VIRGINIA BAKED / HAM SALAD
This was my quick lunch. Could easily feed two. I like ham salad, and especially with good ham. I buy blocks of Virginia Baked Ham and use it for this, and chop it up in my chef salads. You could easily double the recipe for more servings. Normally I add a hard boiled egg, didn't have any prepared to use today. This took a total of 5 minutes to whip together... Enjoy! My photos

Steps:
- Place ham, pickle, onion and egg if using into food processor. Pulse till all is chopped fairly fine.
- Scoop into bowl, add cheese, mayo, mustard , egg, pepper and stir until well combined. Eat with greens on a plate, or use in a sandwich. It's delicious either way. I have this typically for a low carb lunch. Enjoy!
- I have also spread this on buns, and broiled in the oven, the cheese melts and makes it a delicious ham salad melt sandwich..

Steps:
- Combine ham, celery, pickle relish, eggs, mayo and mustard; mix well. Chill.
- Cut tops from tomatoes; scoop out pulp, leaving shells intact.
- Sprinkle inside of each tomato with 1/8 teaspoons salt, invert on paper towels; drain.
- Spoon ham salad into tomato shells.
- Serve on lettuce leaves.

VIRGINIA HAM SALAD RECIPE - THE SEASONED MOM
This ham salad recipe combines leftover ham with a creamy mayonnaise dressing. It's perfect for a sandwich or as a spread with crackers!

- In the bowl of food processor or blender, combine ham, egg, green onions, celery, and chives. Pulse until the ingredients are very finely chopped, scraping down the sides and stirring as necessary.
- In a large bowl, whisk together mayonnaise, Dijon mustard, pickle relish, and Worcestershire sauce. Add the ham mixture and stir to combine. Taste and season with salt and pepper, if desired.
- Cover and chill for at least 30 minutes before serving. Serve with assorted crackers or on sandwiches.
