This has been a holiday tradition and special occasion dish in our home and with our friends...I usually serve them with baked ham, but when the meal calls for mashed potatoes, and you want to give your family a treat, I suggest you try these! YUM!

6 -8 large potatoes, peeled and diced
1 teaspoon salt
1/8 teaspoon garlic salt
1 teaspoon grated onion
2 tablespoons butter or 2 tablespoons margarine
8 ounces cream cheese, softened
1 (8 ounce) container sour cream
1 cup grated cheese (optional)

Steps:

  • Cook potatoes in salted water until tender.
  • (About 10 minutes from time water gently boils) Drain.
  • Combine potatoes with salts, onion, butter, cream cheese, and sour cream.
  • Whip until mixture is smooth and fluffy.
  • Place in buttered 2-qt.
  • casserole.
  • Top with grated cheese if desired.
  • (May be covered and refrigerated overnight or frozen at this point, if desired) Bake at 350 for 30 minutes or until golden brown.

30 baby potatoes (1 to 1 1/2 inches in diameter; 1 3/4 lb total)
1 tablespoon plus 1 teaspoon coarse kosher salt
3 tablespoons extra-virgin olive oil
Special Equipment
12 (6- to 8-inch) woody rosemary stems or bamboo skewers, soaked in water 30 minutes

Steps:

  • Cover potatoes by 1 inch in cold water in a 4-quart pot, then add 1 tablespoon kosher salt and bring to a boil over high heat. Reduce heat and simmer until potatoes are just tender, 12 to 15 minutes.
  • Drain potatoes in a colander and transfer to a large shallow pan to cool quickly.
  • If using a charcoal grill, open vents on bottom of grill, then light charcoal. Charcoal fire is hot when you can hold your hand 5 inches above rack for 1 to 2 seconds. If using a gas grill, preheat burners on high, covered, 10 minutes, then reduce heat to moderately high.
  • Meanwhile, toss potatoes with 1 tablespoon oil and remaining teaspoon kosher salt, then push 2 or 3 potatoes onto each rosemary stem.
  • Grill potato skewers directly over coals, turning over occasionally with tongs, until grill marks appear, 3 to 4 minutes total.
  • Transfer potatoes to a platter and drizzle with remaining 2 tablespoons oil.

This wonderful dish has been a family favorite since I was a child. I think I remember my mom getting the recipe out of the local newspaper back in the early 70's. It tastes like a loaded baked potato to me, only better! It is great for the holidays, especially the 'dairy' ones.

8 russet potatoes
1/2 onion, chopped
1/2 cup butter
2 cups cheddar cheese, grated
1 1/2 cups sour cream
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
3 tablespoons butter

Steps:

  • Cook potatoes in skins and cool.
  • When cooled, peel and grate or shred, like hash browns.
  • Preheat oven to 350. Butter sides and bottom of a large casserole dish or spray with cooking spray.
  • Melt 1/2 cup butter in saucepan and add grated cheese. Remove from heat when melted and add the sour cream, chopped onion, salt and pepper. Stir completely.
  • Add mixture to the grated potatoes and mix well.
  • Place in buttered casserole and dot with the 3 tablespoons of butter and sprinkle with paprika.
  • Bake at 350 degrees for 30-40 minutes until bubbly and golden-brown on top.

6 medium potatoes
2 cups cheddar cheese, shredded
1/4 cup butter
1 1/2 cups sour cream or 1 1/2 cups milk
1/3 cup onion, finely chopped
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • wash and peel potatoes.
  • cut in half and cook until almost soft.
  • shred potatoes coarsely.
  • in saucepan over low heat, combine cheese and 1/4 cup butter.
  • stir until almost melted.
  • remove from heat and blend in sour cream, or milk, onion and seasonings.
  • fold into potatoes and turn into a greased 2 quart casserole dish.
  • dot with butter and sprinkle with paprika.
  • bake for 30 minutes or until heated thoroughly in a 350 degree oven.

1/2 cup finely chopped onion
1/3 cup sweet pickle relish
1 1/4 cups mayonnaise, Helman's preferred
2 teaspoons sugar
2 teaspoons celery seeds
2 teaspoons vinegar
2 teaspoons mustard, Maille preferred
1 1/2 teaspoons salt
2 eggs, hard-boiled, coarsely chopped

Steps:

  • In a covered saucepan cook potatoes in boiling, salted water for 25-30 minutes or until tender. Drain well.
  • Peel and cube potatoes and transfer to a large bowl.
  • Add onion and egg.
  • Combine mayo, sugar, celery seed, vinegar, mustard, salt, and relish.
  • Pour over potato mixture and toss to coat. Cover and chill.
  • Better the second day.
