2 crumb doughnuts or 2 glazed doughnuts
3 tablespoons butter
3 tablespoons golden brown sugar (packed)
2 teaspoons fresh lemon juice
3/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 tablespoon dark rum
2 small ripe bananas, peeled, cut on diagonal into 1/2-inch-thick slices
vanilla ice cream
toasted pecans

Steps:

  • Preheat broiler.
  • Place the doughnuts on small baking sheet; then set aside.
  • To make the caramel sauce: stir the butter and brown sugar in a heavy medium skillet over medium heat until the butter is melted.
  • Boil for 1 minute, stirring occasionally.
  • Remove from heat.
  • Mix in lemon juice and spices, then rum; stir to blend.
  • Cool caramel sauce 3 minutes.
  • Meanwhile, broil the doughnuts just until hot and bubbly, watching closely to avoid burning, 1 to 2 minutes per side.
  • Transfer the doughnuts to 2 dessert sized plates.
  • Gently toss bananas with caramel sauce in skillet, to coat.
  • Top doughnuts with a scoop of ice cream, flattening slightly in center.
  • Spoon bananas and caramel sauce over.
  • Sprinkle with nuts and serve.

1/4 cup butter
1 cup brown sugar
1/2 teaspoon cinnamon
4 bananas, cut in half,lengthwise,and then halved
1/4 cup dark rum
1/4 cup banana liqueur
4 scoops vanilla ice cream

Steps:

  • In a large skillet, over low heat, combine butter, sugar and cinnamon, stirring until sugar dissolves.
  • Add bananas, stirring gently until bananas begin to soften and brown.
  • Carefully add rum and liqueur, cooking until rum is hot.
  • Tip pan slightly and ignite rum.
  • When flames subside, remove bananas from pan and serve 4 pieces of banana with 1 scoop of ice cream Generously spoon warm sauce over top and serve immediately.

1 cup sugar
1 cup heavy cream

Steps:

  • Melt the butter in a saucepan over medium-high heat.
  • Add the sugar and cook, stirring occasionally, until sugar is melted and mixture is a deep amber color- about 4 to 6 minutes.
  • Remove from heat.
  • Gradually stir in cream.
  • Return to heat and cook until smooth, about 2 minutes.

6 tablespoons unsalted butter
1 ounce unsweetened baking chocolate, chopped
1 egg yolk, from a large egg
1 cup all-purpose flour
1 1/4 cups granulated sugar
2/3 cup unsweetened dutch cocoa
1 teaspoon baking powder
1/4 teaspoon salt
2 1/2 cups milk
2 teaspoons vanilla extract
1/3 cup packed light brown sugar
1 1/2 pints vanilla ice cream

Steps:

  • Heat oven to 350 degrees. You'll need a shallow baking dish.
  • Microwave butter and chocolate in a small bowl just until melted; stir with a whisk to combine, then stir in yolk until well blended.
  • Whisk flour, 3/4 cup granulated sugar, 1/3 cup cocoa, the baking powder and salt in a medium bowl until blended. Stir in 1/2 cup milk, the butter mixture and vanilla until smooth. Spread batter into an ungreased baking dish.
  • Mix remaining 1/2 cup granulated sugar, remaining 1/3 cup cocoa and the brown sugar in a small bowl with fingers or a fork until blended. Sprinkle over batter.
  • Heat remaining 2 cups milk in microwave just until simmering. Slowly pour over mixture in baking dish--Don't Stir.
  • BAke 45 minutes. Spoon into dessert bowls. Top each serving with a small scoop of ce cream. Serve immediately or pudding layer will be absorbed by cake layer.
