WARM SPINACH SALAD WITH BACON AND PINE NUTS
this is such an easy low carb recipe. It comes from the 'Dr Atkins quick and easy new diet cookbook'. theres 18g per serving, but these come from the nuts, so exclude them if you're in the first few weeks.

Steps:
- Heat 1 tbsp of oil in heavy frying pan over medium- high heat until hot, but not smoking.
- Add the bacon and saute, stirring occasionally for 4 mins or until browned.
- Reduce heat to a minimum, add pine nuts and cook for 1 min, stirring occasionally Add the garlic and cook, stirring for 30 seconds.
- Add the spinach, vinegar and remaining tbsp of oil and cook, tossing gently for 15 seconds, or until the spinach is warm and a bit wilted.
- Transfer to serving plates, sprinkle with parmesan and serve immediately.

- In a medium saucepan, bring 1 quart of water to a boil. Add 1 teaspoon of salt and the eggs and simmer over medium high heat for 5 minutes. Using a slotted spoon, move the eggs to a bowl of cold water and let sit for 3 to 4 minutes. Keep the pan of hot water on the stove over low heat.
- Meanwhile, put the spinach in a large bowl. In a medium skillet, combine the olive oil, sherry and balsamic vinegars, shallots and thyme, and boil for 1 minute.
- Crack the eggs all over and gently peel them under warm running water, keeping them whole. Using a slotted spoon, slip the eggs in the hot water for 30 seconds.
- Pour the warm dressing over the spinach, season with salt and pepper and toss. Mound the salad on plates, top each with an egg and serve.

Steps:
- Heat a non-stick skillet, add olive oil, onion, feta cheese and olives. Saute until onions soften and cheese begins to melt.
- Add vinegar and remove from heat. Immediately add spinach, turning the spinach with tongs so that it gets evenly coated with dressing in pan (when it begins to wilt it shrinks like crazy).
- Divide salad between four plates, doing your best to evenly distribute onions and olives.
- Grind black pepper over the top and serve immediately.
