2.5 litres of mixed soft fruit (blackberries, raspberries, strawberries, blueberries, red currants, kiwi)
5 shots of vodka
2 sachets of gelatine, in powdered form
425ml of water
225g caster sugar

Steps:

  • 1. Divide the ripe fruit into 5 small glasses. If possible, arrange the kiwi fruit at the top. Pour a shot of vodka into each glass, and place all the glasses on a tray and chill in the refrigerator. 2. Put the vegetable gel powder in hot water (not boiling) and add sugar, stirring until dissolved. 3. Remove the bowl from the heat, and let it sit at room temperature for a minute or two. 4. Remove the chilled fruit, still in the glasses, from the refrigerator, and pour the dissolved mix over your fruit. 5. Some of the fruit might rise to the top, so using your finger, just push the fruit down into the jelly mix so that it is sealed and will then keep well in the refrigerator. 6. Place in iced bain-marie or in the refrigerator for an hour to set. 7. To serve, dip the glass in to a bowl of hot water to loosen the outside of the jelly, then turn it out onto a plate. On the plate put an arrangement of mixed fruit and dust with a touch of icing sugar. 8. Put the jelly in the middle and serve with cold cream to cover the bottom of the plate around the outside

Yield makes about 15 watermelon wedges

2kg watermelon , halved lengthways
50g caster sugar
20 gelatine sheets, soaked in cold water
300ml vodka

Steps:

  • First, use a serrated knife to cut around the flesh of your watermelon halves. Use an ice cream scoop or large spoon to remove all the flesh, including the pips, into a large bowl. Transfer to a blender or food processor and blitz until smooth.
  • Strain the pulp through a fine sieve into a large bowl to extract all the juice. You should be left with about 800ml of watermelon juice. Meanwhile, put the watermelon halves in a medium roasting tin lined with kitchen paper. Make sure the watermelon fits in snugly so it's easily transferable to the fridge.
  • Pour 50ml of the juice into a small saucepan and bring to the boil. Once boiling, add the sugar and leave to dissolve for 2 mins. Once cooled a little, squeeze out the soaked gelatine leaves and stir through the warm watermelon juice to dissolve. Once fully dissolved, combine with the rest of the watermelon juice and add the vodka.
  • Ladle equal amounts of the juice into each watermelon half. Transfer to the fridge to set for at least 4 hours, preferably overnight. When ready to serve, use a serrated knife to cut the watermelon into about 15 wedges. Serve with a warning: these contain lots of vodka!

Add a touch of whimsy to your next cocktail party with jelly bean martinis made with cotton candy-flavored vodka, orange-flavored liqueur and colorful jelly beans.

3 oz (6 tablespoons) cotton candy-flavored vodka
1/4 cup red and pink jelly beans
Ice
2 oz (1/4 cup) orange-flavored liqueur (or your favorite flavor)
6 red or pink jelly beans
2 lemon slices

Steps:

  • One hour before serving, place 2 martini glasses in refrigerator. In small bowl, pour vodka over 1/4 cup jelly beans. Cover; refrigerate.
  • At serving time, fill martini shaker with ice. Shake bowl with cold vodka and jelly beans. Strain vodka into shaker; discard jelly beans. Add liqueur; shake well. Strain into 2 chilled martini glasses. To garnish, add 3 jelly beans to bottom of each glass. Garnish each with lemon slice. Serve immediately.
