When I need a different weeknight meal, I pull out this salad recipe. To make it in record time, I use fully cooked chicken strips, jarred mango, bottled vinaigrette and packaged, shredded cheese.

2 cups chopped peeled mangoes
1 medium red onion, chopped
1/2 cup chopped sweet red pepper
1/4 cup minced fresh cilantro
1 jalapeno pepper, seeded and chopped
2 tablespoons lime juice
2 packages (9 ounces each) ready-to-use grilled chicken breast strips
2 garlic cloves, minced
2 teaspoons ground cumin
1 teaspoon onion powder
1 teaspoon chili powder
1/4 teaspoon cayenne pepper
Dash salt
2 tablespoons olive oil
2 packages (8 ounces each) ready-to-serve European blend salad greens
1/3 cup oil and vinegar salad dressing
2 cups shredded pepper Jack cheese
Tortilla chips

Steps:

  • For salsa, in a large bowl, combine the first six ingredients; chill until serving. In a large skillet, saute the chicken, cumin, onion powder, chili powder, cayenne and salt in oil until heated through. Add garlic; cook 1 minute longer., Toss greens with dressing; divide among seven serving plates. Top with chicken mixture, mango salsa and cheese. Serve immediately with tortilla chips.

Warm Shredded Chicken Salad image

6 boneless, skinless chicken breasts
1/2 cup sesame oil
2 tablespoons peanut oil
Juice of 1/2 lemon
1/4 cup soy sauce
3 tablespoons freshly grated ginger
1 tablespoon cornstarch
1/2 cup extra virgin olive oil
2 tablespoons fresh lemon juice
3/4 teaspoon salt
1/4 teaspoon freshly ground pepper
5 large bunches watercress, stems removed, leaves washed and well dried
2 ripe avocados, halved, seeded, and peeled
1/2 cup peanut oil for frying

Steps:

  • Trim chicken of any excess fat or sinew. Slice, across grain, into 3 by 1/2 inch strips. Stir marinade ingredients together in a medium bowl. Add chicken strips and toss to evenly coat. Set aside at room temperature, uncovered, 30 minutes. It's important not to marinate any longer, or the acid in the lemon will break down the fibers of the chicken.
  • Meanwhile, prepare the salad. Whisk together olive oil, lemon juice, salt, and pepper in a bowl. Tear watercress into bitesized pieces and toss with dressing. Divide salad among 6 serving plates. Thinly slice avocado halves into strips lengthwise and arrange on salad. Reserve in refrigerator.
  • To cook chicken, heat a large dry cast iron skillet over high heat 15 minutes. (Yes, 15 minutes.) Heat peanut oil for frying. Lift chicken strips from marinade, one at a time, and add to pan, standing as far away as possible to avoid splatters. Fry until dark golden brown and crisp, about 1 minute per side. Arrange about 8 hot chicken strips on each salad in a spoke pattern. Serve immediately.

2 teaspoons canola oil
1 large white onion, chopped
1 large Anaheim pepper, diced
1 jalapeno pepper, diced
2 tablespoons minced garlic
1 cup chicken stock
1 (8 ounce) can peeled whole plum tomatoes
1 (5 ounce) can tomato sauce
¼ cup diced mango
1 large lime, zested and juiced
2 tablespoons chopped fresh cilantro
1 tablespoon Pasilla chili powder
1 tablespoon ground cumin
2 teaspoons sea salt
1 teaspoon ground black pepper
1 teaspoon white sugar

  • Place chicken into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until chicken is no longer pink in the center, about 30 minutes. Transfer chicken to a work surface to cool; shred.
  • Heat canola oil in a large pot over medium heat; cook and stir onion, Anaheim pepper, jalapeno pepper, and garlic until slightly softened and fragrant, about 8 minutes. Add shredded chicken, chicken stock, tomatoes, tomato sauce, mango, lime juice, lime zest, cilantro, chili powder, cumin, sea salt, black pepper, sugar, and cinnamon; bring to a boil. 4 boneless skinless chicken breast halves, about 5 oz. each
1/4 cup soy sauce
1/4 cup unseasoned rice wine vinegar
1 garlic clove, minced
1 tablespoon peanut butter
sugar, a pinch
Chinese hot mustard, a pinch
1/4 cup sesame oil
1 tablespoon chili oil
1 tablespoon canola oil
1 tablespoon sesame seeds
1 English cucumber, julienned
2 carrots, peeled and julienned
2 green onions, including tender green tops, thinly sliced on the diagonal
2 tablespoons finely chopped fresh cilantro

Steps:

  • Place chicken in a sauté pan and add water to cover.
  • Place over med-high heat and bring to a simmer.
  • Decrease heat to low and simmer, uncovered, until chicken is no longer pink in the center when cut into with a knife, 10-12 minutes.
  • Remove from heat and set aside to cool in the liquid.
  • In a bowl, combine the soy sauce, vinegar, garlic, peanut butter, sugar, and mustard.
  • Whisk to mix well.
  • Slowly whisk in the oils until incorporated.
  • Taste and adjust seasonings.
  • Place the sesame seeds in a frying pan over high heat; toast, shaking the pan, until light brown, about 2 minutes.
  • Immediately remove the pan.
  • Drain the chicken; shred by tearing the meat into long, thin pieces.
  • In a transportable bowl, combine the chicken, cucumber, carrots, green onions, and 1 T of the cilantro.
  • Pour over the dressing and mix well.
  • Taste and adjust the seasonings.

SALAD:
6 cups torn mixed salad greens
1/4 cup raspberry or balsamic vinaigrette
1 medium mango, peeled and cubed
1 cup fresh sugar snap peas, halved lengthwise

Steps:

  • Toss chicken with salt and pepper. Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Grill chicken, covered, over medium heat or broil 4 in. from heat on each side until no longer pink, 3-4 minutes.
