This is my husband's favorite cookie. I always double the recipe so I have some for the kids because DH eats them as fast as they cool.

1/2 cup butter, softened
3 ounces cream cheese, softened
1 tablespoon milk
1 cup sugar
1/2 teaspoon vanilla
1 cup flour
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 375°F.
  • In a mixing bowl, beat together butter, cream cheese and milk.
  • Beat in sugar and vanilla.
  • Gradually mix in flour. Stir in walnuts.
  • Drop by tablespoonful 2-inches apart on to ungreased cookie sheets.
  • Bake at 375°F for 10 minutes or until edges begin to slightly brown.

4 cups all-purpose flour
1 -1 1/4 teaspoon coarse salt (like kosher salt)
2 cups unsalted butter, softened
6 ounces cream cheese (not whipped)
1 1/4 cups sugar
2 tablespoons pure vanilla extract
1/2 teaspoon pure vanilla extract
2 1/2 cups walnut halves (1 1/2 cups toasted and coarsely chopped, 1 cup finely chopped)

Steps:

  • Whisk together flour and salt in a large bowl; set aside.
  • Mix butter and cream cheese on medium speed until pale and fluffy, about 2 minutes. Mix in sugar and vanilla. Reduce speed to low. Add flour mixture, and mix until just combined (do not overmix). Mix in toasted walnuts.
  • Transfer dough to a work surface. Divide in half; shape each half into an 8 1/2-inch long log about 2 inches in diameter. Wrap each log in parchment paper; freeze until firm, about 30 minutes or up to 2 weeks.
  • Preheat oven to 350 with racks in upper and lower thirds. Unwrap 1 log, and roll in 1/2 cup chopped walnuts, coating completely. Cut into 1/4-inch-thick rounds. Space 1 inch apart on baking sheets lined with parchment paper.
  • Bake cookies, rotating halfway through, until golden around edges, 18 to 20 minutes. Let cool on sheets on wire racks. Repeat with remaining log and remaining 1/2 cup chopped walnuts.

This has been a favorite Christmas cookie for years -- a bit of trouble to make but well worth it. Melt in your mouth goodness.

½ cup butter, softened
1 (3 ounce) package cream cheese
1 egg, separated
1 teaspoon vanilla extract
1 teaspoon lemon zest
¼ teaspoon salt
1 cup sifted confectioners' sugar
1 cup sifted all-purpose flour
1 cup finely chopped walnuts
¼ cup apricot preserves

Steps:

  • Cream butter, cream cheese, egg yolk, vanilla, lemon peel and salt until fluffy. Gradually mix in confectioners' sugar, then the flour to make stiff dough.
  • Chill dough for 2 hours.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Shape dough into 30 - one inch balls.
  • Beat egg white until foamy. Dip balls in egg white then roll in chopped nuts. Arrange 2 inches apart on ungreased cookie sheet and make a depression in each with your thumb.
  • Bake for 12-15 minutes, until cookies begin to brown on the bottoms. Carefully remove to wire rack and while hot fill each depression with 1/2 teaspoon of apricot preserves or your favorite jam.

Hubby loves these chocolate cookies with white chocolate chips and walnuts. They have a cake-like texture and use chocolate pudding as the "chocolate" ingredient. The cookie yield is based on teaspoon sized cookies, which is quite small (these do not spread much at all), so I actually drop mine by Tablespoons, which yields around 2 dozen, give or take a few.

1 cup margarine or 1 cup butter, softened
1/4 cup sugar
3/4 cup packed brown sugar
1 teaspoon vanilla
2 eggs
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1 (4 ounce) box instant chocolate pudding mix
6 ounces white chocolate chips
6 ounces chopped walnuts

Steps:

  • Preheat oven to 350 degrees (F).
  • In a large mixing bowl, combine butter or margarine and sugars. Beat until creamy.
  • Add vanilla and eggs and beat well.
  • In a small bowl, stir together flour, baking powder and dry pudding mix. Add to margarine mixture and blend well.

1 cup butter, softened
1 package (8 ounces) cream cheese, softened
2-1/2 cups all-purpose flour
FILLING:
3 large egg whites
3/4 teaspoon vanilla extract
1/3 cup sugar
3-1/2 cups ground walnuts
Confectioners' sugar

Steps:

  • In a large bowl, cream butter and cream cheese until blended. Gradually beat flour into creamed mixture. Divide dough into 3 portions. Shape each into a disk. Wrap and refrigerate 1 hour or until firm enough to roll., Preheat oven to 375°. For filling, in a small bowl, beat egg whites and vanilla on medium speed until foamy. Gradually add sugar, 1 tablespoon at a time, beating on medium after each addition until well blended. Stir in walnuts., Generously coat a work surface with confectioners' sugar. Roll 1 portion of dough into a 12-in. square about 1/8 in. thick, sprinkling with additional confectioners' sugar as necessary to coat well.
