BLACKENED STEAK BITES WITH BLUE CHEESE SAUCE



Blackened Steak Bites with Blue Cheese Sauce image

This recipe is similar to an appetizer served at my favorite Italian restaurant. It is a nice change from the usual appetizers and always gets rave reviews! I have used tenderloin in the past, but have found that a good quality top sirloin works very well and is less expensive. Bernaise sauce is a good alternative if you don't like blue cheese.

1 ½ pounds beef top sirloin, trimmed and cut into bite-size pieces
2 tablespoons blackened seasoning (such as Chef Paul Prudhomme's® Blackened Steak Magic®), or more to taste
2 tablespoons vegetable oil
1 (3 ounce) package cream cheese
3 tablespoons evaporated milk
8 ounces blue cheese crumbles
½ teaspoon garlic powder
¼ teaspoon ground white pepper
¼ teaspoon cayenne pepper

Steps:

  • Season sirloin with blackened seasoning to coat on all sides.
  • Heat oil in a cast-iron skillet on an outdoor grill until the oil is smoking. Cook steak bites in hot oil in small batches, reheating oil between batches, until slightly crusty, 1 to 2 minutes per side.
  • Stir cream cheese and evaporated milk together in a saucepan over low heat to melt the cream cheese. Whisk blue cheese crumbles, garlic powder, white pepper, and cayenne pepper into the cream cheese mixture; simmer, stirring frequently, until the blue cheese melts into a smooth sauce, 2 to 3 minutes. Serve blue cheese sauce with the beef bites.

8 slices hickory smoked bacon, diced
2 garlic cloves, minced
8 ounces cream cheese, softened
1/4 cup heavy cream
4 ounces blue cheese, crumbled
2 tablespoons fresh chives, chopped
2 tablespoons almonds, chopped
cracker
assorted fresh vegetable (trimmed and sliced)
baguette (sliced)

Steps:

  • Preheat oven to 350.
  • In nonstick skillet, cook bacon over medium-high heat about 8 minutes or until nearly crisp.
  • Drain bacon and wipe skillet dry.
  • Return bacon to pan, add garlic, and cook over medium heat until bacon is crisp (about 3 minutes).
  • Make sure garlic doesn't burn.
  • Drain on paper towels.
  • Using paddle attachment of electric mixer, beat cream cheese in bowl until smooth.
  • Add cream. Beat well to mix.
  • Fold in bacon, garlic, blue cheese, and chives.
  • Transfer to a 2-cup baking dish.
  • Top evenly with almonds.
  • Bake about 30 minutes or until heated through.
  • Serve with crackers, baguette slices, or vegetables.

7 slices bacon
2 cloves garlic, peeled and minced
1 (8 ounce) package cream cheese, softened
¼ cup half-and-half
4 ounces blue cheese, crumbled
2 tablespoons chopped fresh chives

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon from skillet, drain on paper towels and crumble.
  • Place garlic in hot bacon grease. Cook and stir until soft, about 1 minute. Remove from heat.
  • Preheat oven to 350 degrees F (175 degrees C). Place cream cheese and half-and-half in a medium bowl. Beat with an electric mixer until blended. Stir in bacon, garlic, blue cheese and chives. Transfer mixture to a medium baking dish.
  • Bake covered in the preheated oven 30 minutes, or until lightly browned.

1 8-ounce package cream cheese
2 garlic cloves, minced
1 pinch kosher salt
1/4 cup heavy cream or half and half
1/4 cup mayonnaise
1 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce, more for serving if desired
1/4 teaspoon freshly ground black pepper
4 ounces blue cheese (about 1 cup, crumbled)
2 tablespoons chopped chives
Celery sticks, chips or chicken wings, for serving

Steps:

  • Preheat oven to 325 degrees. Place cream cheese in bowl of a food processor and pulse to soften.
  • Using a mortar and pestle or flat part of a knife, mash garlic and salt together until it forms a paste. 3 ounces Danish blue cheese, crumbled (3/4 cup)
2 shallots, chopped

Medjool dates, raisins, pepitas, and sliced or slivered almonds, for decorating
