fruit, juice and all. Sprinkle with sugar. Bake at 350 degrees for an hour.

In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

5 small peaches, cut into 1/4-inch-thick slices (about 5 cups)
3/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 teaspoons fresh lemon juice
1/2 stick (4 tablespoons) unsalted butter
3/4 cup all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt
1/2 teaspoon pure vanilla extract
3/4 cup milk, at room temperature

Steps:

  • For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
  • For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
  • Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
  • Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
  • Let cool to room temperature before serving.
