GRANDMA'S RICE PUDDING

My sisters and I always loved the recipe for rice pudding our grandma made. After she passed away, I took it upon myself to try and find the secret to her rice pudding. It took quite a bit of experimentation, but I finally got it right! And I'm glad to share this easy recipe here. -Margaret DeChant, Newberry, Michigan

1-1/2 cups cooked rice
1/4 cup raisins
2 large eggs
1-1/2 cups whole milk
1/2 cup sugar
1/2 teaspoon ground nutmeg
Additional milk, optional

Steps:

  • Place rice and raisins in a greased 1-qt. casserole. In a small bowl, whisk the eggs, milk, sugar and nutmeg; pour over rice. , Bake, uncovered, at 375° for 45-50 minutes or until a knife inserted in the center comes out clean. Cool. Pour milk over each serving if desired. Refrigerate leftovers.

This thick and creamy old fashioned rice pudding is the same recipe that your Grandma used to make with warm cinnamon and plump raisins.

4 cups whole milk
1 cup RiceSelect Jasmati rice (uncooked)
1 teaspoon cinnamon
1/2 teaspoon salt
3 tablespoons sugar
1 tablespoon cornstarch
1/4 cup raisins

Steps:

  • Add milk to a large saucepot and whisk in cinnamon, salt and sugar until thoroughly combined. Bring milk to a gentle boil over medium heat, whisking occasionally. Keep a close eye being careful not to scorch the milk.
  • Meanwhile, place rice in a mesh strainer and rinse until water comes out clear - about 2 minutes.
  • When the milk comes to a boil, add rice then simmer on low for 20-25 minutes until liquid is mostly absorbed.
  • Using a fork, mix cornstarch with a few tablespoons of cold water then add to the pot. Continue cooking the pudding until the mixture begins to thicken - about 1-2 minutes.
  • Stir in raisins then remove from the heat. Divide pudding evenly between 6 small ramekins or dessert dishes. Serve warm, at room temperature or refrigerate until cold.

2 cups cooked rice
1/2 cup granulated sugar
2 large eggs, slightly beaten
2 cups milk
1/2 teaspoon vanilla extract
1/4 cup raisins
1/2 teaspoon ground cinnamon
Cinnamon sugar, for garnish

Steps:

  • Gather the ingredients. Preheat the oven to 350 F (180 C, Gas 4). Butter a shallow 1 1/2- to 2-quart baking dish, or spray it with nonstick cooking spray.
  • In a large mixing bowl, combine the rice with the granulated sugar, the beaten eggs, milk, vanilla extract, raisins, and ground cinnamon. Blend well with a spoon.
  • Pour the mixture into the prepared baking dish.

I'm always cutting out recipes to try, but always changing them to suit my own taste. I like recipes that use ingredients that you usually have on hand and is fast and easy...and of course taste gooood! This low calorie rice pudding has been family tested and approved and can be whipped up in no time.

3 eggs, beaten
1 1/2 c low fat (i use skim)
1/6 c brown sugar (splenda), firmly packed, (1/3 cup, if using regular brown sugar)
1 tsp vanilla extract
1/4 tsp almond extract, optional (i have used before, but not necessary)
1 tsp cinnamon, ground
1 c brown rice, cooked ( i use instant brown rice, for shorter cooking time)
1/2 c raisins
1/2 c walnut pieces

Steps:

  • 1. Combine eggs, milk, sugar, vanilla and cinnamon in a mixing bowl. Beat until well combined (but not foamy).Stir in rice, raisins and walnuts. Pour into a 1 1/2 quart ovenproof dish. Place dish in a larger baking dish or pan. Pour boiling water into the backing dish (being careful not to get water in the pudding mixture) to a depth of approx. 1 inch.
  • 2. Bake in preheated 350 degree oven for 45 to 55 minutes, until a knife inserted near center comes out clean.Serve warm or at room temperature. Garnish with whipped topping or ice cream.
  • 3. Note: You can, also use dried cherries or craisins. Pecans or Almonds for a change or whatever you happen to have on hand.

2 c cooked and cooled rice
2 large eggs
2 c half and half
1/2 c +2 tablespoons sugar
1/2 tsp cinnamon
1/8 tsp nutmeg
1 pinch salt
1/3 c raisins
2 Tbsp chopped walnuts
1/2 tsp pure vanilla extract
2 Tbsp softened butter
29oz. can(s) peach halfs

  • 1. Pre-heat oven 350 degrees. Rub a 8x8 glass dish with the softened butter. Spread rice in dish sprinkle evenly raisins then walnuts over .
  • 2. In medium bowl -Stir cinnamon, salt ,nutmeg in with sugar whisk in milk, eggs ,and vanilla until sugar is dissolved ,pour over rice.
  • 3. Place 8x8 dish in larger dish add very hot water slowly half way up . Bake 65 minutes. serve hot or cold on a well drained peach sprinkle more nuts on if you like.

1 strip orange peel, 1-inch wide
1/3 cup golden raisins
Crème fraîche, for serving (optional)

Steps:

  • In a medium heavy-bottom pot, combine milk, cream, sugar, rice and salt. Scrape in seeds from vanilla bean and drop them in along with the pod. Stir in cinnamon and orange peel. Bring mixture to a simmer; cook over medium-low heat, stirring frequently until rice is tender and mixture is slightly thickened, 30 to 40 minutes. Do not let mixture come to a boil and don't let it get too thick, because it will thicken as it cools. Stir in raisins and let pudding rest for 5 minutes to soften them.
  • Serve pudding warm, room temperature or chilled, with dollops of crème fraîche, if desired.

3/4 cup raisins
3 tablespoons bourbon, such as Makers Mark
3/4 cup white basmati rice
1/2 teaspoon kosher salt
5 cups half-and-half, divided
1/2 cup sugar
1 extra-large egg, lightly beaten
1 teaspoon pure vanilla extract
1/4 cup pure maple syrup, plus extra for serving (optional)
1/2 teaspoon natural maple flavoring
3/4 cup toasted pecans, chopped

Steps:

  • In a small bowl, combine the raisins and bourbon. Set aside.
  • Combine the rice and salt with 1 1/2 cups water in a medium heavy-bottomed stainless steel saucepan. Bring it to a boil, stir once, and simmer, covered, on the lowest heat for 8 to 9 minutes, until most of the water is absorbed. (If your stove is very hot, pull the pan halfway off the burner.)
  • Stir in 4 cups of half-and-half and the sugar and bring to a boil. Simmer uncovered for 25 to 30 minutes, until the rice is very soft and the pudding is thick. Stir often, particularly toward the end. Slowly stir in the beaten egg and continue to cook for 1 minute. Off the heat, add the remaining cup of half-and-half, the vanilla, maple syrup, maple flavoring, and the raisins with any remaining bourbon. Stir well. Pour into a bowl, and place a piece of plastic wrap directly on top of the pudding to prevent a skin from forming. Cool slightly, add the pecans, and serve warm or chilled. Drizzle each serving with extra maple syrup, if desired.
