BLACKENED STEAK BITES WITH BLUE CHEESE SAUCE
This recipe is similar to an appetizer served at my favorite Italian restaurant. It is a nice change from the usual appetizers and always gets rave reviews! I have used tenderloin in the past, but have found that a good quality top sirloin works very well and is less expensive. Bernaise sauce is a good alternative if you don't like blue cheese.

Steps:
- Season sirloin with blackened seasoning to coat on all sides.
- Heat oil in a cast-iron skillet on an outdoor grill until the oil is smoking. Cook steak bites in hot oil in small batches, reheating oil between batches, until slightly crusty, 1 to 2 minutes per side.
- Stir cream cheese and evaporated milk together in a saucepan over low heat to melt the cream cheese. Whisk blue cheese crumbles, garlic powder, white pepper, and cayenne pepper into the cream cheese mixture; simmer, stirring frequently, until the blue cheese melts into a smooth sauce, 2 to 3 minutes. Serve blue cheese sauce with the beef bites.

WARM BLUE CHEESE DIP

Steps:
- Preheat oven to 350.
- In nonstick skillet, cook bacon over medium-high heat about 8 minutes or until nearly crisp.
- Drain bacon and wipe skillet dry.
- Return bacon to pan, add garlic, and cook over medium heat until bacon is crisp (about 3 minutes).
- Make sure garlic doesn't burn.
- Drain on paper towels.
- Using paddle attachment of electric mixer, beat cream cheese in bowl until smooth.
- Add cream. Beat well to mix.
- Fold in bacon, garlic, blue cheese, and chives.
- Transfer to a 2-cup baking dish.
- Top evenly with almonds.
- Bake about 30 minutes or until heated through.
- Serve with crackers, baguette slices, or vegetables.
WARM BLUE CHEESE DIP WITH GARLIC AND BACON
Even people that don't like blue cheese love this wonderful hot dip. It can be served with vegetables, but I find that people like it best with French bread.

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon from skillet, drain on paper towels and crumble.
- Place garlic in hot bacon grease. Cook and stir until soft, about 1 minute. Remove from heat.
- Preheat oven to 350 degrees F (175 degrees C). Place cream cheese and half-and-half in a medium bowl. Beat with an electric mixer until blended. Stir in bacon, garlic, blue cheese and chives. Transfer mixture to a medium baking dish.
- Bake covered in the preheated oven 30 minutes, or until lightly browned.

SPICY MOLTEN BLUE CHEESE DIP
Hot and savory and almost fondue-like, this blue cheese dip has a zippy flavor that works just as well with tortilla chips as it does with bell pepper strips, and keeps you coming back for more.

- Preheat oven to 325 degrees. Place cream cheese in bowl of a food processor and pulse to soften.
- Using a mortar and pestle or flat part of a knife, mash garlic and salt together until it forms a paste. Place paste in food processor along with cream, mayonnaise, Worcestershire sauce, hot sauce and pepper. Run motor until mixture is smooth. Add blue cheese and chives and pulse just to combine.
- Scrape mixture into a small (1-quart or smaller) gratin dish or baking pan, and bake until dip is melted and bubbling, 30 to 40 minutes. Sprinkle extra hot sauce on top, if desired, and serve hot or warm, with celery sticks and chips or chicken wings if you like.

- Preheat oven to 325°F. Place both cheeses, shallots, garlic, cream, Worcestershire, 1/2 teaspoon salt, and 1/4 teaspoon pepper in the bowl of a food processor; blend until smooth, scraping down bowl as needed.
- Transfer to an 8-inch gratin dish or other shallow baking dish. Bake until heated through and lightly browned in places, 20 to 25 minutes (if heated through but not browned, broil 30 to 60 seconds).
