VIDALIA® ONION DIP

A cheesy dip for the onion lover in all of us. I serve it with crackers but you can also use breadsticks. Be careful about over-baking as the cheese will harden and be difficult to dip crackers in.

1 tablespoon butter, or as needed
1 ¼ cups chopped sweet onion (such as Vidalia®)
⅔ cup mayonnaise
2 cups shredded Swiss cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a skillet over medium heat. Cook and stir sweet onion in hot butter until browned, 5 to 7 minutes; transfer to a bowl. Add mayonnaise to the onion and stir; pour into a 9x13-inch baking dish. Sprinkle Swiss cheese over the mixture.
  • Bake in preheated oven until the top is bubbling and lightly golden, about 35 minutes.

3 cups chopped Vidalia or other sweet onion (about 1 large)
2 cups shredded Swiss cheese
2 cups mayonnaise
1/4 cup prepared horseradish
1 teaspoon hot pepper sauce
Fresh coarsely ground pepper, optional
Assorted crackers or fresh vegetables

Steps:

  • Preheat oven to 375°. In a large bowl, mix the first five ingredients. Transfer to a deep-dish pie plate., Bake, uncovered, 25-30 minutes or until edges are golden brown and onion is tender. If desired, sprinkle with pepper. Serve warm with crackers.

Ever since my friend Sonja made this and brought it into work, it is my signature appetizer dish to take to parties! I tweaked it a little to my taste. It is the first appetizer to go and everyone will be asking for the recipe! Serve with crackers or sliced bread. Absolutely delicious!

1 large sweet onion (such as Vidalia®), finely chopped
1 ½ cups mayonnaise
1 ½ cups shredded Cheddar cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Stir onion, mayonnaise, Cheddar cheese, and sugar together in a pie plate.

CARAMELIZED VIDALIA ONION DIP

1 tablespoon olive oil
1 large Vidalia onion, very thinly sliced
1/4 cup water
One 8-ounce package cream cheese, at room temperature
1/2 cup mayonnaise
1/4 cup sour cream
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic salt
1/2 teaspoon onion powder
1/2 teaspoon freshly ground black pepper
1 scallion, green part only, thinly sliced
Chips, for serving

Steps:

  • Heat the olive oil in a medium skillet over medium-high heat. Add the onions and saute until beginning to brown, 5 to 7 minutes. Stir in the water and scrape up any brown bits from the bottom of the pan. Turn the heat to low and cook until the onions are golden brown, 30 to 35 minutes, stirring occasionally. If the pan ever looks too dry, add a tablespoon of water. Let cool completely.
  • Combine the cream cheese, mayonnaise, sour cream, Worcestershire, garlic salt, onion powder and pepper in a medium bowl. Beat until smooth with an electric mixer. Stir in the reserved onions and the scallions. Chill until serving time. Serve with chips.

1 tablespoon extra-virgin olive oil
1 large Vidalia onion, very thinly sliced
8 ounces cream cheese, at room temperature
1/2 cup mayonnaise
1/4 cup sour cream
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic salt
1/2 teaspoon onion powder
Freshly ground pepper
1 scallion (green part only), thinly sliced, plus more for topping
Vegetables (roasted and raw), for serving

Steps:

  • Heat the olive oil in a medium skillet over medium-high heat. Add the onion and saute until beginning to brown, 5 to 7 minutes. Stir in 1/4 cup water and scrape up any browned bits from the bottom of the pan. Turn the heat to low and cook until the onion is golden brown, 30 to 35 minutes, stirring occasionally.
