EASY TACO DIP

An easy, Creamy Mexican Taco Dip that is made with refried beans, cream cheese, and fresh pico de gallo.

8 ounces cream cheese (softened)
1 cup sour cream
2 tablespoons taco seasoning
2 cups refried beans (or 16 ounce can)
1 cup cheddar cheese (shredded (optional))
1 pint grape tomatoes
1/4 cup onions (diced)
2 tablespoons cilantro (minced (optional))

Steps:

  • Preheat oven to 350 degrees.
  • Spread refried beans into a 8x8 pan or a 2 quart casserole dish.
  • Mix sour cream and cream cheese with taco seasoning until well combined. Spread on top of beans.
  • If using cheese, sprinkle cheese over the cream cheese layer.
  • Bake at 350 for 20-25 minutes until cheese is melted, and dip is warmed through.
  • Toss tomatoes, onions and cilantro together. Top the warm dip with the tomato mixture and serve with tortilla chips.

1 pound ground beef
1 green bell pepper, chopped
1 package taco seasoning mix
1 tomato, chopped
1 bunch green onions, chopped
2 tablespoons hot taco sauce, or more to taste
1 (16 ounce) container sour cream
1 (8 ounce) package shredded sharp Cheddar cheese
1 (14.5 ounce) package tortilla chips, or more as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Stir bell pepper and taco seasoning into ground beef. Spread ground beef mixture into prepared casserole dish.
  • Sprinkle tomato and green onions over ground beef mixture; top with taco sauce. Spread sour cream over taco sauce layer and top with Cheddar cheese.
  • Bake in the preheated oven until cheese is melted and bubbling, 10 to 20 minutes. Serve with tortilla chips.

1 (1 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
1 (8 ounce) package cream cheese, softened
1 (16 ounce) container sour cream
1 (16 ounce) jar salsa
1 large tomato, chopped
1 green bell pepper, chopped
1 bunch chopped green onions
1 small head iceberg lettuce, shredded
1 (6 ounce) can sliced black olives, drained
2 cups shredded Cheddar cheese

Steps:

  • In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
  • Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
  • Top the layers with salsa. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar cheese. Garnish with black olives.

3/4 cup water
2 envelopes taco seasoning, divided
2 cups fat-free sour cream
1 package (8 ounces) cream cheese, softened
2 cups shredded iceberg lettuce
1 cup shredded cheddar cheese
3 medium tomatoes, finely chopped
1 medium green pepper, finely chopped
1 can (2-1/4 ounces) sliced ripe olives, drained

Steps:

  • In a large skillet, cook and crumble beef over medium heat until no longer pink, 4-6 minutes; drain. Add water and one envelope taco seasoning; cook until thickened. Cool slightly., Beat sour cream, cream cheese and remaining taco seasoning until blended. Spread in a 3-qt. dish; add ground beef. Top with lettuce, cheddar, tomatoes, pepper and olives.

I got this from the coupon inserts in our Sunday paper, and it turned out to be a great snack to eat while watching football, NASCAR, etc. Easy to make, fairly inexpensive and something a little different.

1/2 lb ground beef
1 (14 1/2 ounce) can petite cut diced tomatoes, drained
1/2 ounce package taco seasoning
1 cup shredded cheddar cheese
green onion, for garnish (optional)
sour cream, for garnish (optional)
avocado, for garnish (optional)

Steps:

  • Brown meat in skillet, drain.
  • Reserve 2 tbsp tomatoes as garnish.
  • Add remaining tomatoes and taco seasoning to skillet.
  • Spoon into 1 1/2 quart shallow baking dish.
  • Top with cheese.
  • Bake at 375* 5 minutes or until cheese is melted.
  • Garnish with reserved tomatoes and sliced green onions, avocado and sour cream, if desired.
  • Serve with tortilla chips.
