1 cup granulated sugar
1/4 cup cocoa powder
1/4 cup milk
3 tablespoons butter
1/2 teaspoon vanilla

Steps:

  • In a saucepan over med heat combine butter, sugar, milk, and cocoa.
  • Melt, and bring to a boil.
  • When it has bubbles all the way across the top of surface now time.
  • Boil hard one minute only.
  • Remove from heat, add vanilla.
  • let cool slightly, stir and beat until its like very thick corn syrup, and sticky to bottom of pot. I always use a spoon, so I can tell how it is thickening up.
  • Pour over brownies or cake.

1 cup unsalted butter
2 cups granulated sugar
4 large eggs

1 cup ground cocoa powder, sweetened
¼ teaspoon salt
1 cup semi-sweet chocolate chips
1 cup chopped walnuts
½ cup unsalted butter
1/3 cup cocoa powder, unsweetened
1-1½ cups powdered sugar
2-3 tablespoons whole milk

Steps:

  • Place the top oven rack in the center position and pre-heat the oven to 350°F. Line an 8×8-inch baking pan with parchment paper and spray with non-stick cooking spray. Set aside.
  • Cream the butter and sugar in a large mixing bowl. Add the eggs and vanilla and mix until combined.
  • Add the flour, cocoa powder, and salt to a large bowl and stir to combine. Slowly add the dry ingredients to the wet until just combined. (Do not over mix or the brownies will turn out "cakey").
  • Stir the chocolate chips and walnuts into the batter and transfer to the prepared baking pan. Spread into an even layer and transfer to the pre-heated oven.
  • Bake for 22-26 minutes or until a toothpick inserted into the center comes out clean. Brownies will still be soft and will finish setting while they cool.
  • To prepare the frosting, mix the butter with the cocoa powder and 1 cup powdered sugar. Add in one tablespoon of milk at a time until desired consistency is reached. If necessary, add the remaining ½ cup powdered sugar to thicken.
  • Once cool, spread frosting on top of the brownies before slicing and serving. Enjoy!

1 cup white sugar
¼ teaspoon salt
½ cup all-purpose flour

⅛ teaspoon baking powder
⅛ teaspoon salt
1 cup white sugar
½ cup butter, softened

2 (1 ounce) squares unsweetened baking chocolate, melted

1 cup coarsely chopped walnuts

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease an 8x8-inch square pan.

BROWNIE LOAF
3/4 c butter - softened
3/4 c packed brown sugar
3/4 c granulated sugar
1 tsp vanilla extract
2 eggs
1 3/4 c unsifted all-purpose flour
1/2 c hershey's cocoa
1 tsp baking powder
1/2 tsp baking soda
8 oz plain yogurt - room temprature
1 c walnuts - chopped
COCOA FUDGE FROSTING
1/4 c butter
1/4 c hershey's cocoa
1 1/2 c powdered sugar
3 Tbsp milk
1/2 tsp vanilla extract
1/4 c walnuts-coarsely chopped

Steps:

  • 1. BROWNIE LOAF Cream butter, sugars, and vanilla.
  • 2. Add eggs one at a time, beating until mixture is light and fluffy.
  • 3. Combine dry ingredients. Add to creamed mixture in thirds alternately with yogurt.
  • 4. Stirr in chopped walnuts. Pour into greased and floured 9"x 5"x 3" loaf pan.
  • 5. Bake at 350 degrees for 65-75 minutes or until cake springs back when lightly touched with fingertip (top may be cracked). Cool in pan 10 minutes. Invert onto wire rack and cool completely.
  • 6. Frost with Cocoa Fudge Frosting
  • 7. COCOA FUDGE FROSTING Melt butter. Combine with sugar, milk, and vanilla; beat until smooth and creamy, adding additional powdered sugar if necessary for spreading consistency. After brownie loaf is frosted decorate with chopped walnuts.

This is a great make-ahead frosting which can be refrigerated up to 2 weeks or frozen up to 3 months. Makes enough frosting for 2-8", 2-9" or 1 - 13x9 cake. Cook time includes cooling time.
