Avocado and Spicy Greens with a Pistachio Oil Vinaigrette image

This is another simple salad that I really enjoy whenever avocados are at their peak. I'm a firm believer that the only avocado to buy is the Haas variety! Pistachio oil is a darker, denser oil with a deep flavor.

Number Of Ingredients 6

2 medium firm-ripe avocados
4 cups moderately packed mixed young savory greens such as arugula, red mustard,
mizuna, cress, etc.
Pistachio oil vinaigrette (recipe follows)
Garnish: Very thinly sliced parsnips which have been deep-fried until golden and crisp,
if desired. These can be done 1 or 2 hours ahead.

Steps:

  • Peel, halve and pit the avocados. Toss the greens with the vinaigrette and arrange on chilled plates. Slice the avocado halves into fans and arrange on top along with parsnip chips if using. Serve immediately.
  • PISTACHIO OIL VINAIGRETTE:
  • Whisk lemon juice, shallots and honey together until honey is dissolved. Slowly whisk in pistachio oil and season to taste with salt and pepper. Store covered and refrigerated up to 2 days. Yield: 1/2 cup

Dressing:
1 1/2 Tbsp Dijon mustard
1 Tbsp lemon juice, freshly squeezed
4 Tbsp olive oil
3/4 tsp kosher salt
1/4 tsp ground paper, freshly ground
Salad
1 (8 ounce)bag mixed baby greens
2 avocados, ripe and sliced into wedges
parmesan cheese, shavings if desired (to garnish)

Steps:

  • Whisk together mustard, lemon juice, olive oil, salt and pepper to make a vinaigrette. Pour about 3/4 of vinaigrette into large bowl. Add baby greens mix and toss to combine. If serving family-style, add avocados and lightly toss to coat avocados. For individual servings, place dressed greens onto plate. Place 4-6 avocado wedges on greens. Sprinkle with ground black pepper and parmesan shavings, if desired. Serve extra dressing on the side for those wanting more.

1/3 cup pistachio nuts

  • In small bowl, beat all Balsamic Vinaigrette ingredients with wire whisk until smooth.

This is an experimental concoction I threw together with stuff that made some sense at the time. For a variation, add diced tomato.

½ cup avocado oil
¼ cup olive oil
¼ cup white vinegar
1 teaspoon lemon juice, or more to taste
1 teaspoon sesame oil, or more to taste
1 avocado - peeled, pitted, and coarsely chopped
4 cloves garlic, minced
1 teaspoon ground cumin
salt and ground black pepper to taste

Steps:

  • Pour avocado oil, olive oil, vinegar, lemon juice, and sesame oil into a blender. Cover and blend until smooth and emulsified, about 2 minutes. Add avocado; blend well to combine, about 2 minutes. Add garlic and cumin; blend until vinaigrette flavors are combined, about 1 minute. Season with salt and pepper.
  • Transfer vinaigrette to a container; chill in the refrigerator for 1 hour. Shake well before using.

Bright flavors! This is a modification of a Barefoot Contessa recipe. Hers called for endive and more avocados, serving one avocado per person. Mine is more of a tossed and assembled salad using baby greens and fewer avocados. It is a highly requested favorite around our home!
