2 firm medium pears
1/4 cup brandy or Cognac, optional
3 tablespoons olive oil
1 large fennel bulb, halved, cored and thinly sliced
4 cups shredded or thinly sliced cabbage
1/4 cup water
3 tablespoons lemon juice
2 teaspoons honey or agave nectar
1 teaspoon kosher salt
1/2 teaspoon pepper
3/4 cup crumbled or sliced Gorgonzola cheese
1/2 cup chopped walnuts, toasted

Steps:

  • Peel and core pears; cut into 1/2-in. slices. If desired, toss with brandy. Set pears aside., In a large skillet, heat oil over medium-high heat. Add fennel; saute until crisp-tender, 2-3 minutes. Add cabbage; toss with fennel. Cook until both are tender, 2-3 minutes longer. Add pears, water, lemon juice, honey, salt and pepper to skillet, gently combining ingredients. Cook until liquid is evaporated, 6-8 minutes., Transfer to a serving bowl. Top with Gorgonzola cheese and toasted walnuts. Serve warm or at room temperature.

A vibrant salad that tastes delicious either hot and cold

2 large red peppers
2 tbsp olive oil
1 medium red onion , chopped into small dice
1 large shallot , finely sliced
2 garlic cloves , crushed and finely chopped
1 small bulb fennel , chopped into small dice
1 sprig of fresh rosemary
1 bay leaf
1 tsp vegetable bouillon powder
2 x 410g cans chickpea , drained and rinsed
zest of 1 lemon , finely chopped
20g packet (or a large a large handful) flatleaf parsley , chopped
1 tbsp red wine vinegar
4 tbsp extra-virgin olive oil

Steps:

  • For the dressing, pour the vinegar into a small jug, season with salt and pepper, then whisk in the oil. Leave to one side.
  • Perch the peppers over 1 or 2 gas burners (or put them under a hot grill) and blacken them, turning all the time to expose the red skin to the naked heat. When completely charred, tuck them into a plastic bag and leave for 10 minutes. Scrape off the blistered skin, seed and cut the flesh into medium dice. Set aside.
  • Heat the oil in a large non-stick fryingpan over a medium heat and tip in the onion and shallot. Fry for 3-4 minutes, stirring frequently. Add the garlic, fennel, rosemary and bay leaf. Fry for 5-6 minutes, stirring frequently, without letting the vegetables colour.
  • Pour 200ml/7fl oz boiling water into a heatproof measuring jug and whisk in the bouillon powder. Pour into the frying pan, tip in the chickpeas and stir. Bubble vigorously for about 5 minutes or until the juices have nearly disappeared. Remove from the heat and cool for a few minutes.
  • Scrape the contents of the frying pan into a large mixing bowl, then throw in the peppers, lemon zest and parsley. Pour in the dressing and toss gently but thoroughly. Taste and adjust the seasoning. Serve warm or at room temperature.

1 1-pound package dried lentils
3 carrots, peeled, thinly sliced
2 celery stalks, chopped
2 teaspoons salt
1/3 cup malt vinegar or apple cider vinegar
2 tablespoons coarse-grained Dijon mustard
1 1/2 teaspoons sugar
2 tablespoons plus 1/2 cup olive oil
1 pound fully cooked smoked kielbasa sausage, thinly sliced
3 garlic cloves, peeled, flattened
1 large fennel bulb with fronds, bulb and fronds chopped and reserved separately
5 green onions, chopped
2 heads frisée lettuce or 1 large head curly endive, separated into leaves

Steps:

  • Place lentils, carrots and celery in heavy large saucepan. Add enough cold water to cover. Stir in salt and bring to boil. Reduce heat, cover and simmer until lentils are just tender, about 20 minutes. Drain. Transfer lentil mixture to bowl.
  • Meanwhile, whisk vinegar, mustard and sugar in small bowl to blend; set aside. Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add kielbasa and sauté until brown, about 5 minutes. Using slotted spoon, transfer to paper towels. Cover to keep warm.
  • Pour off any fat from skillet and discard. Add remaining 1/2 cup oil to skillet; heat over medium heat. Add garlic and stir until golden, about 2 minutes. Discard garlic. Add fennel bulb to skillet and sauté until crisp-tender, about 4 minutes. Add green onions and stir 1 minute. Whisk in vinegar mixture and bring to boil. Pour fennel mixture over lentils. Toss to coat. Season with salt and pepper.
  • Line large shallow bowl with frisée leaves. Spoon in lentil salad. Arrange kielbasa slices atop lentils. Sprinkle with chopped fennel fronds and serve.

WARM SHRIMP AND FENNEL SALAD

2 tablespoons sherry vinegar
6 tablespoons olive oil
1 1/2 teaspoons hot mustard
1 12-ounce bottle of beer
2 cloves garlic, peeled and bruised
5 sprigs fresh dill
Salt and pepper to taste
3 tablespoons olive oil
3 bulbs fresh fennel, sliced thin and cut into bite-size pieces
1 pound shrimp (about 15 medium size), peeled
1 teaspoon chopped fresh dill for garnish

Steps:

  • Make the vinaigrette: Combine hot mustard, olive oil and sherry vinegar, taste for seasonings.
  • Pour beer into deep saucepan and add garlic, dill sprigs and dash of salt and pepper. Bring to boil, reduce heat and simmer for l0 minutes.
  • While beer is simmering, heat olive oil in skillet over medium flame and add fennel. Cook fennel for about 7 minutes; it should "sweat" but remain crisp. Remove fennel to warm serving bowl. Keep warm.
  • Drop shrimp in pot with beer, turn heat to high, cover and cook for about a minute. Remove shrimp with slotted spoon, drain well and arrange over fennel. Pour vinaigrette over ingredients. Sprinkle with dill. Toss well, taste for seasoning and serve immediately.

Prosciutto-Wrapped Head-On Shrimp with a Warm Fennel, Radicchio and Grapefruit Salad image

1 Yukon gold potato, diced
Kosher salt
1 clove garlic, smashed
6 head-on shrimp (21/25 count)
3 ounces thinly sliced prosciutto
Olive oil, for cooking
1 small red onion, thinly sliced
2 tablespoons red wine vinegar
1/4 bulb fennel, cored and julienned, fronds reserved for garnish
1 grapefruit, cut into supremes (segments cut free of their membranes), juice reserved
Pinch red pepper flakes
1/2 head radicchio, cored and cut into chiffonade
Handful arugula

Steps:

  • Put the potatoes in a small, heavily salted pot of cold water with the smashed garlic. Bring the water to a boil, then cook until the potatoes are tender, 4 to 5 minutes. Drain and cool on a quarter sheet tray.
  • Using kitchen shears and starting below the head, slide a blade along the back of a shrimp until you reach the tail. Peel the skin off, being careful to keep the head and tail intact. Devein if necessary and very briefly rinse. Repeat with the remaining shrimp.
  • Wrap each piece of shrimp with a slice of prosciutto and secure with a toothpick. Thinly slice the remaining prosciutto and set aside.
  • Heavily coat a pan in olive oil and place over medium-high heat. Working in batches, saute the shrimp until the prosciutto is crisp and the shrimp has turned pink, about 2 minutes per side. Remove the shrimp from the pan and let cool, then remove the toothpicks.
  • Using the same pan and additional olive oil if necessary, fry the extra prosciutto slices until crisp, about 2 minutes. Turn down the heat to medium and add the potatoes. Cook for 2 minutes, then add the red onion. Cook until the onions are soft, about 4 minutes, then add the red wine vinegar and lightly mix. Turn the heat to low and add the fennel, reserved juice from the grapefruit and the red pepper flakes. Reduce for an additional minute or two. Add the radicchio and arugula and gently toss to coat. Season to taste.
  • Plate a large spoonful of warm salad and top with 3 pieces of shrimp. Garnish with a couple grapefruit supremes and fennel fronds. Repeat to make one more serving

WARM POLENTA AND OXTAIL CAKES ON FENNEL SALAD

2 to 3 cups leftover polenta
1/2 cup grated asiago cheese
1 cup minced oxtail meat
1/4 cup sliced green scallions
Salt and black pepper to taste
3 cups shaved fennel
Juice of 1 lemon
1/4 cup extra virgin olive oil
1 teaspoon coarse ground coriander seed
Salt and black pepper to taste
2 cups balsamic
1/2 cup Chinese vinegar

Steps:

  • Reheat polenta. Mix in cheese, oxtail and scallions. Check for seasoning. Mold in baking dish so polenta is at least 1-inch thick. Refrigerate overnight. Cut squares or circles and grill until hot. Can also saute in nonstick pan. Serve warm on top of fennel salad. Garnish with dark vinegar syrup and fennel sprigs.
  • Mix all in large bowl. Check for seasoning.

1 lemon
1 stalk fennel
3/4 teaspoon salt
1/2 cup red onion
12 radishes
3 tablespoons olive oil
2 tablespoons tarragon
2 tablespoons white wine vinegar
1 garlic clove
1/2 teaspoon pepper

Steps:

  • Fennel: salt it first and let sit for roughly 30 min, then squeeze out water.
  • Slice the red onions.
  • Thinly slice the radish.
  • Skillet: olive oil, lemon juice, white wine vinegar, red onion, garlic, fennel (order of putting things in skillet).
  • Once all in, cover & simmer until fennel is tender -- 30-40 minute.
  • Uncover and season and let simmer another 10 minute.
  • Plate mixed greens & radishes and top them with warm fennel salad.
  • ** Excellent with grilled salmon!
