This came about trying to make a potato casserole. Well, I had the potatoes, i had leftover cooked pork an a onion. Just got in from a bone-chill December drive home from work. Frazzled, not really wanting to cook at all, oh that cup of hot tea sounds so good. But hey family always comes first, so here we goo

1 lb slice cooked ham and/or cooked kielbasa
1 med. slice white or yellow onion
5 large slice potatoes/raw
4 Tbsp bacon drippings
1 tsp kosher salt, and freshly ground black pepper
1/2 c frozen vegetables (optional)
1/2 c cheddar cheese, shredded ( optional )

Steps:

  • 1. To prep; peel and slice raw potatoes in coin cuts, set aside. Do the same to onion, and if using ham; cut into 1/2 inch chunks, if using kielbsa go for same coin cut. Set aside.
  • 2. Heat bacon dripping in cast iron skillet , on med low heat. At this point sprinkle in a bit of the sliced onions. Carmelize them. Turn off heat.
  • 3. Now start to layer potatoes first at bottom of pan, on top of cooked onions, sprinkle with a bit of salt and pepper. Next layer over potatoe the meat , then onion slices. Seasoning each layer lightly. Last layer should be the meat.
  • 4. Add just enough water to half fill the pan ( easier if on on rack, or oven door ( it's a very heavy pan.). If you are using ham...sprinkle on cheddar cheese over meat. Cover with oven proof top. Set oven for 350 F. and steam cook for about 35 to 45 minutes.
  • 5. If you are using kielbsa , all can be done on stove top. I have never added cheese to this veriation, it's up to you. Both recipes can have other vegetable added or not, again up to you.
  • 6. To serve :sprinkle with parsley, home made corn bread goes well with this, also any hard breads. There is supposed to be some pot liquer in pot. have melted butter for the bread. Hint, sometimes I add a small pad of butter to richen the pot.

1 8-ounce can refrigerated crescent roll dough
1 14-ounce package cocktail-sized smoked sausages, patted dry
1 large egg
everything bagel seasoning (optional)
3/4 c. mayonnaise
1/4 c. chile-garlic sauce or Sriracha
3/4 c. Dijon mustard
1/4 c. genuine maple syrup
3/4 c. sour cream
1/4 c. pickle juice (from jar)
1 tbsp. fresh chives, chopped

Steps:

  • Preheat the oven to 375°. Working quickly while cold, unroll the crescent dough sheet on a lightly floured surface and separate the perforated dough into 8 triangles. Cut each dough triangle into three equal skinny triangles.
  • Place one cocktail sausage on the wide base of one skinny triangle. Roll the sausage toward the pointed end of the triangle, allowing the dough to overlap and wrap around the sausage. Place the rolled sausage on a parchment-lined baking sheet, point-side down. Repeat with the remaining dough triangles and sausages.
  • Whisk together the egg with 1 teaspoon water in a small bowl until smooth. Brush the egg wash over the dough and sprinkle with the everything bagel seasoning, if desired. Bake at 375° until the dough is puffed and golden brown, 12 to 15 minutes.
  • Make the dipping sauces (optional): For the Spicy Mayo Dipping Sauce, stir together the mayo and chile-garlic sauce in a small bowl until smooth. For the Maple-Dijon Dijon Dipping Sauce, stir together the mustard and syrup in a small bowl until smooth. For the Quick Ranch, stir together the sour cream, pickle juice, and chives in a small bowl until smooth.
  • Serve the pigs in a blanket warm with Spicy Mayo, Maple Dijon, or Quick Ranch Dipping Sauces.

LOADED BAKED POTATO CASSEROLE

This casserole combines all the irresistible features of a loaded spud, but is cooked and served family style for an extra-hearty side.

Nonstick cooking spray
6 slices bacon, cut 1/2-inch thick
2 1/4 pounds russet potatoes (about 4), scrubbed clean and cut into 1-inch chunks
Kosher salt and freshly ground black pepper
6 ounces cream cheese, at room temperature
2 cups shredded Cheddar
2/3 cup sour cream
2 scallions, white and light green parts only, thinly sliced

Steps:

  • Preheat the oven to 425 degrees F and spray a 3-quart casserole dish with nonstick spray. Set aside.
  • Cook the bacon in a medium nonstick skillet over medium heat, stirring occasionally, until brown and crispy, 6 to 7 minutes. Transfer to a paper towel-lined plate. Reserve 2 tablespoons of the bacon drippings.
  • Put the potatoes into the prepared casserole dish. Toss with the reserved 2 tablespoons bacon drippings, 1 teaspoon salt and 1/2 teaspoon pepper. Roast until the potatoes are soft and begin to brown, about 45 minutes.
  • Meanwhile, mix together the cream cheese and 1 cup Cheddar in a bowl until well combined. Dollop over the potatoes, then sprinkle with the remaining cup Cheddar and bake until the cheese is melted and bubbly and the potatoes are completely cooked through when poked with a knife, 13 to 15 minutes.
  • Dollop the sour cream evenly over the casserole and sprinkle with the scallions and bacon pieces.

CABBAGE ROLL CASSEROLE

I use to make regular cabbage rolls until I found this recipe. Now, instead, I make this and it is as good as the regular cabbage rolls and alot easier.

2 pounds ground beef
1 cup chopped onion
1 (29 ounce) can tomato sauce
3 ½ pounds chopped cabbage
1 cup uncooked white rice
1 teaspoon salt
2 (14 ounce) cans beef broth

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet, brown beef in oil over medium high heat until redness is gone. Drain off fat.
  • In a large mixing bowl combine the onion, tomato sauce, cabbage, rice and salt. Add meat and mix all together. Pour mixture into a 9x13 inch baking dish. Pour broth over meat mixture and bake in the preheated oven, covered, for 1 hour. Stir, replace cover and bake for another 30 minutes.

CRAZY PIGGY CASSEROLE

This was adapted from the popular online Recipe of Crazy good Casserole that has Chicken and bacon. GREAT way to use up leftover Easter ham. I had several vacuum sealed sections of leftover ham in the freezer and decided I needed a tasty creamy casserole to make with it. I hope you too will enjoy this. I think the next time I make this I might try adding some broccoli or some sweet peas to it.

Number Of Ingredients 9

2 cups chunked cooked ham
8 ounces penne pasta or 8 ounces other large form pasta
2 (10 ounce) cans campbell's cream of chicken and mushroom soup (its a combination of the two in one can)
8 ounces monterey jack cheese, shredded
6 slices bacon, cooked and crumbled
1/4 teaspoon garlic powder
1/4 teaspoon pepper, to taste (bacon and ham are both plenty salty. do not advise adding any salt to dish)
1/4 cup sour cream
1/4 cup milk

Steps:

  • Cook pasta according to package directions, drain well once cooked. Meanwhile start the bacon while pasta is cooking.
  • Line a cookie sheet with foil and spray with non stick spray. lay bacon on sheet and bake at 350 degrees for about 25-30 minutes until just done but not crispy. lay on paper towels to drain. leave oven on.
  • in large bowl combine all the ingredients and mix well. put in Sprayed casserole dish. COVER Bake at 350 for 30- 45 minutes until heated through.
