1 pint strawberries, hulled and cut in half
1 pint blueberries
1 pint raspberries
1 tablespoon good balsamic vinegar
1/4 cup sugar
Fresh mint, for garnish

Steps:

  • Place 6 glasses in the refrigerator.
  • In a large bowl, combine the berries, vinegar and sugar. Stir gently. Cover securely with plastic wrap and refrigerate for 30 minutes to 1 hour.
  • Spoon the berries into the chilled glasses. Garnish with a sprig of fresh mint.

I love this salad! This is a delicious and light, low-fat fruit salad with a honey lemon dressing. Topped with low fat cool whip. Yum! Enjoy!

6 ounces raspberries
8 ounces blue berries
16 ounces strawberries
2 tablespoons fresh lemon juice
2 tablespoons contreau
2 teaspoons honey
2 tablespoons chopped mint
top with light cool whip

Steps:

  • 1. Wash the berries, remove the stems, slice the strawberries, leave raspberries and blueberries whole, drain well, and blot gently with paper towels.
  • 2. Whisk together the fresh lemon juice, Cointreau, honey and the chopped mint. Pour over berries. Toss gently. Serve immediately with light cool whip. Enjoy!
