- In a small saucepan over moderate heat combine vinegar, sugar, Worcestershire and pepper. Allow sugar to dissolve in vinegar and liquids to come to a bubble. Remove sauce from heat and whisk in tomato sauce, then extra-virgin olive oil. Let dressing stand.
- Arrange sliced tomatoes and onions on a serving platter. Season tomatoes and onions with salt, to taste Pour dressing over the tomatoes and onions and garnish with chopped parsley.

Steps:
- 1. Peel the onion and place it in a microwave safe bowl with a 1/4 cup of water. Microwave for four minutes.
- 2. Discard the water, and allow the onion to cool to room temperature. Add the onion and all other ingredients to a blender. Blend on low until well mixed.
- 3. Chill for two hours before serving. Keep leftovers refrigerated.
SWEET VIDALIA ONION SALAD DRESSING
Steps:
- Slice 1/2 inch off both ends of onion. Pierce onion skin in several places with a sharp knife. Place onion in microwave-proof bowl. Add a bit of water. Microwave 3 to 4 minutes until soft. Set aside to cool. When cooled, peel and place in food processor. Puree until smooth. Add remaining ingredients and process until combined and smooth
