2 cups self-rising flour
4 tablespoons butter
1 cup buttermilk
4 ounces thinly sliced cooked country ham

Steps:

  • Heat oven to 425°F
  • Sift flour into a large bowl; mix in butter until the mixture has the consistency of cornmeal. Using a wooden spoon, stir in buttermilk to form a dough. Transfer dough to a floured work surface; knead briefly until smooth.
  • Roll dough into a 1/4" thick rectangle. Cut dough into twelve 4"x3" rectangles; transfer to a baking sheet. Bake until golden brown, about 15-20 minutes. Cool slightly.
  • To serve, slice biscuits and stuff with ham.

This recipe is from the Edwards family of Edwards Virginia Smokehouse in Surry, VA, the heart of Virginia ham country. My friends and family request it at every gathering. It can be made as full size ham biscuits to pair with sides or as appetizer size. Although it calls for Virginia ham, I use less salty honey ham. Either way it is delicious! Depending on how much ham and cheese you put in each roll, you may want to buy 3 dozen rolls. Enjoy!

3/4 lb virginia ham or 3/4 lb honey-roasted ham, sliced paper thin
1/2 lb swiss cheese
2 dozen pepperidge farm Parker House Rolls or 2 dozen pepperidge farm party rolls
1/2 cup butter, melted
1 -2 tablespoon mustard
2 tablespoons Worcestershire sauce
1 tablespoon dried minced onion
1 tablespoon poppy seed

Steps:

  • Line 13 x 11-inch pan with foil that has been lightly greased. Place rolls that have been filled with ample ham slices and Swiss cheese on the foil lined pan. Place rolls very close together.
  • Mix the rest of the ingredients and spoon the sauce over the top of the rolls.
  • Cover with foil and refrigerate for several hours. However, can be baked immediately. When ready to bake, preheat oven to 350°. Remove foil cover and bake for approximately 30 minutes. Watch carefully that they do not scorch. Can be made early in the day for last minute heat up before guests arrive.
